CHOCOLATE BUTTERMILK SQUARES

- In a large saucepan, bring butter, cocoa and water just to a boil. Cool. , Meanwhile, preheat oven to 350°. In a large bowl, combine the flour, sugar, baking soda and salt. Add cocoa mixture and buttermilk; mix well. Beat in the eggs, vanilla and, if desired, food coloring. Pour into a greased and floured 15x10x1-in. baking pan. , Bake until set, 20 minutes. For frosting, melt butter with cocoa and buttermilk. Stir in the confectioners' sugar, vanilla and salt. Spread over warm cake. Garnish with nuts if desired.

One of my absolute favorite treats when I was a child. They have a maple flavor to them and are best enjoyed with a glass of cold iced tea.

- Cream 1/2 cup butter, 1 cup brown sugar and 1 tsp vanilla.
- Add egg, beat well.
- Sift flour and baking soda together and add alternately with buttermilk to egg mixture.
- Add nuts.
- Bake 20-25 minutes at 350 in a 9x13 pan.
- For the topping: Bring topping ingredients to a boil (1/4 cup butter, 1/4 cup sugar, 1/4 cup brown sugar, 1/8 cup milk and 1/2 tsp vanilla). Boil 2 minutes. Add 1 cup powdered sugar and mix well.
- Spread on cooled bars.

- Preheat oven to 350°F Beat butter and sugar in a large bowl at medium speed until creamy. Add flour and salt; mix on low until blended. Spread evenly in bottom of greased 8"x8" baking pan. Bake 15 to 20 minutes until crust is golden.
- For filling: Beat eggs and sugar in bowl at medium speed. Add in butter, corn syrup, flour, buttermilk, vanilla, and lemon peel, if using; beat until smooth. Pour filling over baked crust.
- Bake 20-25 minutes until edges just begin to brown and filling is set. Cool completely. Sprinkle with powdered sugar and cut into 12 bars.

BUTTERMILK CINNAMON BARS
These are from Sally Grosserode. Very old recipe. They have coconut and nuts too. I have made this recipe. It is wicked good. The batter is loose when you put it over the pressed mixture. It is very rich, almost candy bar like. Try this recipe; you will like it.

Steps:
- Cream butter, sugar and brown sugar.
- Add flour. Divide in 1/2.
- To the first half add nuts and coconut.
- Press into the bottom of a 9x13 pan; set aside.
- Combine egg, salt, cinnamon, baking powder, buttermilk, and vanilla.
- Spread over first layer.
- Bake in 350 degree Fahrenheit oven for 45 minutes.
- While still warm frost with thin icing.

- Make the donuts: Place 4 tablespoons unsalted butter in a small microwave-safe bowl. Microwave on HIGH until melted. Set aside to cool slightly.
- Place 3 1/2 cups cake flour, 2 3/4 teaspoons baking powder, 1/4 teaspoon baking soda, 1 1/2 teaspoons kosher salt and 3/4 teaspoon ground nutmeg in a medium bowl and whisk to combine.
