GROUND BEEF AND CABBAGE
My mother was a country cook, plain and simple. But as I have traveled and worked and experienced foods from around the world, I look back and realize that many of the dishes she prepared, while simple, were perfect for that moment. Sometimes we have to put emotion and love in a dish to make it extra-special. The dish I am going to give you today is one like that. Simple and easy, yet full of love and goodness. Steps:
- Combine cabbage, tomatoes with juice, onion, Italian seasoning, salt, and black pepper in a large pot over low heat. Bring cabbage mixture to a simmer and crumble ground beef into the pot. Cover and cook until cabbage is tender and ground beef is cooked through, about 45 minutes. Stir occasionally.

BULGUR AND GROUND BEEF CASSEROLE
I found this in a book from the American Heart Assoc. Haven't prepared it yet, but I plan to as it sounds good.

Steps:
- In a medium bowl, soak bulgur in cold water for 15 to 30 minutes, or until soft. Set aside.
- meanwhile, heat a heavy non-stick skillet over medium-high heat. Add beef and saute for 4 to 5 minutes or until meat is no longer pink. Drain fat from pan.
- Add onions to skillet and cook until tender, 3 to 4 minutes.
- Drain bulgur and add to meat mixture with cilantro, dill weed, salt, pepper, chipped tomatoes, vegetable juice and lemon juice. Stir gently.
- Place mixture in a 10 x 10 x 2 inch baking dish or oven proof casserole dish.
- Bake at 350 uncovered for 15 to 20 minutes or until heated thoroughly.
FRIED CABBAGE WITH BULGUR(MAKMURA)

Steps:
- Place the bulgur in a bowl, cover with boiling water, and stir. Soak for 30 minutes and drain any excess water.
- Meanwhile, wash the cabbage and shred in a food processor.
- Heat the olive oil in a large pan, and fry the onion until golden brown, about 15 minutes. Add the cabbage, cover, and fry over medium low heat for about 15 minutes, stirring frequently. Uncover the pan and cook for 10 more minutes.
- Add the bugur and stir. Add the salt and pepper, cover again, and cook for 15 more minutes. Stir once.
- Serve warm and enjoy. :).

BULGUR WITH CABBAGE AND GROUND MEAT
A popular and hearty stew popular in Turkish cuisine. To make a vegetarian version, omit the meat.

Steps:
- 1. Heat oil in a large pan over medium heat and saute the meat until no longer pink.
- 2. Add onions and chopped cabbage to the pan and cook an additional 4-5 minutes. Stir in the bulgur, tomato paste, and water and combine thoroughly.
- 3. Add the lemon juice, red pepper flakes and dried mint and season with salt and pepper. Bring to a boil and cover - reduce heat to low and cook 15-20 minutes longer or until cooked to your liking.
- 4. Serve hot and sprinkle additional dried mint and red pepper flakes over the top. Add a dollop of plain yogurt by the side.
BULGUR WITH CABBAGE AND GREEN BEANS
Bulgur is delicious with lightly browned onion and cabbage. The green beans add a companionable flavor and texture.

Steps:
- Boil 2 cups water. Pour the water over the bulgur in a heatproof container. Cover and let stand until the water is absorbed, about 30 minutes. Or combine the water and bulgur in a small saucepan and simmer until the water is absorbed, about 15 minutes.
- Heat the oil in a large skillet or stir-fry pan. Add the onion and sauté over medium-low heat until translucent. Layer the cabbage and green beans over the onions, cover, and cook for 5 minutes. Then uncover, turn the heat up to medium-high, and sauté, stirring frequently until all the vegetables are lightly and evenly browned.
- Transfer the cooked bulgur to the skillet and stir it in. Sauté for another 3 to 4 minutes, stirring often. Season with salt and pepper, and serve.

BULGUR STUFFED CABBAGE

Steps:
- Remove core from cabbage, place cabbage head in steamer and steam until all leaves are soft and separate easily.
- Saute parsley, onions, celery, seasoning, and garlic in olive oil until onions are soft.
- Add 2 15-ounce cans of tomato sauce, 4 cups water and bulgur.
- Cook about 1/2 hour over medium heat, stirring occasionally, until bulgur is tender.
- Remove from heat.
- To stuff cabbage leaves, place a spoonful of mixture in center of each leaf.
- Starting at one side, roll leaf up and fold ends under.
- Place in a deep baking pan.
- Mix the 8-ounce can of tomato sauce with 1/2 cup water and pour over stuffed cabbage leaves so they remain moist during baking.
- Bake at 375°F for about 30 minutes until cabbage is hot.
