BUTTERSCOTCH BROWNIES AKA BLONDIES
These Butterscotch Brownies are soft, chewy and incredibly easy! They only use one bowl to mix! Brown sugar and butter make these delightfully addicting as a snack, dessert or with an afternoon coffee.

Steps:
- Preheat oven to 350F and grease an 8x8 baking dish.
- Melt butter over stovetop or at 50% power in the microwave. Remove from heat and stir in sugar, egg and vanilla; mix until completely incorporated.
- Stir in remaining ingredients. The mixture will be thick. Spread in greased baking dish. Bake 20-25 minutes in preheated oven. The bake time will depend on the dish you choose!
- Betty Crocker suggests cutting these while still warm. I think they actually cut cleaner when completely cooled. Not that I waited until they were cooled to eat one. No patience! Makes 16 bars.

BUTTERSCOTCH BLONDIES
These rich, chewy bars get their deep caramel flavor from a combination of brown butter, dark brown sugar and an optional sprinkle of flaky salt on top. They're delicious as is, but feel free to add some mix-ins (see note), if that's more your style. You'll want to keep the amount of extra ingredients, like nuts, chocolate and dried fruits, to 2 cups total, since blondies with a lot of mix-ins may take a few minutes longer to bake. For an especially delicious combination, try a mix of 1 cup chopped bittersweet chocolate or chips, 1/2 cup toasted walnuts and 1/2 cup chopped pitted dates.

- Heat oven to 350 degrees and butter and line a 9-by-9-inch baking dish with parchment paper.
- Melt the butter in a saucepan over medium heat. Cook butter, occasionally scraping the bottom and sides of the pan with a rubber spatula, until it turns deep golden brown and smells nutty. Don't walk away from the pan during this process. The butter can go from brown and nutty to acrid and burnt in mere moments. Transfer the butter and all the brown bits from the pan to a large heat-safe bowl to cool slightly.
- When the butter is cool (but still melted), add sugar, vanilla extract and salt. Whisk until smooth. Add the eggs and mix until well combined.
- Fold in the flour and baking powder along with any mix-ins until well combined and no streaks of flour remain in the batter.
- Pour batter into prepared pan, smooth the top, and sprinkle with flaky salt, if desired. Bake the blondies until set and slightly puffy, 20 to 27 minutes. For gooey blondies, err on the short side of the baking time. Cool before slicing.
BLOND BUTTERSCOTCH BROWNIES

- In a large bowl, combine the flour, brown sugar, baking powder and salt. In another bowl, beat the butter, eggs and vanilla until smooth. Stir into dry ingredients just until combined (batter will be thick). , Spread into a 13x9-in. baking pan coated with cooking spray. Sprinkle with chocolate chunks and chopped candy bars; press gently into batter., Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. This is my very favorite recipe for butterscotch brownies. They are fairly quick and simple and you can make several delicious variations to suit your taste. This recipe is adapted from the Betty Crocker Cookbook.

- Preheat oven to 350 degrees.
- Heat shortening over low heat until melted; remove from heat.
- Mix in brown sugar, egg, and vanilla extract.
- Sift together flour, baking soda, and salt; mix into brown sugar mixture.
- Spread into greased square pan 8x8x2 inches.Bake 25 minutes.
- Cut into squares while still warm. Enjoy!
- Variation 1. Mix 1/2 cup of chopped nuts into the batter.
- Variation 2. Sprinkle the batter with 1/2 cup of chocolate or butterscotch chips (or both) before baking.
- Variation 3. Drizzle with your favorite chocolate sauce after baking.

- Preheat the oven to 350°F (177°C). Grease a 9-inch square pan or line with parchment paper, leaving an overhang on the sides to lift the finished blondies out (makes cutting easier). Set aside.
- In a medium bowl, whisk the browned or melted butter and brown sugar together. Once completely combined, whisk in the whole egg, egg yolk, and vanilla extract until combined. Pour the wet ingredients into the dry ingredients and whisk or stir until combined. Batter is pretty heavy and thick, so I usually use a rubber spatula. Fold in the butterscotch morsels and nuts, if using.
- Evenly spread batter into prepared pan. Bake for about 30-35 minutes, or until a toothpick comes out *mostly* clean. A couple moist crumbs are ok, as long as it’s not wet. Remove from the oven and cool blondies completely in the pan set on a wire rack.
