EASY PECAN PIE BREAD PUDDING



Easy Pecan Pie Bread Pudding image

Love bread pudding and pecan pie? Now you can enjoy the flavors of pecan pie in a creamy and delicious bread pudding that is super easy to make. And, easy to clean up with this pan! Serve while slightly warm with some fresh whipped cream or a scoop of vanilla ice cream.

1 loaf day-old French baguette
5 eggs
3 ½ cups whole milk
1 cup sugar
1 tablespoon vanilla extract
½ cup butter
1 ½ cups brown sugar
1 ½ cups shelled pecan halves

Steps:

  • Cut the bread into cubes and let sit out about an hour to dry out a bit. Using day-old bread is perfect; the drier the bread cubes, the more yumminess they soak up!
  • Preheat oven to 350 degrees F.
  • In a medium bowl, mix the eggs until they are combined. Add the milk, sugar, and vanilla and stir until combined.
  • Place the bread cubes in a baking pan and pour the milk and egg mixture over them.
  • Melt butter in a small microwave-proof bowl. Stir in the brown sugar until dissolved. Stir in the pecans.
  • Pour this mixture over the bread and egg mixture, and gently fold. Don't mix it in thoroughly, just fold so the yummy pecan mixture forms into clumps throughout the bread pudding.
  • Bake for 45 to 55 minutes, or until the top is slightly brown. The center will still be a little jiggly.
  • Allow to cool at least 20 minutes before serving. The egg mixture will continue to cook, and the bread will soak up more yumminess.

1 (10.75 ounce) loaf day-old bread, torn into small pieces
4 cups milk
2 cups brown sugar
½ cup butter, melted
3 eggs, beaten
2 teaspoons vanilla extract
1 cup butterscotch chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
  • In a large bowl, combine bread, milk, sugar, butter, eggs, vanilla and butterscotch chips; mixture should be the consistency of oatmeal. Pour into prepared pan.
  • Bake in preheated oven 1 hour, until nearly set. (It should have a "thigh wiggle" or wiggle as much as a well endowed thigh.) Serve warm or cold.

8 cups rhodes bread or 8 cups rolls, baked and cut into 1-inch cubes
12 ounces butterscotch chips, divided
1/2 cup chopped pecans
2 cups milk, divided
3 tablespoons sugar
3 large eggs
1 teaspoon vanilla

Steps:

  • Spread bread or roll cubes, 2/3 cup butterscotch morsels and pecans in the bottom of a sprayed 9x13-inch baking pan. In a heavy saucepan, cook 1 cup milk over medium heat, stirring often, 3 to 5 minutes (do not boil). Remove from heat and add remaining butterscotch morsels, stirring until melted. Add sugar, stirring until dissolved. In a medium bowl, combine remaining 1 cup milk, eggs and vanilla. Gradually stir about 1/4 of hot butterscotch mixture into egg mixture. Add egg mixture to remaining hot butterscotch mixture stirring constantly. Pour over bread cubes in baking pan. Press bread cubes down to absorb mixture. Bake at 350°F 30-35 minutes. Serve warm with vanilla ice cream, if desired.

Bread pudding has been a favorite of mine since I was a little girl. This is a variation I have learned to love.

Number Of Ingredients 9

2 cups half-and-half
1 1/2 cups brown sugar (divided)
3 eggs
1 teaspoon vanilla
1/2 teaspoon nutmeg
1/4 teaspoon salt
1 cup pecans (chopped)
4 cups bread cubes (any kind of firm bread)
4 tablespoons butter

Steps:

  • Grease an 8"x8" baking pan with 1 tablespoon of butter. In a large mixing bowl mixing bowl, beat the eggs and add the half and half, and 1 cup of the brown sugar. Stir in the salt and nutmeg. Add the bread cubes and 1/2 cup of the pecan, and allow to sit for 20-30 minutes until the bread is completely soaked with the custard.
  • Pour into the baking pan, sprinkle with the remaining pecans and brown sugar. Dot the top with 3 tablespoons butter broken into small pieces.
  • Bake in a pre-heated 350 F oven for 30-40 mins, or until set and golden brown on top.
  • This is great served warm with ice cream or a custard sauce. I like it cold for breakfast too!

3/4 cup packed dark brown sugar
1 tablespoon flour
1 1/4 cups flour
3/4 cup granulated sugar
1/3 cup chopped pecans
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup milk
2 tablespoons butter, melted
1 1/2 teaspoons vanilla extract
1 3/4 cups boiling water
16 ounces Cool Whip (thawed)
chopped pecans (optional)

Steps:

  • Preheat oven to 350.
  • Combine brown sugar and 1 tablespoon flour in a small bowl.
  • Lightly spoon 1-1/4 cups flour into dry measuring cups; level with a knife.
  • Combine with granulated sugar, 1/3 cup pecans, baking powder, and salt in a medium bowl; make a well in center of mixture.
  • Combine milk, butter, and vanilla in a bowl; add to flour mixture.
  • Stir just until moist.
  • Spread batter into an 8-inch square baking pan; sprinkle with brown sugar mixture.
  • Pour boiling water over batter (do not stir).
  • Bake at 350' for 35 minutes or until pudding is bubbly and cake springs back when touched lightly in center.
  • Serve warm with whipped topping.
  • Garnish with pecans, if desired.

  • Bring brown sugar, corn syrup, butter, and salt to a boil in a medium saucepan over medium-high heat, whisking to dissolve sugar. Boil until mixture is syrupy and measures 1 1/2 cups, about 3 minutes. Remove from heat; add cream and bourbon, if desired, and stir until smooth. Let cool. DO AHEAD: Can be made 3 days ahead. Let cool completely, cover, and chill. Rewarm before serving.
  • Toss bread, melted butter, and 2 tablespoons sugar in a large bowl and set aside. Using an electric mixer, beat eggs and remaining 1 1/2 cups sugar in another large bowl until pale yellow and fluffy, about 3 minutes. Add cream, poppy seeds, and salt; beat to blend. Place bourbon in a small bowl; scrape in seeds from vanilla bean (reserve bean for another use). Whisk to distribute seeds, then add to egg mixture, whisking to blend well. Pour egg mixture over bread mixture in bowl. Add pecans and toss to coat well. Transfer mixture to a 13x9x2” glass or ceramic baking dish, spreading out in an even layer. Cover with plastic wrap and chill overnight.
  • Preheat oven to 325°. Remove plastic wrap and bake until top is browned in spots and a tester inserted into center comes out clean, 1 1/4–1 1/2 hours. Serve bread pudding with butterscotch sauce.
