MOIST DATE CAKE
This cake becomes more moist each day that it is covered. This recipe was my Grandmother's and we always had this cake at Christmas. I know the recipe is at least 60 years old.

Steps:
- Preheat oven to 350 degrees F (175 C). Grease and flour two 8 inch round cake pans. Set aside. Put dates in a bowl with soda and pour boiling water on top. Set a side.
- In a large mixing bowl, mix together 1 cup sugar, 2 1/2 cups flour and 1 cup chopped walnuts. Add egg, 1 teaspoon vanilla, pinch of salt and tablespoon butter. Mix to combine. Finally, stir in chopped dates with liquid. Mix well. Pour batter into prepared pans.
- Bake for 25 to 30 minutes. Cake will pull away from sides of pans and be golden brown.
- In a medium saucepan, combine buttermilk, 1 cup sugar, pinch of salt and 4 tablespoons flour. Cook on medium heat until thickened. Stir in 1 teaspoon vanilla and remaining cup of walnuts.
- Spread mixture between layers and on top of cake. Let filling run down the sides of cake.

BUTTERMILK DATE CAKE
My mother used to call this inch cake since it is so rich, you could only eat a inch at a time! Moist, rich, luscious! Perfect to take to a casual affair since it is left in the dish it is cooked in. I have never had anybody say they didn't love it. This recipe came from the Austin, TX Junior League Cookbook. Enjoy!

Steps:
- Sprinkle dates with soda; cover with boiling water and let stand for 30 minutes.
- Cream shortening and sugar until light.
- Add vanilla and egg; beat well.
- Sift flour and salt together.
- Add flour mixture and date mixture alternately to creamed mixture, beating well after each addition.
- Stir in pecans.
- Pour into greased and lightly floured 9 x 13 inch baking dish.
- Bake 350 degrees for 30 minutes.
- Let cool in dish.
- ICING.
- Over Medium heat.
- Melt butter; stir in flour; slowly stir in buttermilk; simmer, sitrring until slightly thickened.
- Add sugar and continue cooking until sugar is dissolved.
- Stir in pecans and vanilla.
- Spread on cake while cake is still warm.
- May be frozen after completely cooled.
BUTTERMILK POUND CAKE
Now that I've retired from teaching, I have more time to bake. This buttermilk pound cake is the one I make most often. - In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Combine flour and baking soda; add alternately with buttermilk and beat well. , Pour into a greased and floured 10-in. fluted tube pan. Bake at 325° until a toothpick inserted in the center comes out clean, about 70 minutes. Cool in pan for 15 minutes before removing to a wire rack to cool completely. Dust with confectioners' sugar if desired.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking dish.
- Combine flour, sugar, baking powder, and baking soda in a large bowl. Cut butter into flour mixture until mixture resembles coarse crumbs. Reserve about 1 cup butter crumbs.
- Stir buttermilk, eggs, and vanilla extract into remaining crumbs until batter is just combined; pour batter into prepared baking dish. Sprinkle reserved butter crumbs over batter.

- 1. Beat together first 5 ingredients til mixture is blended. Add flour, baking powder, baking soda and salt all at once. Beat til blended. Don't overbeat. Stir in dates, walnuts and orange peel.
- 2. Divide batter between 2 greased 6 1/2 x 3 1/2 inch loaf pans. Place pans on cookie sheet and bake at 350 for 30 to 35 minutes or til a cake tester, inserted in center comes out clean. Allow to cool in pan for 10 minutes, remove loaves from pan and continue cooling on rack. Brush tops lightly with creamy orange glaze. Makes 2 loaves

LEMON & BUTTERMILK POUND CAKE

- Heat oven to 180C/160C fan/gas 4. Butter and flour a loaf tin measuring 22 x 11 x 7cm. Sift the flour with a pinch of salt, bicarbonate of soda and baking powder. Beat the butter and sugar until pale and fluffy, then add the lemon zest. Gradually add the eggs a little at a time, beating well after each addition. Mix the buttermilk with the lemon juice. Fold the flour mixture into the batter, alternating with the buttermilk and lemon mixture.
- Scrape the batter into the loaf tin and bake for 40-45 mins, or until a skewer inserted into the centre of the cake comes out clean. Leave to sit for 10 mins, then turn out onto a wire cooling rack with a tray underneath it. Set the cake the right way up.
- To make the syrup, put the ingredients in a small saucepan and heat until the sugar has dissolved. Pierce the cake all over with a skewer then, while the cake is still warm, pour the syrup over slowly. Leave to cool.
- Gradually add the lemon juice to the icing sugar and mix until just smooth. If runny, put in the fridge for about 10 mins - you don't want it to set, you just want it become a little firmer. Pour or spread the icing over the cake (the bits that drizzle down the side will be caught by the tray under the cooling rack). This icing won't set hard, but do leave it to set a little before serving.

- Preheat oven to 350 degrees. Grease two 9-inch cake pans and set aside. Sift together the cake flour, baking powder, baking soda and salt; set aside. In a small bowl, whisk together the eggs and vanilla.
- Using a mixer on medium speed, beat the butter until creamy. Over the course of 3 minutes, beat in the sugar. Over 2 minutes, add the egg mixture. Reduce the speed to low and alternate adding the flour and buttermilk in three parts, scraping the bowl.
- Divide the batter between the pans and smooth the tops. Bake until light golden brown and a toothpick inserted in the center comes out clean, 25 to 30 minutes. Cool for 10 minutes, then unmold onto a rack to cool completely before frosting.
- To frost cake, place 1 layer on a cake plate, rounded side down, trimming if necessary so it lies flat. Spread with a third of the frosting, top with the second layer and frost the remainder of the cake.
