The combo of brie and apples or pears is heavenly, IMO. So, here is that combo on a burger. Tell me what you think! (Ground turkey would be excellent for this)

1 lb ground beef
1/2 teaspoon salt
1/2 teaspoon black pepper
4 slices brie cheese
1 granny smith apple, cored and thinly sliced
4 tablespoons honey mustard
4 crusty rolls

Steps:

  • Combine the ground beef, salt and pepper in a bowl.
  • Form into 4 patties, 3/4-inch thick.
  • Heat grill to medium heat.
  • Place patties on the grill and cook for 10-15 min, turning two or three times during cooking.
  • During the last 2 min of grilling, top each patty with a slice of brie and allow to melt.
  • Remove from the grill.
  • Place a patty on the bottom half of each roll and top with a slice or two of apple.
  • Spread a Tbs of honey mustard on the top half of each roll and place on burger.
  • Serve.

12 ounces frozen French fries
1 tablespoon plus 1 teaspoon Dijon mustard
2 teaspoons white wine vinegar or champagne vinegar
1 small shallot, minced
1 tablespoon plus 2 teaspoons vegetable oil
1 1/2 pounds ground beef
1 tablespoon Worcestershire sauce
Kosher salt and freshly ground pepper
6 ounces brie cheese, cut into 8 thin slices
4 brioche buns, split
1 small bunch watercress, tough stems trimmed
Cornichons and ketchup, for serving

Steps:

  • Bake the fries as the label directs. Meanwhile, whisk 1 teaspoon mustard, the vinegar, half the minced shallot and 2 teaspoons vegetable oil in a large bowl; set aside.
  • Combine the beef, remaining minced shallot, remaining 1 tablespoon mustard, the Worcestershire sauce, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl. Form into four 4-inch patties (about 3/4 inch thick). Heat the remaining 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add the patties and cook until browned, 3 to 4 minutes per side for medium rare; top each with 2 slices brie during the last 2 minutes of cooking and cover to melt.
  • Toast the buns. Add the watercress to the bowl with the dressing, season lightly with salt and pepper and toss to coat. Put the burgers on the buns and top with the watercress salad. Serve with the fries, cornichons and ketchup.

1/4 cup Burgundy wine or 1/4 cup red wine
1/4 cup onion, Finely Chopped, 1 sm.
1 tablespoon Worcestershire sauce
1 teaspoon seasoning salt
1/4 teaspoon pepper
1/8 teaspoon garlic salt

Steps:

  • Mix all the ingredients together.
  • Shape mixture into 6 patties, each about 3/4-inch thick.
  • Broil or grill the patties 4-inches from the heat, turning once, to the desired doneness, about 10 to 15 minutes.
  • Nice served on toasted buns with a favorite topping.

I know it is not the time of year for BBQing but I had my niece over last night and she loves her hamburgers, so I made beef and chicken burgers.

850 g mince meat
1 onion, finely chopped
3 garlic cloves, crushed
50 ml tomato puree
1 1/2 tablespoons italian mixed herbs
1 tablespoon parsley
60 ml tomato ketchup
3 teaspoons Dijon mustard
1 cup parmesan cheese
1 large egg (or 2 medium eggs)
3/4 cup panko breadcrumbs, flakes (Japanese breadcrumbs available at most Asian grocery stores, regular are fine but you probably need )

Steps:

  • Mix all the ingredients in a large bowl until thoroughly combined.
  • Shape into patties, it will make 6 large burgers and about 8 smaller ones.
  • Heat a small amount of oil in a pan and cook until well browned on each side and meat is cooked through.
  • Serve on buns with your favourite condiments.

  • Heat 1 tbsp of the oil in a large frying pan over a low heat. Add the onion and garlic and cook for 5 minutes to soften, then transfer to a large bowl using a slotted spoon. Increase the heat, add the bacon and fry until starting to crisp. Add to the onion and allow to cool.
  • Add the beef mince to the bowl, together with the parsley, mustard, some seasoning and enough egg to bind. With damp hands, form the mixture into 4 burgers, place on a plate lined with baking paper, then chill in the fridge for 15 minutes.
  • Preheat the grill to medium-high. Heat the remaining oil in a frying pan and cook the burgers over a medium heat for 5-6 minutes on each side. Remove to a baking sheet, top with the Brie and grill for 2-3 minutes until melted. Drizzle the cut sides of the rolls with a little oil and grill alongside the burgers until golden.
  • Serve each burger in a toasted bun with peppery rocket, tomato slices and a dollop of mayonnaise.
