MINI CAESAR SALAD ROLLS
These go perfectly with a glass of Chardonnay.

Steps:
- Whisk dressing ingredients together and season with salt and pepper.
- Mix the lettuce with a small amount of dressing, just enough to barely coat the leaves. Place in a bowl to the side.
- Pour some warm water into a large shallow dish. Submerge one rice paper round in water until it begins to soften, about 45 seconds. Place on a sheet of parchment paper. Place a small amount of lettuce in the center of the rice paper. Tightly roll into a cylinder, enclosing the lettuce. Repeat with the remaining rounds. Cover with a dampened paper towel or wrap in plastic. Chill. Can be made 4 hours ahead.
- When ready to serve, remove from plastic and cut each roll into 2-inch-long pieces. Stand upright on a platter and top with a spot of dressing. You can put crumbled pancetta, Parmesan cheese, or chopped nuts on top for flavor and garnish.
CAESAR SALAD

- For the dressing: Place the anchovies into a blender or food processor. Throw in the Dijon mustard, vinegar, Worcestershire, garlic and lemon juice. Pulse the processor or blend on low speed for several seconds. Scrape down the sides.
- With the food processor or blender on, drizzle the olive oil into the mixture in a small stream. Scrape down the sides. Add the Parmesan, salt and a generous grind of black pepper. Pulse the whole thing together and mix until thoroughly combined. Refrigerate the dressing for a few hours (it just gets better!) before using it on the salad.
- For the croutons: Slice the bread into thick slices and cut them into 1-inch cubes. Throw them onto a baking sheet.
- Heat the olive oil in a small saucepan or skillet over low heat.
- Crush-but don't chop-the garlic and add them to the oil. Use a spoon to move the garlic around in the pan. After 3 to 5 minutes, turn off the heat and remove the garlic from the pan.
- Slowly drizzle the olive oil over the bread cubes. Mix together with your hands, and then sprinkle lightly with salt. Toss and cook in the pan until golden brown and crisp. (Add a little butter for more flavor!)
- For the salad: Wash and dry the hearts of romaine lettuce. Leave them whole. Use a vegetable peeler and shave off large, thin slices of Parmesan.
- Drizzle about half of the dressing over the top of the hearts. Throw in a good handful of the Parmesan shavings. Give it a good initial toss, just so you can evaluate how much more dressing you need.
- Add more dressing and Parmesan to taste. Add the cooled croutons. Toss gently.
CAESAR SALAD ROLLS

- Add rice paper, 1 sheet at a time, to large bowl of warm water; let stand 15 to 20 sec. or until softened. Drain on clean kitchen towel; transfer to work surface.
- Place 1 prosciutto slice on center of each rice paper sheet; top with remaining ingredients. Carefully fold bottom of paper over filling, then fold in both sides and roll up tightly, starting at bottom edge.
- Cut in half to serve.

- Fill a large bowl with room-temperature water. Soak 1 rice wrapper in the water until it bends easily, about 15 seconds.
- Lay wrapper flat. In a row across the center, place a small handful of lettuce leaves, a few strips of chicken, and a few slices of red bell pepper, leaving about 2 inches uncovered on each side. Fold uncovered sides inward, then tightly roll the wrapper, beginning at the end with the lettuce. Repeat with remaining ingredients.
- Cut in half and serve with Caesar dressing for dipping.

- Start with small inner romaine lettuce leaves (no more than 7 in. long) mixed with a Caesar dressing (your own or purchased, which is basically anchovies and parmesan plus oil and vinegar).
- Trim a 6-inch-wide strip from the center of a soft, fresh flour tortilla (about 8 in. wide). Then cut the strip in half lengthwise. (Freshness is important-old tortillas will crack.)
- Lay 4 or 5 dressed leaves crosswise on a tortilla strip with tips pointing from alternate sides; roll strip snugly around leaves. Secure the roll at two points, about 1/2 inch from each end, with strips of blanched green onion tops or toothpicks. Then cut the roll in half and set each piece upright. Repeat to make more. Save extra lettuce for salad. Butter tortilla scraps, bake crisp, and serve with a salad or as a snack.
