CHICKEN AND BUTTERNUT SQUASH

Steps:
- Heat oven to 450°F. Spray roasting pan with cooking spray. Place chicken in pan. Brush chicken with 1 1/2 teaspoons of the oil; sprinkle with 1/4 teaspoon each of the salt and pepper.
- Place squash in large bowl; drizzle with remaining 1 1/2 teaspoons oil. Sprinkle with fines herbes and remaining 1/4 teaspoon each salt and pepper; toss well. Spoon squash around chicken.
- Roast uncovered 35 to 40 minutes or until juice of chicken is clear when thickest part is cut to bone (at least 165°F). Remove chicken and squash from pan; cover to keep warm.
- Add wine to pan drippings; heat to boiling over high heat, stirring to loosen brown particles. Reduce heat; cook 2 minutes or until sauce is reduced to 1/4 cup.
- On each of 4 plates, place 1 chicken breast and 1 cup squash. Spoon 1 tablespoon sauce over each chicken breast.

CURRIED MUSSEL AND BUTTERNUT SQUASH SOUP

- Melt the butter in a medium sauce-pan. Add the shallots and leek and cook over moderate heat, stirring occasionally, until softened, 3 to 4 minutes. Stir in the curry powder and cook until fragrant, about 1 minute. Add the butternut squash and stock, cover and simmer until the squash is very tender, 20 to 25 minutes. Remove from the heat and let the soup cool to room temperature. Working in batches, puree the soup in a blender until smooth. Return the soup to the saucepan.
- In another medium saucepan, combine the mussels with the white wine, water and thyme and season generously with pepper. Cover and bring to a boil over high heat. Steam the mussels for 3 to 5 minutes, shaking the pan occasionally; transfer the mussels to a bowl as they open. Remove the mussels from the shells and reserve 12 shells for garnish.
- Carefully pour the mussel-cooking liquid into the soup, leaving behind any sand or grit. Reheat the soup and season with salt. Place 12 of the mussels in the reserved shells. Add the rest of the mussels to the soup to warm them. Ladle the soup into bowls, garnish with cilantro and the mussels in the shells and serve.

BUTTERNUT SQUASH AND PRAWN SOUP
Steps:
- The Stock : Melt the butter in a large saucepan over medium high heat. When hot, add the prawn shells and leeks and saute until the shells turn pink and the leeks are translucent. Add the thyme, parsley, water and wine and bring to a boil. Reduce the heat and simmer for 20 minutes, pressing down on the prawn shells to extract their flavor. Strain the stock through a fine sieve, again pressing on the prawn shells. Reserve the stock and discard the solids.
- The Soup: In the same saucepan in which you Sauteed the prawns, add the onions and saute until translucent. Add the squash and rosemary, reduce heat to low, cover and cook, stirring occasionally, for 10 minutes. Add 5 cups of the stock and lemon juice. Bring to a boil, reduce heat to low, cover and cook until the squask is very tender, 1015 minutes. Discard the rosemary. Puree the soup in a food processor or food mill in small batches. Add the remaining 1 cup stock if the soup is you desire a thinner soup. Return the puree to the pan over medium heat.
- Slice the prawns in half lengthwise. Add the prawns to the soup and cook until they turn pink. Transfer prawns to a warm platter and cover. Season soup to taste with salt and pepper and a few dashes of Tabasco.
- To serve: Ladle the soup into shallow soup bowls and set 6 prawns on top of each. Garnish with rosemary
