Chicken takes the place of shrimp in this dish inspired by the Olive Garden classic -- making it even more weeknight friendly. Serve over angel hair pasta and you'll be in and out if the kitchen in less than 30 minutes. Molto bene!

Kosher salt
1 pound thinly-sliced chicken cutlets, cut into 1/2-inch-thick strips
3 tablespoons olive oil
8 tablespoons unsalted butter, cubed
6 cloves garlic, sliced
1/2 teaspoon crushed red pepper flakes
1/2 cup dry white wine
12 ounces angel hair pasta
1 teaspoon lemon zest plus the juice of 1 large lemon
1/2 cup freshly grated Parmesan
1/2 cup chopped fresh Italian parsley

Steps:

  • Bring a large pot of salted water to a boil for the pasta. Sprinkle the chicken with some salt. Heat a large skillet over medium-high heat until hot, then add the oil. Working in 2 batches, brown the chicken until golden but not cooked through, 2 to 3 minutes per batch. Remove the chicken to a plate.
  • Melt 4 tablespoons of the butter in the skillet. Add the garlic and red pepper flakes and cook until the garlic just begins to turn golden at the edges, 30 seconds to 1 minute. Add the wine, bring to a simmer and cook until reduced by half, about 2 minutes. Remove from the heat.
  • Meanwhile, cook the pasta until very al dente, reserving 1 cup of the pasta water. Add the pasta and 3/4 cup pasta water to the skillet along with the chicken, lemon zest and juice and the remaining 4 tablespoons butter. Return the skillet to medium-low heat and gently stir the pasta until the butter is melted, adding the remaining 1/4 pasta water if the pasta seems too dry. Remove the skillet from the heat, sprinkle with the grated cheese and parsley and toss before serving.

Jamie's a fan of shrimp scampi, but Jack is not. Turns out they can both agree on this chicken version.

Number Of Ingredients 11

4 tablespoons (1/2 stick) unsalted butter
2 tablespoons olive oil
4 garlic cloves, minced
3/4 cup dry white wine
1 1/4 teaspoons salt, plus additional for seasoning
1/4 teaspoon freshly ground black pepper, plus additional for seasoning
1/8 teaspoon crushed red pepper flakes
3 boneless skinless chicken breast halves, cut into 1 1/2-inch-long strips
1/3 cup chopped fresh parsley
1 1/2 tablespoons freshly squeezed lemon juice
Cooked pasta, such as linguine, for serving

Steps:

  • Melt the butter with the olive oil in a large skillet over medium heat. Add the garlic and cook for 1 minute, until fragrant. Add the wine, the 1 1/4 teaspoons salt, the 1/4 teaspoon pepper, and the red pepper flakes. Simmer until the wine has reduced by half, 3 to 5 minutes.
  • Season the chicken with the additional salt and pepper. Add the chicken to the sauce in the skillet and cook for 5 minutes, or until no longer pink inside and the juices run clear when it is pricked with a fork. Stir in the parsley and lemon juice. Serve over the pasta.

4 boneless, skinless chicken breasts
3/4 c scampi butter (recipe below)
1 c panko bread crumbs
1 1/4 c heavy cream
2 Tbsp lemon juice
1 lb linguini, cooked al dente or any pasta you prefer (i like angel hair)

Steps:

  • 1. Pound the chicken breasts to an even thickness, no more than 1/2" thick. Then melt the scampi butter over medium heat in a large skillet. Press the chicken into the bread crumbs and sauté until lightly browned on both sides, about 6 to 8 minutes. Slice in strips or keep whole. Remove the chicken from the skillet and turn the heat to low. Add the heavy cream and lemon juice, stirring to combine, until the mixture thickens slightly. To serve, arrange sliced chicken breast or a whole breast over linguini and pour the cream sauce over the chicken.
  • 2. SCAMPI BUTTER: 1/4 pound unsalted butter, softened 1 tablespoon minced garlic 2 tablespoons minced red onion 1 tablespoon chopped fresh parsley leaves 1/2 teaspoon garlic powder 1/2 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper Dash white pepper Dash Worcestershire sauce 1 lemon, juiced 1 tablespoon white wine
  • 3. In a bowl, whisk all ingredients until thoroughly combined. Refrigerate until ready to use.
