- Sprinkle chicken with salt and pepper. Grill on an indoor grill coated with cooking spray until juices run clear, 4-5 minutes. Grill onion slices until tender, 4-5 minutes., Meanwhile, spread butter over cut sides of buns. Place buttered side up on an ungreased baking sheet. Broil 3-4 in. from the heat until golden brown, about 1 minute. , Toss romaine with cheese and 1/4 cup dressing; spoon onto bun bottoms. Top with onions, chicken and remaining dressing. - Heat gas or charcoal grill. In medium bowl, mix beef, parsley, 2 tablespoons of the dressing and the peppered seasoned salt. Shape mixture into 4 patties, about 1/2 inch thick.
- Place patties on grill over medium heat. Cover grill; cook 12 to 15 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F. - In a large bowl beat egg, add beef, half of the parmesan, lemon juice, anchovy paste, Worcestershire sauce and pepper.
- Mix lightly by hand.
- Shape into four thick hamburger patties.
- Grease grill, heat to medium high.
- Place burgers on grill and cook for 10 minutes.
- Flip burgers once and heat for another 10 minutes or until no longer pink inside.
- In a small bowl whisk oil with garlic.

- Preheat a grill to medium high. Gently mix the turkey, 1 tablespoon mayonnaise, 2 teaspoons Worcestershire sauce, 2 teaspoons mustard, the red onion, lemon zest, 3/4 teaspoon salt and a few grinds of pepper in a large bowl. Form into four 1/2-inch-thick patties and place on a plate. Freeze until slightly firmer, 10 to 15 minutes.
- Meanwhile, combine the lemon juice and grated garlic in a small bowl; let sit 5 minutes. Whisk in the remaining 1/3 cup mayonnaise, 1 teaspoon Worcestershire sauce, 1 teaspoon mustard, the grated parmesan, a pinch of salt and 1/4 teaspoon pepper.
- Lightly oil the grill grates. Grill the turkey patties until cooked through but still juicy, about 4 minutes per side. Toast the buns on the grill, about 1 minute.
- Toss 3 tablespoons of the dressing with the romaine and shaved parmesan; season with salt and pepper. Serve the burgers on the buns and top with mustard, the salad and the remaining dressing. Serve with watermelon and potato chips.

- Preparation of Burgers
- 1. In a bowl combine:
- ground chicken
- 2 cloves of chopped garlic,.
- 1 cup of Parmigiano-Reggiano shredded cheese.
- 1 tsp of salt
- 1 tsp of pepper.
- 1 tbl Worcestershire sacue.
- 1 tbl chopped parsley.
- 1 tbl lemon juice.
- 2. Mix together and form 3 oval burgers.
- 3. Heat frying pan and place extra virgin olive oil in pan.
- 4. Cook chicken patties about 7 minutes each side. Then cover and cook for around 5 minutes to make sure inside of burger is cooked.

- 4. spread the some minced garlic on each rool.

- 6. Broil for a short while to brown the bread

- 1. In a bowl combine: Dijion, lemon juice, and 3Tbl of olive oil. Sprinke with sea salt and pepper.
- 2. Mix in salad mix.
- Putting it all all together:.
- 1. Put chicken burger on roll.
- 2. Place salad mixture and slice of tomato on top of burger.
- 3. Sprinkle extra sauce if desired.

- Heat a griddle pan over a high heat until smoking hot. While it's heating up, put the chicken pieces between 2 pieces of baking parchment and bash with a rolling pin to flatten. Unwrap the chicken and brush the pieces with olive oil.
- Cook the chicken on the griddle pan until cooked through, turning once - this should take about 10 mins. Transfer the chicken to a plate, pour over a little of the lemon juice and season.

- To make the mayonnaise: combine the mayonnaise, mustard, garlic, anchovies, lemon juice, Tabasco, Worcestershire, and pepper in a food processor; process until smooth.
- Scrape into a bowl and stir in the cheese; cover and refrigerate at least 30 minutes or up to 8 hours before serving so flavors can meld.
- To make the burgers: divide the meat into 4 equal portions (6 oz each); form each portion loosely into a ¾ inch thick burger and make a deep depression in the center with your thumb.
