BEST FRESH TOMATO SALSA RECIPE
This super easy and fresh tomato salsa recipe is so good and can be ready in 10 minutes or less. Made with sweet vibrant tomatoes blended with herby, clean cilantro, crunchy red onion, spicy chilies, honey, salt and pepper. Healthy, light and the perfect dip with tortilla chips or topping on eggs, chicken or fish. A super simple vegan and gluten free recipe!

Steps:
- Prep the tomatoes. If you are using tomatoes that have seeds then you will want to remove them. If you are using cherry tomatoes then you do not need to remove the seeds. To clean tomatoes all you need to do is slice each one in half, lengthwise, trim off the end and scrape the seeds out with a spoon. Then simply slice them.
- Blend the salsa. Add the chopped tomatoes, red onion, green chilies, cilantro, garlic, honey, salt and pepper to the bowl of a food processor or high speed blender and blend on high until desired consistency is achieved. I like my salsa chunky so I blended it for about 15 seconds.
- Serve. Pour the salsa into a bowl and serve it with your favorite tortilla chips.

- Place your tomatoes into a food processor and pulse 6-8 times, or until they reach a good salsa consistency. Depending on the size of your food processor you might have to do this in 2 batches. Transfer to a bowl once processed.
- Add the chopped up green pepper and onion into the bowl with the tomatoes.
- Add cilantro, lime juice, salt, pepper and red pepper flakes into the bowl and mix until everything is combined.
- Serve with tortilla chips or on top of your favorite Mexican meal!

- Heat a small ungreased cast-iron skillet over high heat. With a small sharp knife, pierce jalapenos; add to hot skillet. Cook for 15-20 minutes or until peppers are blistered and blackened, turning occasionally., Immediately place jalapenos in a small bowl; cover and let stand for 20 minutes. - Combine tomatoes, onions, vinegar, tomato paste, green bell peppers, red bell peppers, banana peppers, sugar, garlic, pickling salt, and black pepper in a large stockpot; bring to a boil, reduce heat to medium-low, and simmer for 30 minutes. Mix cilantro into salsa.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack salsa into hot, sterilized jars, filling to within 1/4 inch of the top. Run a knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 35 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.
