Provided by Ina Garten

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 7

5 tablespoons unsalted butter
1 1/2 pounds boiling potatoes, peeled and 1/2-inch diced
1 1/2 cups chopped yellow onions (2 onions)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced fresh flat-leaf parsley
2 tablespoons minced scallions (white and green parts)

Steps:

  • Melt the butter in a large (10 to 12-inch) saute pan. Add the potatoes, onions, salt, and pepper and cook over medium-low heat for 15 to 20 minutes, turning occasionally with a flat spatula, until the potatoes are evenly browned and cooked through. (Allow the potatoes to cook for 5 minutes before turning.) Turn off the heat and add the parsley and scallions. Serve hot.

HASSELBACK BUTTERNUT SQUASH

Provided by Michael Symon : Food Network

Categories     side-dish

Time 55m

Yield 4 servings

Number Of Ingredients 10

One 1/2- to 2-pound butternut squash
Olive oil
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter
4 sprigs thyme
4 small sprigs rosemary
1/4 cup pure maple syrup
2 tablespoons apple cider vinegar
1/4 teaspoon chili flakes
Maldon salt, for serving

Steps:

  • Preheat your oven to 425 degrees F. Line a sheet tray with parchment.
  • Cut the squash in half lengthwise and scoop the seeds. Peel the squash then place it on the prepared baking sheet. Drizzle with olive oil and rub the olive oil over the squash to evenly coat. Season with salt and pepper then place cut side up on the tray. Bake for 15 minutes, then flip and continue to cook until the squash begins to soften and get some color, about 5 minutes.
  • In the meantime, make the glaze. In a saucepan over medium heat, melt the butter. Brown the butter by allowing it to cook for an additional 2 minutes while swirling the pan occasionally. Add the herbs and briefly toast, about 30 seconds, then pour in the syrup, vinegar and chili flakes. Bring to a strong simmer and cook until reduced and thick enough to coat a spoon, about 2 minutes. Set aside.
  • Remove the squash from the oven and allow to cool slightly. When cool enough to handle, remove to a cutting board with the flat side down. Slice the squash, taking care not to slice all the way through. Place into a baking dish and pour half of the glaze over the squash, tucking the herbs between the slices.
  • Bake for 10 minutes then pull out of the oven and baste with the pan juices. Brush more of the glaze on then continue to bake for an additional 10 minutes, until the squash is cooked through. Brush on any remaining glaze, sprinkle with crunchy salt and serve.

BUTTERNUT HASH BROWNS

Butternut Hash Browns image

From Hungry Girl. I love her healthy twists on some of my naughty favorite foods! I haven't tried this one yet, but it sounds fabulous! UPDATE! We had these for dinner last night and they were AMAZING! It really is important to get the squash as dry as possible - otherwise you'll get mushy hashbrowns! :) Also, the squash cooks down quite a bit, so next time I'll double the recipe since we know we like it now! UPDATE #2: Here's how I prepared the shredded squash. If anyone has a better method, let me know! (This wasn't part of the original recipe from Hungry Girl.) I cut the uncooked squash into 4 large "chunks", and then removed the seeds and shell. I shredded the squash using the "big" side of a box grater. If the "chunks" were too large to manage, I cut them into smaller pieces. (Hope that helps!)

Time 25m

Yield 2 serving(s)

Number Of Ingredients 8

2 cups butternut squash, uncooked, shredded
4 tablespoons onions, chopped
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 dash ground cumin
1 dash salt
1 dash pepper
nonstick cooking spray

Steps:

  • Spread the shredded squash out between 2 layers of paper towels. Press down to absorb as much of the moisture from the squash as possible. Repeat if necessary, until no more water can be removed.
  • Toss squash shreds with onion, onion powder, garlic powder, cumin, salt and pepper.
  • Bring a small to medium pan sprayed generously with nonstick spray (a 1 to 2 second spray) to high heat.
  • Add mixture to the pan and cook for 3 minutes.
  • Flip shreds with a spatula and cook for another 3 minutes or so (until cooked and browned).
  • Season to taste with more salt and pepper.
  • Optional toppings: Ketchup, salsa, etc.
