CAJUN RED BEANS



Cajun Red Beans image

Delicious red beans. Serve it over rice with some cornbread. Yum!

1 pound dried pinto beans
3 tablespoons bacon grease
¼ cup chopped salt pork
1 ½ cups chopped yellow onion
¾ cup chopped celery
¾ cup chopped green bell pepper
½ teaspoon freshly ground black pepper
1 pinch chipotle chile powder
½ pound smoked sausage, split in half and cut into 1-inch pieces
3 bay leaves
2 tablespoons chopped fresh parsley
2 teaspoons chopped fresh thyme
3 tablespoons chopped garlic
water as needed

Steps:

  • Place the pinto beans into a large container and cover with several inches of cool water. Soak beans 15 minutes; drain and rinse.
  • Heat bacon grease in a large pot over medium-high heat. Cook and stir salt pork in hot grease for 1 minute. Add onion, celery, bell pepper, black pepper, and chipotle powder to salt pork; cook and stir until the vegetables are soft, about 4 minutes.
  • Stir smoked sausage, bay leaves, parsley, and thyme into salt pork mixture; cook and stir until sausage is browned, about 4 minutes. Add garlic and cook until fragrant, about 1 minute more.
  • Stir beans into sausage mixture and add enough water to cover the beans. Bring to a boil, remove from heat, and transfer beans mixture to a slow cooker.
  • Cook on High for 1 hour. Reduce to Low and cook until beans are tender, adding water as necessary, about 6 hours more.
  • Mash about 1/4 the beans against the side of the slow cooker crock with the back of a heavy spoon. Continue cooking on Low until beans are tender and creamy, 15 to 20 minutes more. Remove bay leaves.

1/2 cup green bell pepper, chopped
2 (10 ounce) cans pork and beans
1 medium onion, chopped
1 teaspoon salt
1/2 teaspoon cayenne pepper

Steps:

  • Brown the beef in a large saucepan over medium heat; stir in the onions and bell pepper and cook until softened, about 10 minutes.
  • Add in the pork and beans stirring occasionally.
  • Once heated through, serve over rice.

1 Bell Pepper
1 yellow onion
3-4 ribs of celery
1 tbs minced garlic
Salted Pork
Cajun style Summer sausage
1 lb. bag of dry navy beans
Zatarain's red bean seasoning ONLY packet

Steps:

  • Finely chop the bell pepper, onion, and celery. Brown the salted pork and sausage in a large pot. Remove the meat from the pot and use the grease to saute the vegetables. Add the beans and 6 cups of water and bring to a boil. Add the meat back to the pot and simmer for 1 hour. Mix the seasoning packet and 1-2 cups of water together in a separate bowl then add to the pot and let simmer for another hour.

CAJUN BARBECUE BEANS

This recipe came from my sister-in-law and is a great side dish for any barbecue. Quick and easy to put together and you can adjust the heat to your liking. We like spicy so I use Stubb's Hot Barbecue sauce for this recipe.

1 lb ground beef
1 onion, chopped
1 green bell pepper, chopped
1 (31 ounce) can pork and beans
6 tablespoons catsup
4 tablespoons Worcestershire sauce
1/4 cup dark brown sugar
1/2 cup barbecue sauce
1 dash Tabasco sauce (to taste)

Steps:

  • Pre-heat oven to 350.
  • Brown ground beef in a large skillet and pour off the grease.
  • Stir in the onion and bell pepper and saute.
  • Transfer beef mixture to a 2-quart casserole and add remaining ingredients and mix well.
  • Dish can be refrigerated at this point and baked when ready to serve.
  • Bake for 45 minutes.

More Cajun seasoning can be added, but it tends to make the dish too hot for children. Chicken breast can be substituted for the pork tenderloin and rice can be used instead of the noodles."

3 teaspoons Cajun seasoning
3 teaspoons minced garlic
2 teaspoons Italian seasoning
1/3 cup butter, cubed
12 ounces uncooked fine egg noodles
3/4 cup chicken broth
2 teaspoons Worcestershire sauce
2 large tomatoes, chopped

Steps:

  • In a large skillet over medium heat, cook and stir the pork, Cajun seasoning, garlic and Italian seasoning in butter for 8-10 minutes or until meat is no longer pink. Meanwhile, cook noodles according to package directions., Stir broth and Worcestershire sauce into pork mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Stir in tomatoes; cook 1-2 minutes longer or until heated through. Drain noodles. Use a slotted spoon to serve pork mixture over noodles; drizzle with pan juices.
