1 ¼ cups margarine, softened
2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
¾ cup unsweetened cocoa powder
1 teaspoon baking soda
⅛ teaspoon salt
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together margarine and sugar until smooth. Beat in eggs one at a time, then stir in the vanilla. Combine flour, cocoa, baking soda, and salt; stir into the creamed mixture until just blended. Mix in walnuts. Drop by spoonfuls onto ungreased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Cool for a couple of minutes on the cookie sheet before transferring to wire racks to cool completely.

FLOURLESS COCOA COOKIES



Flourless Cocoa Cookies image

Whenever I'm called upon to make something gluten-free, I opt for classics that are naturally sans wheat flour--like Pavlovas, Macarons, Macaroons, and these flourless cocoa delights. These cookies are tender, delicately chewy, and incredibly chocolaty--if a brownie and a cookie had an affair, this would be their love-child. I like to add a sprinkling of flaky Maldon salt, because these are for grown-ups.

170 grams (3 large) eggs
340 grams (3 cups) powdered sugar
106 grams (1 1/4) cups unsweetened cocoa powder
1 gram (1/2 teaspoon) ground cinnamon
1 gram (1/4 teaspoon) fine sea salt
7.5 grams (1 1/2 teaspoons) vanilla extract
142 grams (1 cup) bittersweet chocolate chunks
Maldon salt, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C) with racks in the upper and lower thirds. Line two baking sheets with parchment paper.
  • In a medium bowl, lightly whisk the eggs.
  • Sift together the powdered sugar, cocoa powder, cinnamon, and salt. Add to the eggs, whisking until the mixture forms a smooth batter, about 1 minute. Add the vanilla and chocolate chunks and mix until fully incorporated; switch to a rubber spatula if necessary. The batter will be very thick and sticky.
  • Use a No. 30 (2-tablespoon) scoop to portion the batter onto the prepared baking sheets--stagger the cookies, leaving about 1 1/2 inches between them. Sprinkle a little Maldon salt on each cookie.
  • Bake the cookies, rotating the sheets from front to back and top to bottom at the halfway mark, until set around the edges and cracked on top, 10 to 12 minutes. The cookies may look slightly underbaked in the center--that's exactly what you want. Cool the cookies completely on the pans.

1 cup unbleached all-purpose flour
1/4 cup cacao powder, such as Diaspora Anamalai
1/2 teaspoon kosher salt (we use Diamond Crystal)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom, such as Diaspora Bakara
1/4 teaspoon freshly grated nutmeg, such as Diaspora Anamalai
1/8 teaspoon ground cloves
1 stick unsalted butter, softened
1/4 cup granulated sugar
1/4 cup packed light-brown sugar
1 teaspoon pure vanilla extract
1 cup confectioners' sugar
2 to 4 tablespoons unsweetened coconut milk
1/2 cup unsweetened shredded coconut, toasted

Steps:

  • In a bowl, whisk together flour, cacao, salt, cinnamon, cardamom, nutmeg, and cloves. In a large bowl, beat butter with granulated and brown sugars until light and fluffy, 4 to 6 minutes. Add vanilla; beat 30 seconds more.
  • Scrape down sides of bowl, then add flour mixture; beat on low until a cohesive dough forms. Turn out onto a large piece of plastic wrap. Fold plastic over dough and form into a log about 2 inches in diameter and 6 inches long. Refrigerate at least 2 hours and up to 1 day.
  • Preheat oven to 325°F. Using a sharp knife, slice dough into 1/2-inch-thick rounds, turning log slightly with each slice (this helps keep a round shape as you cut). Place rounds about 1 inch apart on parchment-lined baking sheets. Bake until firm in center and slightly darker around edges, 13 to 15 minutes. Let cool on sheets 5 minutes, then transfer to wire racks; let cool completely.
  • Stir together confectioners' sugar and 2 tablespoons coconut milk in a small bowl until thick and pourable. (If glaze is too thick, add more coconut milk, 1 teaspoon at a time, until you reach desired consistency.) Hold a cookie over bowl and spoon glaze over half of it, letting excess drip back into bowl. Keep spooning glaze over cookie until it forms an even layer.
  • Return cookie to rack and sprinkle with toasted coconut down center edge of glaze. Repeat with remaining cookies. Let stand until glaze sets, 1 to 2 hours. Cookies can be stored in an airtight container at room temperature up to 3 days.

SOFT COCOA COOKIES

These soft cookies are almost like little cakes. I like to make them very small, but you can make them larger if you wish. Very good with chocolate icing on top. Note: This is one of the recipes I adopted in the Great 'Zaar Ophan Adoption of 2005. I hope you enjoy it.

1 cup brown sugar, packed
1/2 cup cocoa
1 large egg
2/3 cup milk
1/4 teaspoon salt
1 1/2 cups flour
3 teaspoons baking powder
1 teaspoon vanilla

Steps:

  • Cream butter and brown sugar;add egg.
  • Sift dry ingredients and add to butter/sugar mixture alternately with milk.
  • Add vanilla.
  • Drop by spoonfuls on ungreased cookie sheet.
  • Bake 8-12 minutes at 400°F; do not overbake.
  • Ice with chocolate icing, if desired.

1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup vanilla marshmallow bits (not miniature marshmallows)
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 375°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In another bowl, whisk flour, cocoa mix, baking cocoa, salt, baking soda and baking powder; gradually beat into creamed mixture. Gently stir in marshmallow bits and chocolate chips., Drop dough by tablespoonfuls 2 in. apart onto greased baking sheets. Bake until set, 10-12 minutes. Remove to wire racks to cool completely.

1/2 cup brown sugar
1/4 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/4 cup cocoa powder
1/2 teaspoon baking soda

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • Make sure that the butter is at room temperature, or put the butter in the microwave for about 15 seconds just to soften it up.
  • Using a mixer, cream the butter, brown sugar and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract and mix until combined.
  • In a separate bowl, sift the flour, cocoa powder, baking soda and salt.
