SKILLET CABBAGE UNROLLS
A one-pan version of cabbage rolls for those of us who have neither the time nor patience for the rolled version. This is a family favorite and is so quick and easy.

Steps:
- In large skillet on med-high heat, brown pan sausage, breaking apart large lumps. Drain fat.
- Add tomatoes, rice, and enchilada sauce. Stir to blend.
- Add as much chopped cabbage as you prefer (it may not be necessary to use an entire head).
- Cover and cook on medium heat, stirring occasionally and adding water if needed, until cabbage and rice are tender.
- Adjust seasoning and enjoy.

CABBAGE UNROLLS
Cabbage rolls made easier. Much easier than rolling up and tying actual rolls and tastes just as good.

Steps:
- Preheat oven to 325 degrees.
- Steam cabbage until tender, drain well.
- While cabbage is steaming, cook meat,onion, garlic powder,onion powder and salt until browned, drain well.
- In large pan, mix eggs,6 ounces tomato paste, 1 can tomato soup,sugar,ketchup,worcestershire,and rice.
- Stir in cooked and drained meat mixture.
- Spray a 9 by 13 pan with cooking spray.
- Mix 1 can tomato sauce with 1 can tomato soup, spread 1/2 of mixture in bottom of pan. Layer 1/2 of steamed and drained cabbage,all of meat mixture, other 1/2 of cabbage and top with remaining tomato sauce and tomato soup mixture. Coiver with foil and bake 45 minutes, remove foil and continue baking for 30 minutes. Remove from oven and let sit for 15 minutes before serving.

UNSTUFFED CABBAGE ROLL
This is a quick and easy main dish. My kids don't even like cabbage, but they love this. I usually try to serve it with green beans, new potatoes, corn, and a pan of corn bread. They eat over half the pan every time. Also, the longer it stands the better it tastes.

- Heat a Dutch oven or large skillet over medium-high heat. Cook and stir beef and onion in the hot Dutch oven until browned and crumbly, 5 to 7 minutes; drain and discard grease. Steps:
- Brown meat in a skillet with cooking spray.
- Spray and 8 by 8 dish with cooking spray.
- Layer cabbage on bottom of dish.
- Cover with onion, brown meat and rice.
- Combine tomatoes, mustard, brown sugar twin and salt and lemon pepper.
- Pour over mixture in the dish.
- Cover and bake at 350 degrees Fahrenheit for 1-1/2 hours.
- Uncover and bake additional 10 minutes.

I've always enjoyed cabbage rolls but didn't make them since most methods were too complicated. This recipe is fairly simple and results in the best cabbage rolls. - In a Dutch oven, cook cabbage in boiling water for 10 minutes or until outer leaves are tender; drain. Rinse in cold water; drain. Remove 8 large outer leaves (refrigerate remaining cabbage for another use); set aside. , In a large saucepan, saute 1 cup onion in butter until tender. Add the tomatoes, garlic, brown sugar and 1/2 teaspoon salt. Simmer for 15 minutes, stirring occasionally. , Meanwhile, in a large bowl, combine the rice, ketchup, Worcestershire sauce, pepper and remaining onion and salt. Crumble beef and sausage over mixture and mix well. , Remove thick vein from cabbage leaves for easier rolling. Place about 1/2 cup meat mixture on each leaf; fold in sides. Starting at an unfolded edge, roll up leaf to completely enclose filling. Place seam side down in a skillet. Top with the sauce. , Cover and cook over medium-low heat for 1 hour. Add V8 juice if desired. Reduce heat to low; cook 20 minutes longer or until rolls are heated through and a thermometer inserted in the filling reads 160°.

VEGAN UNROLLED CABBAGE ROLLS

I didn't have quick cooking brown rice and just used cooked brown rice instead- about a cup and a half- and it turned out just fine. I also doubled the tomato sauce because I wanted to use it up and it was delicious. You can definately play with this recipe. I may add some ground not meat next time.

- Place the oil in a 41/2 quart saucepan or Dutch oven, and heat it over medium high heat. When the oil is hot, add the onion, carrot, celery and garlic and saute them for 10 minutes.
- Add the remaining ingredients, mix well, and bring the mixture to a boil.
- Reduce the heat to medium-low and cover the pan with a lid and simmer the mixture for 30 to 35 minutes. Do not stir or lift the lid until the total cooking time has elapsed.
- Remove the saucepan from the heat and let the mixture rest, covered, for 5 minutes,.
- Stir to mix well and serve hot.

- Cook cabbage in boiling water just until outer leaves pull away easily from head. Set aside 12 large leaves for rolls. In a small bowl, combine the beef, pork, 1/2 cup tomato sauce, onion, rice, parsley, salt, dill and cayenne; mix well., Cut out the thick vein from the bottom of each leaf, making a V-shaped cut. Place about 1/4 cup meat mixture on a cabbage leaf; overlap cut ends of leaf. Fold in sides. Beginning from the cut end, roll up. Repeat., Slice the remaining cabbage; place in a Dutch oven. - Thinly slice the cabbage, chop the onion, mince the garlic, steam the riced cauliflower, and chop the parsley. I steamed the frozen cauliflower rice by heating it in the microwave for 4 minutes, stirring halfway through cooking time. Drain the cauliflower rice well if it is watery (mine was not).
- Brown the beef and pork together in a Dutch oven on the stovetop (medium heat). Use a spatula to break the meat into crumbles as it cooks. After it browns (about 10-12 minutes), remove it from the pan and set it aside.
- Heat the olive oil in the Dutch oven (you don't have to wipe it out after cooking the meat). Add the garlic, onion, and cabbage shreds. Cook, stirring occasionally, until the cabbage softens, shrinks down, and browns a little. This will take about 10 minutes.
