CAJUN BLACKENED STEAK WITH SUGAR SNAP PEAS



Cajun Blackened Steak with Sugar Snap Peas image

Number Of Ingredients 30

4 cups root beer
4 (2-pound) T-bone steaks
Cajun Spice Mix
2 tablespoons freshly ground pepper
1 tablespoon hot paprika
1 tablespoon sweet paprika
1 teaspoon cayenne
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon ground thyme
1 tablespoon file powder
1 tablespoon mustard powder
Sugar Snap Peas, recipe follows
Potatoes Gumbo, recipe follows
1 cup sugar snap peas, cleaned and blanched in salted boiling water
1 teaspoon flaked salt
1/4 cup, plus 1 tablespoon vegetable oil
1 medium white onion, diced
2 cloves garlic, finely chopped
6 slices smoked bacon, cut into large dice
2 stalks celery, diced
1 bunch Swiss chard, coarsely chopped, leaves and stems separated
1 large green bell pepper, seeded and diced
1/4 cup flour
2 bay leaves
2 cups chicken stock
2 cups water
Pinch cayenne
2 pounds white potatoes, peeled and quartered
Salt and freshly ground black pepper

Steps:

  • Marinate the steaks in root beer for 24 hours. Remove the steaks from the root beer and pat dry.
  • In a small bowl mix the pepper, hot paprika, sweet paprika, cayenne, garlic powder, onion powder, ground thyme, file powder, and mustard powder together for the Cajun Spice Mix.
  • Put the Cajun spice mix on a tray and heat a cast iron pan over medium heat. Season the steaks with salt and press the steaks into the Cajun spice mix on both sides. Put the steaks, one at a time, in the hot cast iron pan, sear for approximately 2 to 3 minutes on each side for a medium-rare steak, allow to rest before serving.
  • Spoon the Sugar Snap Peas, recipe follows, over the steak, garnish with flaked salt and serve with Potato Gumbo, recipe follows.
  • To make the sugar snap peas:
  • Blanch the trimmed sugar snap peas in salted boiling water. Drain the peas and season with flaked salt.
  • For the potato gumbo:
  • Heat 1 tablespoon vegetable oil in a large high-sided saute pan over medium heat.
  • Add the onions and saute until golden brown. Add the garlic and smoked bacon and continue to saute.
  • Once the bacon has cooked and becomes crisp, add the celery, Swiss chard stems, and green pepper, saute until tender. Remove the bacon mixture from the pan, put in a bowl and set aside.
  • Heat the remaining vegetable oil in the same saute pan, add the flour and bay leaves.
  • Stir with a wooden spoon incorporating the flour and oil to form a paste. Cook until the flour becomes brown and nutty in color. Add the chicken stock, water, and cayenne, stir.
  • Add the potatoes and reserved bacon mixture to the liquid. Cook over medium heat until the potatoes are tender and the liquid reduces, achieving a thick consistency, approximately 30 minutes.
  • Add the Swiss chard leaves, season with salt, and pepper, and allow to cook until the leaves are wilted, serve.

3 Tbsp. HEINZ Distilled White Vinegar
2 Tbsp. extra virgin olive oil
2 Tbsp. lite soy sauce
3 cloves garlic, minced
2 tsp. GREY POUPON Dijon Mustard
1-1/2 tsp. Cajun seasoning
1 boneless beef sirloin steak (1 lb.), 1 inch thick
2 shallots, cut in half
1 small eggplant (1 lb.), cut lengthwise into 4 slices
1 each yellow squash and zucchini, cut lengthwise, then crosswise in half

Steps:

  • Whisk first 6 ingredients until blended. Place steak and combined vegetables in separate shallow dishes. Pour half the vinegar mixture over ingredients in each dish; turn to evenly coat both sides of all ingredients. Refrigerate 30 min. to marinate.
  • Heat grill to medium heat. Remove steak and vegetables from marinade; discard marinade.
  • Grill steak 5 to 7 min. on each side or until medium doneness (160ºF). Meanwhile, grill vegetables 2 to 3 min. on each side or until crisp-tender.
  • Cut steak across the grain into thin slices. Serve with grilled vegetables.

loin grilling steak
1 tablespoon cajun seasoning
1/2 cup balsamic vinaigrette, plus
4 tablespoons balsamic vinaigrette, divided
1/4 cup hot sauce
1 (907 g) bag yellow fingerling potatoes
1/4 cup green onion, thinly sliced
3 cups harvest vegetables, frozen

Steps:

  • Rub steaks with Cajun spice, and place in a resealable baplastic bag. Combine 1/4 cup Balsamic vinaigrette with hot sauce and pour over the steaks. Refrigerate overnight.
  • Halve and steam potatoes until fork tender, about 12 minutes. Let stand for about 2-3 minutes, before tossing it with 2 tbsp of vinaigrette and green onions. Set aside, and kep warm.
  • Cook frozen vegetables, and season with salt and pepper.
  • Meanwhile, lightly oil and breheat barbecue (or indoor grill) to medium high heat. Remove steaks from marinade and cook for 6-8 minutes per side for medium. Transfer to a cutting board and gently cover and let rest for 5-10 minutes.
  • Plate the steaks with the potatoes and vegetables and drizzle the remaining 2 tbsp of Balsamic vinaigrette as a sauce.

Steak and Cajun potatoes make a tasty meal for two - perfect for special occasions like Valentine's

430g Maris Piper potatoes , cut into 1.5cm chunks
1 tbsp Cajun seasoning
2 tbsp olive oil
1 x 400g bavette steak
¼ small bunch of coriander , finely chopped
¼ small red cabbage , shredded
½ red onion , finely sliced
2 tbsp mayonnaise
1 tbsp soured cream
½ tbsp chipotle chilli paste

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Bring a large pan of salted water to the boil, add the potatoes and cook for 5 mins. Drain and leave to steam-dry in the colander for a few minutes. Toss the potatoes with the Cajun seasoning, half the oil and a good pinch of salt. Tip onto a baking tray and roast for 25-30 mins or until golden and crisp, tossing halfway through.
  • To make the slaw, combine the cabbage, onion, mayonnaise, soured cream and chipotle paste in a bowl until the cabbage and onion are well coated. Set aside.
  • Rub the steak with the remaining oil and season both sides. Heat a griddle pan or non-stick frying pan over a high heat until very hot. Add the steak to the pan, cook for 2 mins on one side, then 3 mins on the other. Remove, put on a chopping board, cover with foil and leave to rest for 5 mins. Slice into strips.
  • Serve the steak with the potatoes scattered with the coriander and a pile of the spicy slaw.
