Our Favorite Oatmeal Cake image

This is called "Our Favorite" cake for a reason. Super-moist, cinnamon-scented oatmeal cake is topped with a sweet brown sugar and coconut topping, broiled in the oven to give an addictive crunch.

1 cup quick oats ((250 ml))
1 1/2 cup water (boiling (375 ml))
1/2 cup butter ((125 ml))
1 cup brown sugar (packed (250 ml))
1 cup sugar ((250 ml))
1 tsp vanilla extract ((5 ml))
2 eggs
1 1/2 cups flour (all-purpose (375 ml))
1 tsp baking powder ((5 ml))
1 tsp baking soda ((5 ml))
1 tsp cinnamon ((5 ml))
1 tsp salt ((5 ml))
6 Tbsp butter (melted (90 ml))
1/2 cup brown sugar (packed (125 ml))
1 tsp vanilla extract ((5 ml))
1/4 cup milk ((60 ml))
1 cup coconut (sweetened, shredded (250 ml))

Steps:

  • Preheat oven to 325°F (160°C). Lightly grease a 9" x 13" baking pan.
  • In a small bowl, combine oats and boiling water. Let stand for 20 minutes.
  • In a large bowl, cream 1/2 cup butter, brown and white sugar. Beat in vanilla and eggs until light and fluffy.
  • Fold in flour, baking powder, baking soda, cinnamon and salt. Fold in oat mixture.
  • Spread batter evenly in pan and bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove cake from oven and turn on broiler
  • For Topping - in a small bowl, combine melted butter, brown sugar, vanilla, and milk, stir in coconut. Spread topping over still-warm cake.
  • Broil, approx. 6" from top element, for 1-2 minutes, or until golden and bubbly.
  • Allow cake to cool 30-60 minutes before serving.

1/2 cup butter
1 1/2 cups boiling water

1 cup light brown sugar
1 cup granulated sugar

1/2 teaspoon salt
6 Tablespoons butter (, room temperature)
1 cup shredded sweetened coconut
1/2 cup evaporated milk
1/2 cup light brown sugar
1 cup nuts
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F. Grease a 9x13'' pan with non-stick cooking spray.
  • Add the oatmeal and butter to a bowl and pour boiling water on top. Set aside.
  • In a mixing bowl combine the eggs, brown sugar, and white sugar and mix well.
  • In a separate bowl sift together the flour, cinnamon, baking soda, nutmeg, and salt.
  • Add to the bowl with eggs and sugars and stir to combine.
  • Add the oatmeal mixture and stir to combine.
  • Bake for about 35 minutes or until a toothpick inserted in the center of the cake comes out clean.
  • While the cake is baking, make the topping by combining all the ingredients in a bowl.
  • Remove the cake from the oven and turn the oven to high broil.
  • Spread the topping evenly over the warm cake and place under the broiler for 2-4 minutes or until the coconut is golden brown.

1 cup quick-cooking oats
1 cup buttermilk
1 egg, beaten
1/2 cup packed brown sugar
1/4 cup vegetable oil
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • In a bowl, soak oats in buttermilk for 15 minutes. Stir in egg, sugar and oil. Combine flour, baking powder, baking soda and salt; stir into oat mixture just until moistened. Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° until muffins test done, 16-18 minutes. Cool in pan 5 minutes before removing to a wire rack.

3/4 cup boiling water
1/4 cup shortening
1/2 cup sugar

1/4 teaspoon salt
Confectioners' sugar, optional

Steps:

  • Place oats in a small bowl; add boiling water. Let stand for 20 minutes. , In a small bowl, cream shortening and sugars. Add oat mixture and egg; mix well. Combine the flour, baking soda, cinnamon and salt; add to creamed mixture and beat until combined. , Pour into an 8-in. fluted tube pan coated with cooking spray. 1 1/4 cups boiling water
1 cup (97g) rolled oats (old fashioned)
1/2 cup (113g) unsalted butter, (softened)
1/2 cup (105g) packed light brown sugar
1/2 cup (100g) granulated sugar
2 large eggs
1 tsp vanilla extract
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp baking soda
1/2 tsp salt
1 1/3 cups (188g) all-purpose flour ((scoop and level to measure))
1/4 cup salted butter, (melted)
3 Tbsp milk
1/2 tsp vanilla extract
1/2 cup (105g) packed light brown sugar
1 cup (85g) sweetened shredded coconut
1/3 cup chopped pecans ((optional))

Steps:

  • Preheat oven to 350 degrees. Spray a 9 by 9-inch baking dish with non-stick cooking spray (a 7 by 11-inch dish would work as well).
  • Add oats to a medium mixing bowl the pour boiling water over oats, let rest until cool.
  • Meanwhile in a large mixing bowl using an electric hand mixer (or use electric stand mixer), whip together butter, brown sugar and granulated sugar until pale and fluffy.
  • Mix in eggs, vanilla, cinnamon and nutmeg then mix in cooled oat mixture.
  • Sprinkle baking soda and salt across top then pour in flour and mix until combined.
  • Pour into prepared baking dish, bake in preheated oven until just cooked through, about 30 minutes.
  • Meanwhile in a medium mixing bowl stir together melted butter, milk, vanilla, brown sugar, coconut, and pecans.
  • Remove cake from oven once cooked through and pour and spread mixture evenly over top.
  • Preheat oven to broil then return cake to oven (in center) and broil until mixture is bubbly and coconut is just starting to toast on ends, about 1 - 2 minutes (don't walk away from it while broiling!).
  • Let cool on a wire rack for at least 20 minutes then cut into slices and serve.

Steps:

  • Generously grease a 9x9x2-inch baking pan. In a small bowl, combine 1/2 cup honey, 1/3 cup melted butter, corn syrup, lemon peel and lemon juice. Stir in 1/2 cup chopped pecans. Pour into prepared pan; set aside.

2 c flour
1/8 tsp salt
1 1/2 tsp cinnamon
1 tsp allspice
1 tsp baking soda
1 c sugar
1/2 c dark brown sugar
1 c vegetable oil
1 c buttermilk
3 eggs
1 c pecans, in pieces
1 1/2 c coconut, flaked
1 c oatmeal, uncooked
1/2 c dates, finely chopped
TOPPING:
3/4 c buttermilk
1/2 c sugar
1/4 c dark brown sugar
2 Tbsp dark corn syrup (karo)
1 tsp baking soda
1 tsp vanilla
1/2 stick oleo or butter

Steps:

  • 1. Combine flour and other dry ingredients in a large mixing bowl. Add oil, buttermilk, eggs and sugars. Beat until smooth. Stir in the nuts, oatmeal, coconut and dates. Pour into a greased and floured 10" tube pan. Bake at 350 degrees for 1 hour.
  • 2. Topping: In medium sauce pan combine topping ingredients. Cook until the mixture comes to a rolling boil and becomes bubbly. Remove cake from oven when done and immediately pour mixture over the cake. Do not remove from the pan until cake is cool.
