2 slices sourdough bread
1 tablespoon mayonnaise
1 large egg
1 slice cheddar cheese
2 cooked bacon strips

Steps:

  • Using a biscuit cutter or round cookie cutter, cut out center of 1 slice of bread (discard center or save for another use). Spread mayonnaise on 1 side of bread slices. In a large skillet coated with cooking spray, lightly toast cutout slice, mayonnaise side down, over medium-low heat. Flip slice; crack an egg into center. Add remaining bread slice mayonnaise side down, to skillet; layer with cheese and bacon. , Cook, covered, until egg white is set, yolk is soft-set and cheese begins to melt. If needed, flip slice with egg to finish cooking. To assemble sandwich, use solid slice as bottom and cutout slice as top.

6 slices thick-cut peppered bacon
1/4 cup mayonnaise
Jalapeño-style hot sauce, as needed
Kosher salt and freshly ground black pepper
4 slices Texas toast
4 tablespoons salted butter
4 large eggs
4 slices pepper jack cheese
1 small tomato, sliced
Green leaf lettuce, for topping

Steps:

  • In a large cast-iron skillet over medium heat, cook the bacon until crisp, 12 to 14 minutes. Remove to a plate and set aside. Drain the grease from the skillet but do not clean. When cool enough to handle, tear the bacon slices in half.
  • Meanwhile, mix the mayonnaise and hot sauce to taste in a small bowl. Season with salt and pepper.
  • Using a biscuit cutter or the rim of a glass, cut a hole in the center of each Texas toast slice.
  • Melt 2 tablespoons of the butter in the bacon skillet and add 2 of the Texas toast slices. Toast the bread slightly, 1 to 2 minutes. Crack an egg into the hole in each piece of toast and sprinkle the eggs with salt and pepper. Cook the eggs until set on the bottom, 2 to 3 minutes. Using a spatula, carefully flip the toast with the egg, season the other side and spread with the mayonnaise mixture. Top each with a slice of cheese to slightly melt and cook until the egg is the desired doneness. Remove to a cutting board and repeat with the remaining butter, toast, eggs, mayo mixture and cheese.
  • To build the sandwiches, divide the bacon between 2 of the egg-in-a-hole toast pieces, on top of the cheese. Top each with some tomato slices and lettuce, then top with a remaining egg-in-a-hole toast piece. Serve immediately or wrap in foil to keep warm.

4 eggs
8 slices whole wheat bread (or favourite sandwich bread)
4 slices light process cheddar cheese (or your favourite cheese)
green peppers or frozen peas
red peppers or purple onion
fresh chives or green onion
margarine, as needed

Steps:

  • Preheat oven to 400°F.
  • Cut a hole in the centre of 4 slices of bread using a 3-1/2 inch egg shaped cookie cutter (a circular cookie cutter will also work); set the inner "hole" aside.
  • Butter remaining 4 bread slices and place butter side down on baking sheet.
  • Top each with a cheese slice and a piece of bread with a hole in it; break one egg into each hole.
  • Top eggs with 2 frozen peas or green pepper for eyes, a red pepper triangle for the nose, and chives for whiskers (this decorating also works after baking, if desired).
  • Bake 15 minutes or until the cheese has melted and the egg is set but slightly runny. Check frequently as the eggs set quickly.
  • Remove from oven, cut the bread "hole" in half to use as bunny ears (you may stick these on with a bit of cream cheese or spread cheese, if desired).
  • TIP: toast bunny ears during the last 5 minutes that the egg is cooking.

2 slices white bread
1 tablespoon mayonnaise
1 slice American cheese
1 slice pepper Jack or Monterey Jack cheese with peppers
1 large egg
1 tablespoon unsalted butter
Kosher salt and freshly ground black pepper

Steps:

  • Spread 1 side of each slice of bread with mayonnaise. Top 1 slice with American cheese and the other with pepper Jack, then sandwich them together. Cut the center out of the sandwich with a 2 1/2-inch ring mold.
  • Crack the egg into a small bowl.
  • Melt the butter in a medium nonstick skillet over medium-low heat, and swirl to coat the bottom. Arrange the inner and outer parts of the sandwich in the skillet, and cook until golden brown on the bottom, 4 to 5 minutes. Turn each over, pour the egg into the hole, sprinkle with salt and pepper and cook until the bottoms of the bread are golden brown, the egg whites are set and the yolk is still runny, 4 to 5 minutes. For the last minute of cooking, cover the pan with a lid to cook the egg white completely through. (The sandwich round may finish cooking faster.) Transfer the sandwich with the egg to a serving plate along with the sandwich round, to dip into the egg yolk.

4 rashers smoked streaky bacon
2 thick slices sourdough
1 tbsp mayonnaise
1 small egg
1 tbsp ketchup or brown sauce, to serve

Steps:

  • Heat a splash of oil in a large, non-stick frying pan. Fry the bacon until crispy, then put on a plate covered with foil to keep warm.
  • Using a cookie cutter, cut a hole in 1 slice of bread, then spread mayonnaise on one side of both slices. Fry the bread in the same pan. When browned on one side, flip both over and crack the egg into the hole. Fry for 2-3 mins, then turn down the heat and cover the pan until the white of the egg is set but the yolk is still runny. Remove everything from the pan.
  • Spread the non-egg slice with the sauce, add the bacon, then top with the egg slice. Halve and tuck in.

1 box Betty Crocker™ Super Moist™ Yellow or White Cake Mix
Water, vegetable oil and eggs called for on cake mix box
Tray or cardboard covered with wrapping paper and plastic food wrap or foil
1 container Betty Crocker™ Rich & Creamy Vanilla Frosting
Red food color
1 large marshmallow, cut in half
3 cups shredded coconut
Green food color
2 strawberry or cherry stretchy and tangy taffy candies (from 6-oz bag)
1 roll Betty Crocker™ Fruit Roll-Ups™ Punch Berry Chewy Fruit Snack (from 5-oz box)
3 green-colored sour candies, separated into strips
Construction paper

Steps:

  • Heat oven to 325°F. Grease 1 1/2-quart ovenproof bowl (8 inches across top) with shortening; coat with flour (do not use cooking spray). Lightly grease 3 muffin cups in regular-size muffin pan.
  • Make cake batter as directed on box. Pour cake batter in 3 muffin cups, filling two-thirds full. Pour remaining batter into 1 1/2-quart bowl.
  • Bake cupcakes 17 to 21 minutes, bowl 47 to 53 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove cakes from muffin cups and bowl; place rounded sides up on cooling racks. Cool completely, about 1 hour. If necessary, cut off rounded tops of cakes.
  • Spoon frosting into large bowl. Add red food color to make desired pink color. Place bowl cake on tray cut side down; spread 1/3 cup frosting over cake. Use frosting to adhere cupcakes to bowl cake for feet and bunny tail. Use toothpicks if necessary. Place marshmallow halves, cut sides down, on tops of 2 cupcakes to make heels of feet. Spread thin layer of frosting over side and top of cake to seal in crumbs. Freeze cake 30 to 45 minutes to set frosting.
  • Spread remaining frosting over cake. Sprinkle with 2 cups of the coconut; press gently to adhere. Shake 1 cup coconut and 3 drops green food color in tightly covered jar until evenly tinted. Surround bunny with tinted coconut. Use rolling pin to press strawberry candies into 2 large rectangles. Cut 2 large ovals and 6 small circles out of candy. Press onto bottoms of bunny feet, using frosting if needed.
  • Roll up fruit snack to make carrot shapes. Cut green sour candies in half crosswise; press into large end of each carrot to make greens on carrot. Cut ears from construction paper; wrap ends that will be inserted into cake with plastic food wrap. Insert into cake. Remove ears, plastic wrap and toothpicks before serving. Store loosely covered.

4 (3/4"-thick) slices sourdough or other country-style bread
4 large eggs
Kosher salt, freshly ground pepper
2 tablespoons unsalted butter, divided
4 slices cheddar

Steps:

  • Cook bacon in a large skillet over medium heat, turning halfway through, until browned and crisp, 8-10 minutes.
  • Meanwhile, use cutter to punch out a circle in the center of each piece of bread (save for snacking, now or later).
  • Transfer bacon to a cutting board; cut in half crosswise. Carefully pour half of bacon drippings into a small bowl. Place 2 slices of bread in skillet and cook over medium-high until bottom sides are golden brown, about 3 minutes.
  • Crack an egg into each hole in bread (some of the white may pool on top of the bread). Season eggs with salt and pepper and cook until underside is set, about 2 minutes. Using a thin spatula (a fish spatula works best), carefully turn both pieces of bread to briefly cook second side (this helps set the whites, but the yolk should still be runny), about 1 minute. Add 1 Tbsp. butter to skillet and swirl skillet to distribute, encouraging some to get underneath. Carefully turn bread again. Top one slice with half of the cheese. Remove pan from heat and let sit about 1 minute to soften cheese. Top with half of bacon and some hot sauce. Close up sandwich and transfer to a plate. Repeat process with remaining bacon drippings, bread, eggs, butter, bacon, and cheese and more hot sauce to make another sandwich.
