Just pickles!!! These are easy to make, and are a great way to use vegetables from the garden.

1 cup distilled white vinegar
1 tablespoon salt
2 cups white sugar
6 cups sliced cucumbers
1 cup sliced onions
1 cup sliced green bell peppers

Steps:

  • In a medium saucepan over medium heat, bring vinegar, salt and sugar to a boil. Boil until the sugar has dissolved, about 10 minutes.
  • Place the cucumbers, onions and green bell peppers in a large bowl. Pour the vinegar mixture over the vegetables. Transfer to sterile containers and store in the refrigerator.

6 cups sliced cucumbers
1 cup sliced onion
1 green pepper, chopped
1 cup vinegar
2 cups sugar
1 tablespoon salt
1 tablespoon celery seed

Steps:

  • Heat vinegar, sugar, salt, and celery seed.
  • Pour over cucumbers, onions and green pepper.
  • Store in refrigerator.
  • These will keep for many months.

3 cups distilled water
1 cup white vinegar
1 tablespoon non-iodine kosher salt
1/2 teaspoon minced dried garlic
1/4 teaspoon yellow mustard seeds
2 -4 black peppercorns
2 -4 whole allspice
1/2-1 whole dried cayenne pepper
1 pinch dill seed
1 pinch dill weed
1 pinch turmeric
1/4 teaspoon sugar or 1 whole carrot
washed cucumber

Steps:

  • Combine the water, vinegar and salt and bring it to a boil.
  • Put the spices and cucumbers in quart jars.
  • Pour the brine mixture over the cucumbers and spices in the jars and seal.
  • Put them in the refrigerator: Ready in 7-10 days. Keeps 8 - 19 weeks.
  • Brine can be re used.
  • This recipe can be multiplied by keeping these proportions: 3 parts water, 1 part vinegar and the spices are for a quart jar.

6 cups thinly sliced cucumbers
2 cups thinly sliced onions
1-1/2 cups sugar
1-1/2 cups cider vinegar
1/2 teaspoon salt
1/2 teaspoon mustard seed
1/2 teaspoon celery seed
1/2 teaspoon ground turmeric
1/2 teaspoon ground cloves

Steps:

  • Place cucumbers and onions in a large bowl; set aside. Combine remaining ingredients in a saucepan; bring to a boil. Cook and stir just until the sugar is dissolved. Pour over cucumber mixture; cool. Cover tightly and refrigerate for at least 24 hours before serving.

1/2 cup salt
4 cups vinegar
1 1/3 teaspoons turmeric
1 1/3 teaspoons mustard seeds
4 medium onions, sliced thinly
6 medium cucumbers (medium to large, sliced thinly)

Steps:

  • Combine sugar , salt , vinegar , turmeric and mustard seed.
  • Add thinly sliced onions and cucumbers. Mix thoroughly.
  • Refrigerate.
  • I've eaten on these the same day they are made , but they're supposed to sit in the fridge for a few days first :) I hope you enjoy!

These are an easy-to-make pickle that are tangy. In my humble opinion, much better than store-bought. You can taste the garlic and other spices. The nice thing about this recipe is it is fast and easy to modify to your taste. Cooking time is refrigeration time.

5 pickling cucumbers
3 tablespoons kosher salt
1 head fresh dill
2 garlic cloves, peeled and halved
1/4 teaspoon black peppercorns
1/4 teaspoon celery seed
1 teaspoon mustard seeds
1 cup cider vinegar
1 cup water

Steps:

  • Trim the ends of the cucumbers.
  • Quarter each cucmber lengthwise.
  • In a large non-reactive bowl toss cucumber spears with 2 tablespoons of the kosher salt.
  • Cover and refrigerate for 2 hours.
  • Rinse the cucumbers several times and pat dry.
  • In a small saucepan, add water and vingear and one tablespoon of salt.
  • Bring to a boil.
  • Add dill, garlic, peppercorns, celery seeds and mustard seeds to a clean 1-quart jar.
  • Pack container with cucumber spears.
  • Pour hot brine into container.
  • Let pickles cool to room temperature, about 2 hours.
  • Cover and refrigerate for one day to develop flavor.
  • The pickles shoud keep for about a month. But mine never last that long. The pickles start out crunchy, but after time soften.

Yield 1 quart refrigerator pickles

Number Of Ingredients 9

2 cups distilled white vinegar
4 tablespoons granulated sugar
8 tablespoons water
3 teaspoons kosher salt
5 -10 whole black peppercorns (optional)
2 teaspoons dried dill weed
4 garlic cloves, Lightly Smashed
3 -4 whole bay leaves
2 -3 fresh whole cucumbers, Cut Into Thick Slices

Steps:

  • Add the vinegar, water, sugar, salt (and whole peppercorns, if using) and garlic to a saucepan and stir well. Make sure the sugar is totally dissolved. Bring to a boil, remove from the heat, and add the dill. Let the pickling mixture completely cool. Add in the bay leaves.
  • While your pickling mixture is cooling, fill a clean one-quart Mason jar with the cut cucumbers and gently pour in the cooled pickling mixture, covering the cucumbers. Cover, and let sit in the refrigerator at least overnight. Serve to your loved ones, and they will thank you.
