BUTTERMILK PECAN PANCAKES

Buttermilk Pecan Pancakes image

This makes a nice weekend breakfast. The amount of servings depend on how big or small you make the pancakes. Make sure the ingredients are at room temperature.

Provided by Crystal ~

Categories     Pancakes

Time 15m

Number Of Ingredients 9

1 cup all-purpose flour
½ teaspoon baking soda
a pinch of salt
2 teaspoons granulated sugar
1 cup buttermilk, room temperature
1 large egg, room temperature
2 tablespoons unsalted butter, melted
1/2 cup of pecan pieces, or more
light tasting olive oil for cooking

Steps:

  • 1. Preheat a non-stick skillet or griddle that has been coated with a teaspoon of oil.
  • 2. In a bowl, or large measuring cup, whisk together the flour, baking soda, sugar and salt.
  • 3. Add the buttermilk, egg and butter. Stir mixture together just to combine. It doesn't matter if there is flour lumps in there. Do not over stir the batter!
  • 4. Pour about 1/4 to 1/3 cup of batter into your oiled hot skillet or griddle. Sprinkle a few pecans over the batter. When the pancakes have bubbles on top, flip over and cook on the other side until browned. (Cook about 1½ minutes on each side).
  • 5. Serve with butter and maple syrup.
  • 6. **Add a bit of oil to the skillet for each pancake you fry. Makes approximately 4-6 pancakes. You can nuke them in the microwave to warm them up a bit, if you want to serve them all at the same time.

A very light and fluffy pancake that requires fresh buttermilk, but it's the best I've ever made!

Provided by BURYGOLD

Categories     Breakfast and Brunch     Pancake Recipes

Time 25m

Yield 12

Number Of Ingredients 9

3 cups all-purpose flour
3 tablespoons white sugar
3 teaspoons baking powder
1 ½ teaspoons baking soda
¾ teaspoon salt
3 cups buttermilk
½ cup milk
3 eggs
⅓ cup butter, melted

Steps:

  • In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.
  • Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!
  • Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.

Number Of Ingredients 14

2 cups unbleached all-purpose flour
3 tablespoons sugar
1/2 teaspoon table salt
1 teaspoon baking powder
1/2 teaspoon baking soda
2 cups buttermilk
2 large eggs
1/4 cup unsalted butter, melted and cooled, plus more for frying
Vegetable oil, for frying
Chopped pecans, to distribute over pancakes
Mamma Callies Syrup, for serving, recipe follows
3/4 cup water
1 cup light brown sugar
Small pinch salt

Ladle about 1/4 cup of batter onto the griddle for each pancake. Evenly distribute chopped pecans on top of the pancakes. Cook the pancakes until the bubbles begin to burst on the surface, about 3 minutes, flip and continue cooking until the second side is a nice golden brown, about 2 more minutes. Repeat with remaining pancakes.
  • Put the finished pancakes onto a sheet tray and let sit in the oven to stay warm as you finish.
  • Arrange the pancakes on individual plates and serve with the syrup.
  • Add the water, brown sugar and salt into a medium saucepan over medium heat. Bring the mixture to a simmer and stir until the sugar dissolves. Let simmer for 25 to 30 minutes, stirring occasionally. Let cool before serving.

Time 50m

Number Of Ingredients 11

3 eating apples , such as Golden Delicious or Pink Lady
25g butter
85g/3oz pecan halves, halved lengthways
175ml maple syrup
100g plain flour
2 tsp baking powder
½ tsp bicarbonate of soda
1 tbsp golden caster sugar
2 large eggs , separated
284ml tub buttermilk
25g butter , melted, plus extra

Steps:

  • Make the topping. Peel, core and quarter the apples, then slice each quarter into four. Heat the butter in a large frying pan. Cook the apples until golden, but still firm. Stir in the pecans and maple syrup. Heat gently for 2-3 minutes. Remove from the heat and keep warm.
  • For the pancakes, sift the flour, baking powder, bicarbonate of soda, sugar and a pinch of salt into a bowl. Whisk the egg whites until stiff. When the surface has dulled slightly and bubbles appear, after about 3-4 minutes, carefully flip the pancakes over and cook on the other side until browned.
  • To serve, place a spoonful of the apple mixture on a pancake, top with a second pancake and spoon over more of the topping. Repeat to make three more pancake stacks.
