1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon allspice
1/2 teaspoon ground cloves
1 cup sugar
1 cup brown sugar
2/3 cup vegetable shortening
3 large eggs
1/4 cup orange juice
1 cup buttermilk
1/2 cup walnuts or pecans (chopped)
3/4 cup brown sugar
1/2 cup butter
1/4 cup hot milk
3 1/4 cup powdered sugar

Steps:

  • Preheat oven to 350 degrees. In medium bowl, combine flour, baking powder, salt, baking soda, cloves, cinnamon, and allspice. Set aside.
  • In mixing bowl, cream together shortening and sugars. Add eggs one at a time and beat for 2 minutes. Add orange juice and buttermilk alternately with flour mixture and beat for another 2 minutes. Stir in chopped nuts. Pour mixture into greased oblong cake pan. Bake for 30-35 minutes. Allow to cool before frosting.

2 cups cake flour
1 cup white sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1 cup fresh dairy buttermilk
3/4 cup brown sugar
1/2 cup shortening
3 whole eggs
1/2 cup salted butter
1 cup brown sugar, packed
1/4 cup evaporated milk
1 3/4-2 cups powdered icing sugar

Steps:

  • In a mixer bowl, sift flour, white sugar, powder, soda, salt and spices.
  • I also sometimes add a grating of fresh nutmeg, and a pinch of ginger if desired.
  • (never measured amounts).
  • Add buttermilk, brown sugar, and shortening.
  • Beat for two minutes.
  • Add eggs, and beat another and final two minutes.
  • Spread batter into two greased and floured 9 inch round cake pans.
  • Bake 350 degrees for 30 minutes, until tester shows done.
  • Cool and remove to wire rack for perfect cooling.
  • Penuche Frosting:.
  • In saucepan melt the half cup butter and stir in the one cup brown sugar.
  • Cook until dissolved and boil for two minutes.
  • Remove from heat and add the quarter cup evaporated milk.
  • Return to heat and return to boiling point stirring constantly.
  • Remove from heat.
  • Cool to lukewarm.
  • Beat in 1 3/4 to 2 cups powdered icing sugar.
  • If its too thick add in a few tablespoons more milk little at a time.
  • If its too thin add in more icing powder a little at a time.
  • When to your desired spreading consistency, fill and frost cake.

1 stick butter, softened
1/2 cup vegetable oil
5 large eggs, separated
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder

1/2 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
Pinch of salt
1 cup buttermilk

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease and flour 2 (9-inch) cake pans. In a large mixing bowl with an electric mixer, cream the brown sugar and butter. With the mixer running, add the oil in a steady stream. Add the egg yolks, one at a time, beating well after each addition. Sift the flour, baking soda, baking powder, spices and salt into a medium-size mixing bowl. Alternately add the flour mixture and the buttermilk to the batter, mixing well. With the electric mixer, in another large mixing bowl, beat the egg whites until stiff peaks form, then fold them into the cake batter. Pour the batter evenly into the prepared pans. Bake until the center springs back when touched, about 25 minutes. Remove from the oven and cool on wire racks. After the cakes have cooled, invert them onto sheets of parchment paper. Slice each cake in half and set aside.

1 (18 1/2 ounce) yellow cake mix
1 (3 ounce) instant vanilla pudding
1 cup sour cream
1/2 cup water
1/4 cup oil
4 eggs
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon clove
1/4 teaspoon salt
2 cups grated zucchini, drained well
1 cup packed light brown sugar
8 tablespoons butter
1/4 cup milk
2 cups powdered sugar

Steps:

  • Put cake mix, pudding mix, sour cream, water, oil, eggs, cinnamon, nutmeg, cloves, and salt in a large mixing bowl.
  • Blend with an electric mixer on low speed for 1 minute. Increase speed to medium and beat 2 to 3 minutes more.
  • Fold in the grated zucchini.
  • Pour batter into greased and floured tube pan.
  • Bake 60 to 65 minutes at 350 degrees.
  • Penuche Frosting.
  • Place brown sugar and butter in a saucepan over medium heat. Simmer, stirring constantly, 2 minutes. Carefully pour in the milk, stirring, and bring the mixture to a boil.
  • Cool slightly.
  • Place the powdered sugar in a large bowl.
  • Pour the hot brown sugar mixture over the powdered sugar. Beat with an electric mixer on low speed until frosting is smooth, 2 to 3 minutes. Use immediately (while warm) to frost cake or the frosting will harden. If it does harden, simply place the pan back over low heat and stir until the frosting softens up.

This recipe comes from an old version of the Betty Crocker Cookbook that my mother got when she first married. It is wonderful addition to any chocolate cake. Enough for 2 - 8" or 9" layers or 1 - 13x9" oblong cake.

1/4 cup milk
1 3/4-2 cups confectioners' sugar
ice water

Steps:

  • Melt butter in sauce pan.
  • Stir in brown sugar.
  • Boil and stir over low heat for 2 minutes.
  • Stir in milk.
  • Bring to a boil, stirring constantly.
  • Cool to lukewarm.
  • Gradually stir in confectioner's sugar.
  • Place pan in ice water and stir until thick enough to spread.

FROSTING

Steps:

  • CAKE: Cream shortening, butter, and brown sugar. Gradually add eggs. Sift flour, soda, salt, and spice and alternate with milk. Add dates and nuts. Bake in 9-inch layers at 350°F for 30 minutes. Cool, then frost with Penuche Frosting.
  • FROSTING: Melt butter in medium saucepan. Stir in brown sugar and boil for 2 minutes, stirring constantly. Add milk and heat to boiling. Remove from heat; cool and beat in powdered sugar.
  • NOTES: I believe that the reason for 1/2 butter and 1/2 shortening was economy. All butter would probably work well, too. Margarine contains liquid, so it wouldn't be the best choice. Be sure to use 9-inch cake pans, or you'll have cake everywhere. Three thinner, 8-inch cakes could probably be made instead, but I've never tried it.

Steps:

  • Cream shortening and brown sugar. I would do 1/4 cup shortening and 1/4 cup butter.
  • Add eggs.
  • Sift flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and allspice together.
  • Add wet and dry ingredients alternately.
  • Stir in raisins and walnuts.
  • Place batter in lightly greased and floured pan.
  • Bake at 350 degrees Fahrenheit for 25 minutes in a 13x9 pan. I think this cake would do better in a smaller, taller cake pan but you would have to bake it longer. Bundt pan takes 45 minutes or thereabouts.

1 cup sugar
3/4 cup packed brown sugar
1 teaspoon baking powder

Steps:

  • Preheat your oven to 350degrees*.
  • Grease and flour a 9 x 13 pan or 2 8in. round cake pans.
  • Measure all ingredients into a large mixing bowl.
  • Blend for 30 seconds on low speed. Scrape sides of bowl down. Blend on high speed for 60 seconds, scraping bowl occassionally.
  • Pour into prepared pans. Smack pans gently on counter to get rid of any air bubbles.
  • Bake 9 x 13 for 45 minutes; 8 inch rounds for 30-40 minutes or until wooden toothpick or cake tester comes out clean. Frost cake with your favorite frosting**.
  • Notes: *Many home ovens have widely varying oven temperatures. Buying an oven thermometer at your local discount store will cost you about $3 and guarantee you will have great success in your cake & other baking endeavors. Preheat your oven to 350 degrees and place the thermometer in the back of oven. After 5 minutes,check the thermometer and move it to the left side then the right side and then the front of your oven. Adjust your oven settings accordingly to how far off 350 degrees the temps are in your oven. Many of you will be surprised at just how far off a brand new oven can be. $3 is a small price to pay for successful baking. **When baking this cake in 8 inch rounds, I spread a thin layer of my cream cheese frosting on top of the first layer and then slice a couple of bananas on top of the frosting and then place the second layer on top and finish frosting the cake with the rest of the cream cheese frosting. When I bake it in x 13 pan, I like to toast coconut on a cookie sheet and after frosting the cooled cake with either my cream cheese frosting or my butter pecan frosting, I sprinkle the toasted coconut on top of the frosted cake.
