1 cup melted butter
1 cup honey
3 large eggs
1 teaspoon lemon juice
9 ounces self raising flour
1 pinch salt
2 ounces pecan nuts, chopped
4 ounces peaches or 4 ounces figs, chopped

Steps:

  • Preheat the oven to 350F and grease and flour a 8-inch cake tin.
  • Place the butter and honey in a large saucepan and melt, stirring to combine.
  • Add eggs and lemon juice, mix well then slowly add the flour and salt mixing well.
  • Add chopped nuts and fruit, mix well to a very stiff batter then pour in to greased tin and bake for about 30 minutes or until cooked through.

I have no idea why this is called a Cajun cake, but I do know that my family has been making it for years and you just about have to knock someone away from the pan to get a bite before it is all gone.

3 cups flour
1 1/2 cups sugar
1 teaspoon baking soda
2 eggs
1 (20 ounce) can crushed pineapple
3/4 cup sugar
1 (12 ounce) can evaporated milk
1/2 cup butter
1 cup coconut
1 cup pecans, toasted and chopped

Steps:

  • Cake:.
  • Beat eggs and sugar.
  • Sift dry ingredients and add to egg mixture, mixing well.
  • Mix in pineapple.
  • Bake in a 13x9 greased pan at 350 degrees for 35 minutes.
  • Icing:.
  • Mix sugar, milk and butter over medium heat until mixture thickens well. Remove from heat and stir in coconut and pecans.
  • Pour over cake as soon as you take cake from oven.
  • Allow cake to cool before serving.
  • Refrigerate leftovers (like you'll have any!).

3 cups all-purpose flour
1 ½ cups white sugar
2 teaspoons baking soda
¼ teaspoon salt
2 eggs
1 (20 ounce) can crushed pineapple with juice
¾ cup white sugar
¾ cup evaporated milk
½ cup margarine
1 cup chopped pecans
1 ½ cups flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch pan.
  • In a large bowl, sift together flour, 1 1/2 cup sugar, salt and baking soda. Add eggs, pineapple, and juice. Mix at low speed until well blended.
  • Pour batter into prepared pan. Bake in preheated oven until a tester comes out clean, 30 to 35 minutes. Have the topping ready when the cake comes out of the oven.
  • To Make Topping: In a saucepan, combine milk, 3/4 cup sugar, and margarine. Bring to a boil and cook for 2 minutes, stirring constantly. Add pecans and coconut and combine. Remove from heat.
  • When cake comes out of the oven, pour on the topping and carefully spread on while cake is still hot.

1 1/2 teaspoons lemon juice
3 cups flour
2 1/4 tablespoons baking powder
1/2 teaspoon salt
3/4 cup toasted nuts (chopped)
1 cup fruit (apples, peaches, figs, blackberries,)

Steps:

  • Melt butter w honey.
  • Add eggs and lemon juice. mix well and SLOWLY. Add flour, salt and baking powder mix.
  • Add chopped nuts and fruit (batter WILL be stiff).
  • Pour in to greased floured baking pans.
  • Bake at 350°F for 30 minutes are till cake tests done.
