GARLIC BUTTER STEAK BITES



Garlic Butter Steak Bites image

These seared Garlic Butter Steak Bites pack so much flavor and are so easy to throw together! The best part? They're ready in 15 minutes!

1 tablespoon olive oil
1 ½ pound sirloin steak (cut into bite size pieces, or strip loin, tenderloin, strip steak or rib eye)
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
2 tablespoon butter (unsalted)
4 cloves garlic (minced)
¼ teaspoon red pepper flakes
1 tablespoon parsley (fresh, chopped)

Steps:

  • Add the olive oil to a large skillet and heat it over high heat. Make sure the olive oil is hot, then add the steak pieces to it. Season them generously with salt and pepper.
  • Cook for at least 2 minutes before stirring the steak pieces. You want to make sure you get a good sear on them. Continue cooking for another 2 minutes until they're golden brown. If your skillet isn't big enough, you may need to do this batches.
  • Transfer the steak bites to a plate and in the same skillet add the butter. Turn the heat down to a medium and after the butter has melted, add the garlic and red pepper flakes. Cook for about 30 seconds while stirring, just until the garlic becomes aromatic and starts to brown.
  • Pour the garlic butter over the steak bites and toss well. Garnish with parsley and serve.

Today I'll show you how to make my gourmet Steak Bites, which are actually about as UN-gourmet as it gets.

1 lb. Sirloin Steak (without Much Gristle) Or Pre-cut Beef Tips
Kosher Salt To Taste
Fresh Ground Black Pepper To Taste
2 tbsp. Butter

Steps:

  • Trim off the large obvious piece of fat that runs along the side of the meat. Next, cut strips less than 1-inch wide. Rotate the meat and cut into small bite-sized pieces. If you see any more large chunks of fat, gristle or long silvery membrane, cut them off.Sprinkle generously with kosher salt and freshly ground pepper. Toss the meat around a bit to thoroughly coat with the seasonings. Next, turn on your ventilation fan overhead. Heat the skillet over medium high to high heat. As the pan heats, add about 2 tablespoons butter to the skillet. Allow the butter to melt, then brown, before you add the meat.Place some of the meat in the pan in a single layer. It should sizzle loudly when it hits the pan - if it doesn't, the pan isn't hot enough. Don't stir or disrupt the meat for 30-45 seconds. You want it to sizzle and brown on one side. Scoop as many steak bites as you can with your spatula and flip them over. Repeat until all the meat is turned. Cook for an additional 30 to 45 seconds-just long enough to sear the outside of the meat but NOT cook the inside.Remove the meat to a clean plate. Add a little more butter to the pan and repeat the cooking process with the next batch just as before. Lastly, when all the meat is nicely browned and removed to the plate, pour all that browned/blackened butter all over the meat. And enjoy!

4 ounces bacon, chopped
3 tablespoons panko breadcrumbs
1 tablespoon freshly grated Parmesan
1 teaspoon mayonnaise
1/2 teaspoon lemon juice
Pinch kosher salt
1/2 heart of romaine lettuce, shredded
6 to 8 cocktail or Campari tomatoes

Steps:

  • Place the bacon in a small skillet; heat over medium heat until beginning to sizzle. Reduce the heat to medium low; cook until crisp and golden brown, about 8 minutes. With a slotted spoon, remove the bacon to a paper towel-lined plate, leaving the fat in the pan.
  • Add the breadcrumbs to the hot bacon fat; cook, stirring often, until lightly toasted and crunchy, about 3 minutes. Remove the breadcrumbs to a separate paper towel-lined plate, spread evenly, and then sprinkle with the Parmesan to melt slightly.
  • With a rubber spatula, mix together the mayonnaise, lemon juice and salt in a bowl. Add the shredded romaine; toss well to coat.
  • Cut a small amount off the bottom of each tomato to create a flat surface to sit on. Then cut off the tops as well. Run a small knife around the inside of the tomatoes to loosen the flesh. Using a 1/2-teaspoon measuring spoon, scoop out and discard the insides of each tomato.
  • Divide the bacon among the tomatoes, pushing it down slightly. Top with some of the romaine, followed by the bacon-parmesan breadcrumbs. Serve at room temperature.

COPYCAT STARBUCKS EGG BITES



Copycat Starbucks Egg Bites image

You can substitute Gruyere cheese for the Swiss and ham for the bacon, or add in small-cut veggies to these copycat Starbucks egg bites. 1/4 cup 4% cottage cheese
1/4 teaspoon salt

  • Arrange an oven rack at the lowest rack setting; place a second rack in middle of oven. Place an oven-safe skillet on bottom oven rack; preheat oven and skillet to 300°. Meanwhile, in a small saucepan, bring 2 cups water to a boil., In a blender, puree first 4 ingredients until smooth, about 20 seconds. Line 6 muffin cups with foil liners. Divide the Swiss cheese and bacon among the muffin cups. Pour egg mixture over top. , Wearing oven mitts, place muffin tin on top rack. Pull bottom rack out by 6-8 in.; add boiling water to skillet. (Work quickly and carefully, pouring water away from you. Don't worry if some water is left in the saucepan.) Carefully slide bottom rack back into place; quickly close door to trap steam in oven., Bake until eggs puff and are cooked to desired degree of doneness, 25-30 minutes. Serve immediately.

BLACKENED STEAK BITES WITH BLUE CHEESE SAUCE

This recipe is similar to an appetizer served at my favorite Italian restaurant. It is a nice change from the usual appetizers and always gets rave reviews! I have used tenderloin in the past, but have found that a good quality top sirloin works very well and is less expensive. Bernaise sauce is a good alternative if you don't like blue cheese.

1 ½ pounds beef top sirloin, trimmed and cut into bite-size pieces
2 tablespoons blackened seasoning (such as Chef Paul Prudhomme's® Blackened Steak Magic®), or more to taste
2 tablespoons vegetable oil
1 (3 ounce) package cream cheese
3 tablespoons evaporated milk
8 ounces blue cheese crumbles
½ teaspoon garlic powder
¼ teaspoon ground white pepper
¼ teaspoon cayenne pepper

Steps:

  • Season sirloin with blackened seasoning to coat on all sides.
  • Heat oil in a cast-iron skillet on an outdoor grill until the oil is smoking. Cook steak bites in hot oil in small batches, reheating oil between batches, until slightly crusty, 1 to 2 minutes per side.
  • Stir cream cheese and evaporated milk together in a saucepan over low heat to melt the cream cheese. Whisk blue cheese crumbles, garlic powder, white pepper, and cayenne pepper into the cream cheese mixture; simmer, stirring frequently, until the blue cheese melts into a smooth sauce, 2 to 3 minutes. Serve blue cheese sauce with the beef bites.

8 ounces tenderloin tips
1/4 cup Cajun spice
2 ounces butter
1 Roma tomato diced
2 ounces Bernaise sauce
2 ounces Horseradish sauce
1/2 an onion sliced thin
1 cup of flour
1 tablespoon black pepper
1 tablespoon kosar salt
1 cup buttermilk
2 tablespoons cooking oil

Steps:

  • Heat the butter in a cast iron skillet. Heat the cooking oil in another sauté pan. Slice the onion into thin rings, marinate in the buttermilk. Mix the flour, salt, pepper Slice the tenderloin into bite sized pieces and cover in Cajun spice. Remove the onion from the buttermilk and dredge in the flour. Place the floured onion in the hot oil and cook till crispy. Place the tenderloin tips in the cast iron skillet and turn every few seconds till browned and medium rare. On a plate first place the fried onions then the tender tips on top of the onion. Finally dice 1 Roma tomato and place on top of tips. Serve with 2 ounces of Horseradish and Bernaise sauce.
