Everyone raves about Caesar salad, but few realize it is so simple to make at home. Add this Caesar dressing on top of chopped romaine lettuce, croutons and parmesan cheese for a perfect salad. -Jane McGlothren, Daphne, Alabama

Number Of Ingredients 12

3 pasteurized large egg yolks
2 garlic cloves
2 tablespoons anchovy paste
2 tablespoons lemon juice
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
dash hot pepper sauce
1/2 cup olive oil
1/4 cup grated Parmesan cheese

Steps:

  • In a blender, combine the first 10 ingredients; cover and process until blended. While processing, gradually add oil in a steady stream. Stir in Parmesan cheese. Chill until serving.

I love this recipe! I do not take credit for this recipe, it is in the Cook Yourself Thin cookbook, and I just wanted to put it on here to have in safe keeping. This dressing is delicious! Tastes just like or maybe even better than regular caesar dressing. And oh-so low cal! Yum! Enjoy!

2 tablespoons fat-free Greek yogurt or 2 tablespoons plain fat-free yogurt
1 small garlic clove, minced
1 teaspoon Dijon mustard

salt and black pepper

8 ounces chicken breasts, skinless
2 tablespoons olive oil
4 slices baguette, on the diagonal
1/2 medium garlic clove
2 heads baby romaine lettuce
1 large egg
1/2 cup arugula
1/2 cup mustard, cress
2 tablespoons finely grated parmesan cheese
1 tablespoon sunflower seeds
2 tablespoons fat-free Greek yogurt
1/2 garlic clove
1 teaspoon Dijon mustard
1 teaspoon malt vinegar
1 tablespoon olive oil
salt, to taste
black pepper, to taste

Steps:

  • Preheat oven to 350 degrees.
  • Boil about 4 cups of water.
  • Brush the chicken with a little olive oil.
  • On a hot grill pan, sear the chicken breast for 4 to 5 minutes before flipping over and doing the same on the other side.
  • Slice the baguette on the diagonal and place on a baking sheet.
  • Brush on a little olive oil.
  • Toast the bread for about 10 minutes, until crisp.
  • Rub with the garlic clove.
  • Once you have strong grill marks over the chicken breast on both sides, cover your pan with foil and place into the hot oven on the higher shelf for 15 minutes.
  • Meanwhile, wash the lettuce and spin dry.
  • Carefully drop the egg in boiling water and boil for 5 minutes exactly. Empty the boiling water out of the pan and replace it with cold water.
  • Let the egg stand in the cold water while you finish the recipe.
  • To make the dressing, combine all the ingredients into a small mixing bowl and stir together with a whisk.
  • Taste and season before setting aside.
  • Put the washed and dried salad leaves into a big bowl with the dressing.
  • Toss for a couple of minutes to make sure that all the leaves are coated.
  • Add the shaved/grated Parmesan and arugula.
  • Toss once again.
  • Remove the chicken from the oven and let it cool down enough to handle before slicing on the diagonal.
  • Plate up the salad, making sure that the chicken is evenly distributed.
  • Tuck the crispy baguette toasts on the side of the salad and add half the soft-boiled egg.
  • Finally, grind over some black pepper, scatter the sunflower seeds, and serve.

  • 1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  • 2. Select Variable 1.
  • 3. Turn machine on and slowly increase speed to Variable 4.
  • 4. Blend for 20 seconds. Refrigerate in airtight container for three to four days.

2 tablespoons fresh lemon juice
2 to 3 dashes Worcestershire sauce
2 boneless anchovy fillets, minced
2 cloves garlic, minced
1 cup olive oil, canola oil or equivalent light salad oil
Kosher salt and freshly cracked black pepper

3 tablespoons olive oil
1/2 cup shredded Parmesan
2 teaspoons fresh thyme leaves

Steps:

  • Preheat the oven to 375 degrees F.
  • For the Caesar dressing: Beat the egg yolks in a large mixing bowl. Add the lemon juice, Worcestershire sauce, anchovy and garlic and whisk to combine. Slowly drizzle in the olive oil until the mixture emulsifies. Season with salt and pepper. Cover and refrigerate until ready for use.
  • For the croutons: Cut the baguette on an angle to create thin, oval slices about 1/4-inch thick. On a large baking sheet, arrange the slices evenly. Brush the bread with olive oil and top with the Parmesan and thyme. Season with salt and pepper. Bake until the Parmesan is melted and the croutons are golden brown around the edges, 5 to 7 minutes. Remove from the oven and allow to cool. Store in an airtight container if not using immediately.
  • For the salad: Core the romaine and trim the top 1/2 inch off the leaves. Fan the leaves out on a serving plate (or chop into 1/2-inch pieces if you prefer). Sprinkle the Parmesan over the lettuce and drizzle the dressing on top. Top with 2 to 3 croutons per plate and serve.

3 anchovies, soaked in
milk, for 15 minutes
1 tablespoon Worcestershire sauce

Steps:

  • In a blender, combined all ingriedents except olive oil and blend until smooth.

1 1/2 tablespoons Dijon mustard
2 large egg yolks
1/3-1/2 cup extra virgin olive oil or 1/3-1/2 cup canola oil
2 heads romaine lettuce, outer leaves discarded, inner leaves washed and dried (ten-ounce heads)
1 cup freshly grated parmesan cheese or 1 cup romano cheese
crouton (to garnish)

Steps:

  • In a large wooden bowl, using a wooden spoon, mash chopped garlic cloves to a fine paste with salt.
  • Stir in egg yolks and Dijon mustard.
  • Add anchovies, and grind to a paste.
  • Add lemon juice, Worcestershire, hot sauce and season with pepper.
