¾ cup butter, softened
¾ cup white sugar
¾ cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon salt
3 cups rolled oats
1 ⅔ cups butterscotch chips

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl beat the butter or margarine, white sugar and brown sugar together. Add the eggs and vanilla, beating well.
  • Stir together the flour, baking soda, cinnamon and salt. Gradually add the flour mixture to the butter mixture and stir until blended. Stir in the oats and the butterscotch chips. Drop by teaspoonfuls onto an ungreased cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven, until the edges begin to brown.

1 cup butterscotch chips
1/4 cup peanut butter
2 tablespoons butter
3 cups Cheerios
1/2 cup raisins
1/2 cup sweetened shredded coconut

Steps:

  • In a large heavy saucepan, combine the marshmallows, chips, peanut butter and butter. Cook and stir over medium-low heat until chips and marshmallows are melted. Remove from the heat; stir in Cheerios, raisins and coconut. , Drop by 1/4 cupfuls onto waxed paper. Let stand for 10 minutes.

1/2 cup packed brown sugar
1 egg, lightly beaten
1 cup quick-cooking oats
1 tablespoon butter or margarine

Steps:

  • In a saucepan over medium heat, combine milk, brown sugar and egg. Cook, stirring constantly, for 5-7 minutes or until mixture boils. Add oats; cook and stir for 1 minute. Remove from the heat. Add butter; cover and let stand for 3-5 minutes.

1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon cinnamon
1 cup butter, softened (plus a little more to grease the pan)
3/4 cup white sugar
2 eggs
1 teaspoon vanilla (or a bit more)
3 cups regular oatmeal, uncooked
1 (12 ounce) package butterscotch chips

Steps:

  • Preheat oven to 350°F.
  • Grease a 9x13 pan with butter.
  • Combine flour, soda, salt and cinnamon.
  • In a large mixing bowl cream butter, then add sugar and mix until fluffy.
  • Add eggs and vanilla and beat well.
  • Gradually add flour mixture.
  • Stir in oatmeal and the butterscotch chips.
  • Spread in prepared pan and bake for 22 to 28 minutes.
  • If they seem to be getting to brown on the edges, and are still quite gooey in the center lower the oven temp to 325°F for the last 10 minutes or so.

Kids of all ages love this --- I also added in some cinnamon and raisins but that is optional --- you can also make this in the microwave, I use an 8-cup pyrex measuring cup just remove a few times and stir --- I top this with a bit of 18% cream and sprinkle with a sugar/cinnamon topping --- the recipe is enough for 2-4 servings but I can eat the whole thing myself this is so good :)
