This tender spritz cookie recipe is very eye-catching on my Christmas cookie tray. The dough is easy to work with, so it's fun to make these spritz cookies into a variety of festive shapes. This is hands down the best spritz cookie recipe ever. -Beverly Launius, Sandwich, Illinois

Ingredients

1 cup butter, softened
2-1/4 cups confectioners' sugar, divided
1/2 teaspoon salt
1 large egg, room temperature
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2-1/2 cups all-purpose flour
Melted semisweet chocolate, optional
2 to 3 tablespoons water
Colored sugar and sprinkles

Steps:

Preheat oven to 375°. In a large bowl, cream butter, 1-1/4 cups confectioners' sugar and salt until light and fluffy, 5-7 minutes. Beat in egg and extracts. Gradually beat flour into creamed mixture., Using a cookie press fitted with a disk of your choice, press dough 2 in. apart onto ungreased baking sheets. Bake until set, 6-8 minutes (do not brown). Remove to wire racks to cool completely., If desired, dip in melted chocolate and let stand until set or, in a small bowl, mix remaining 1 cup confectioners' sugar and enough water to reach desired consistency. Dip cookies in glaze; decorate as desired. Let stand until set.

2 cups butter, softened
1-1/4 cups sugar
2 large eggs
Grated zest of 1 lemon
2 teaspoons lemon juice
1 teaspoon vanilla extract
5-1/4 cups all-purpose flour
1/4 teaspoon salt
Colored sugar

Steps:

In a large bowl, cream butter and sugar until light and fluffy. Beat in the eggs, lemon zest, lemon juice and vanilla. Combine flour and salt; gradually add to creamed mixture and mix well. , Using a cookie press fitted with the disk of your choice, press dough 1 in. apart onto ungreased baking sheets. Sprinkle with colored sugar. , Bake at 350° for 8-10 minutes or until lightly brown around the edges.

These are wonderful cookies from the press. They are rich in flavor. My mom has made these cookies for years for all of the holidays. She even used food coloring for the different designs, like green trees, etc.The kids love to decorate them as much as they love to eat them.

Ingredients

2 ½ cups all-purpose flour
½ teaspoon salt
1 cup butter, softened
1 ¼ cups confectioners' sugar
2 egg yolks
½ teaspoon almond extract
1 teaspoon vanilla extract

Steps:

Preheat the oven to 400 degrees F (200 degrees C). Sift together the flour and salt; set aside.
In a medium bowl, cream together the butter and sugar. Stir in the egg yolks, almond extract and vanilla extract. Gradually blend in the sifted ingredients. Fill a cookie press with dough and shoot cookies about 1 1/2 inches apart onto an ungreased cookie sheet. If you like, decorate with sugar or sprinkles at this time.
Bake for 6 to 8 minutes in the preheated oven.

1 cup butter
1 large egg
2 1/4 cups all-purpose flour, sifted
1/2 cup sugar
1/2 teaspoon almond extract
red food coloring
green food coloring

Steps:

Cream butter; Add sugar and beat until fluffy.
Beat in egg and almond extract. Blend in flour.
Divide dough into thirds.
Add a few drops red food coloring to 1/3, green coloring to 1/3 and leave 1/3 plain.
Fill cookie press with each color or combine colors for a rainbow effect. Form into desired shapes and decorate. Bake at 350° for 8-10 minutes.
Makes about 4 dozen.

Arrange racks in upper and lower thirds of oven; preheat to 350°. Whisk flour, salt, and baking powder in a medium bowl.
Using an electric mixer on medium-high speed, beat butter and sugar in a large bowl, scraping down sides occasionally, until pale and very fluffy, about 5 minutes. Add egg and vanilla and continue to beat, scraping down sides once or twice, until mixture is nearly doubled in volume, about 5 minutes more. Reduce mixer speed to low and add dry ingredients. Beat until partly incorporated, then switch to a large spoon and mix until well combined.
Divide dough among 3 bowls and add a different food coloring to each, if desired, until you achieve the desired hue. Portion cookies with spritz cookie press according to manufacturer’s instructions on 3 unlined, ungreased baking sheets.
Bake cookies, rotating sheets halfway through, until golden brown and set around the edges, 8–10 minutes. Let cool. Do Ahead: Cookies can be made 2 months ahead; store airtight and freeze.
