1 cup butterscotch chips
½ cup peanut butter
½ cup salted peanuts
2 cups chow mein noodles

Steps:

  • Melt butterscotch chips and peanut butter on top of a double boiler, or in a microwave. Blend together.
  • Stir peanuts and noodles gently into the melted peanut butter mixture.
  • Drop dough by forkfuls onto waxed paper. Cool until set.

½ cup butter
¾ cup peanut butter
2 cups butterscotch chips (11 ounce bag)
4 cups miniature marshmallows

Steps:

  • Line a 8x8 baking pan.
  • In a saucepan over medium heat combine butter, peanut butter and butterscotch chips stirring frequently. Alternatively combine in a bowl and microwave in 30 second increments, reducing to 15 second increments until melted and combined stirring between.
  • Allow to cool 5 minutes.
  • Fold in miniature marshmallows and pour into lined pan.
  • Refrigerate 1+ hours before cutting into squares and serving.

My former boss used to prepare these sweet morsels for her staff at Christmas. When I got the recipe, I was thrilled to discover they're not hard to make.

Number Of Ingredients 5

1-1/2 teaspoons plus 1/2 cup butter, divided
1 package (11 ounces) butterscotch chips
1 cup peanut butter
1 cup miniature marshmallows
1/2 cup sweetened shredded coconut

Steps:

  • Grease a 9-in. square pan with 1-1/2 teaspoons butter; set aside. In a microwave or heavy saucepan, melt the butterscotch chips, peanut butter and remaining butter until smooth. Cool for 20 minutes. Stir in marshmallows just until combined (do not melt marshmallows). Pour into prepared pan; sprinkle with coconut. Refrigerate, uncovered, for 2 hours or until firm. Cut into 1-1/2-in. pieces. Store in an airtight container.

1 can (14 ounces) sweetened condensed milk
1 package (12 ounces) butterscotch chips
1-1/2 cups miniature marshmallows
2/3 cup peanut butter
1 teaspoon vanilla extract
1 cup chopped salted peanuts

Steps:

  • In a microwave-safe bowl, combine the milk, chips and marshmallows. Microwave, uncovered, at 80% power for 3 minutes or until chips and marshmallows are melted, stirring frequently. Stir in peanut butter and vanilla until combined. Fold in the peanuts., Pour into an 11x7-in. pan coated with cooking spray. Cover and refrigerate for 2 hours or until firm. Cut into squares. Store in the refrigerator.

They're a twist on a classic chocolate nut cluster and just as easy to make. Make a big batch for holiday gifting or keep them all to yourself to enjoy through the holidays.

16 ounces roasted salted peanuts
20 ounces butterscotch chips
10 ounces white chocolate chips

Steps:

  • Place the peanuts in an even layer in the slow cooker. Top them with the butterscotch chips and white chocolate chips.
  • Cover and cook on low for 30 minutes. Stir the mixture and, if the chips are not completed melted, continue cooking it for up to 30 minutes longer. Check on it every ten minutes, and once the butterscotch and white chocolate are melted and smooth, it's ready.
  • Scoop a generous tablespoon of the mixture and drop it on a baking sheet lined with wax paper. Repeat with the rest of the mixture. Or, you can fill mini cupcake liners instead.
  • Chill the clusters until they are set, about 30 minutes. Store them in an airtight container at room temperature.

1 teaspoon plus 1/2 cup butter, softened, divided
2 cups sugar
1/4 cup light corn syrup
2 tablespoons water
2 tablespoons white vinegar

Steps:

  • Line a 15x10x1-in. pan with foil. Grease the foil with 1 teaspoon butter; set aside. , In a heavy saucepan, combine the sugar, corn syrup, water, vinegar and remaining butter. Bring to a boil over medium heat, stirring occasionally. Cover and cook for 3 minutes to dissolve any sugar crystals. , Uncover; cook, without stirring, until a candy thermometer reads 300° (hard-crack stage). Remove from the heat. Pour into prepared pan without scraping the saucepan; do not spread mixture. , Cool for 1-2 minutes or until candy is almost set. Using a sharp knife, score into 1/2-in. squares; cool completely. Break squares apart. Store in an airtight container.
