1/2 cup Bulgar wheat (cracked wheat)
3 tablespoons flax seeds
2 -3 cardamom
2 1/2 cups skim milk (may use up to whole based on preference)
3 teaspoons sugar (more or less to taste)

Steps:

  • Stir bulgar, flaxseed, and cardamom in pot with 1 cup milk.
  • Let cook for about 15 minutes on low heat. Make sure the pot is covered.
  • Check on it, stir, and add about 1/2 cup more milk, and stir.
  • Let cook for another 20 minutes.
  • At this point, mix should be soft to taste. Add sugar and mix.
  • Add about 3/4 cup milk (more or less depending on how thick you want your pudding) and mix.
  • Serve warm.

I made this up based on a doggie biscuit recipe. It makes lots and lots of cookies but they freeze well so keep some in your freezer! Yield is a guess because I forgot to count them before.

1 cup powdered milk
1 cup wheat germ
1/2 cup rolled oats or 1/2 cup porridge oats
1 (100 g) jar berry baby food
1 egg white
water, enough to moisten the mix

Steps:

  • Baby food note: I used Organix's Apple, Strawberry& blueberry compote; it's apple puree, water, blueberry puree, strawberry puree and ground rice.
  • You can change this to make different flavoured cookies- just avoid any baby food that contains leeks, onions, chives, spices, garlic or lemon juice as these ingredients are not good for hamsters.
  • Measure out dry ingredients into a bowl and whisk together.
  • Add in the baby food and about half a jar of water- If you're mixing by hand, rub and press down the mixture with the back of your spoon while mixing.
  • Add egg white and mix to combine.
  • This makes a very thick and solid dough mixture but it will still be sticky.
  • Roll the mixture into tiny little balls about half an inch or so wide and flatten them slightly.
  • Place on a lightly greased baking sheet and bake at 175C (non fan oven) or somewhere inbetween 175 and 150C for a fan oven.
  • These don't take long to bake because they're so small- only bake them until they go a light brown around the outer edges.
  • This took about 8 minutes in my oven (fan oven) to give you an idea of the length of time.
  • Cool then store in an airtight container or in the freezer in a freezer-appropriate container.

Hi, this is an original recipe for pudim de leite, which is a classic Brazilian milk pudding made from condensed milk, fresh milk, and eggs .Totally yummy!

1 cup sugar (for the caramel)
1 (14 ounce) can sweetened condensed milk
14 ounces milk (use the can to measure)
3 eggs

Steps:

  • Place 1 to 2 inches of water in a roasting pan. Place the pan in the oven and preheat to 325°.
  • Put the sugar in the ring mold. Place the mold directly over medium heat. Keep turning the mold until the sugar melts into a golden brown caramel and spoon it up the sides of the mold.
  • Be careful not to burn the sugar and yourself.
  • I use an oven mitt to hold the mold in my left hand and a large spoon for the sugar in my right hand.
  • This way I can keep turning the mold and spooning the sugar. Let the mold cool.
  • Combine the condensed milk, regular milk and eggs in a blender. Whip (I like to use the frappe button in my blender) until smooth.
  • Pour this mixture into the mold and place it in the center of the roasting pan with water.
  • Bake the pudim for about 1 hour. It will turn golden brown on top and start separating from the sides of the mold. Let it cool to room temperature and place in refrigerator, preferably overnight (at least 6 hours).
  • Just before serving, run the tip of a knife around the inside of the mold. Place a deep platter over the mold and invert: the pudim should slide out easily.
  • If not, give the mold a firm but careful shake. Spoon the caramel sauce on top and serve. Serves about 10. Totally yummy!

2 (400 ml) cans coconut milk (or 4 c Coconut Milk)
1 (398 ml) can sweetened condensed milk (398mL=14oz.)
1 cup white sugar (about less than 3/4 c will do fine,but if you want it sweeter use the 1 c)
1 cup fresh milk or 1 cup water
1 cup cornstarch
1 cup drained corn kernel (optional)
flaked coconut or dessicated coconut flakes, toasted

Steps:

  • In a large sauce pan, bring the coconut milk to a soft boil over medium heat.
  • When the coconut milk is starting to boil, add the condensed milk and sugar. Stir the mixture until it is well blended. Let it simmer for about 8-10 minutes.
  • In a separate bowl, mix the fresh milk and cornstarch together. Stir until the milk and cornstarch are well blended.
  • After 8-10 minutes of simmering,slowly add the cornstarch mixture to the coconut milk mixture while continuously stirring the mixture.
  • When it is well blended,add the corn kernels, if desired.
  • Continue to stir the mixture over medium heat until you reach your desired consistency.
  • Pour in to an aluminum tray or any container of your choice. Greasing the container slightly with butter is optional.
  • Top it with coconut flakes.
  • Let it cool for at least an hour before slicing.
