HOMESTYLE MEATLOAF WITH BROWN SUGAR GLAZE

Steps:
- Preheat your oven to 375 degrees.
- Mix the ground beef, salt, pepper, onion, green peppers, egg, oats and diced tomatoes well. You may have to use your hands, but don't overwork the meat. Just until the ingredients are mixed in.
- Form a loaf and place in a baking dish.
- Mix ketchup, brown sugar and mustard together and spread over meatloaf.
- Bake uncovered 1 hour, draining grease away twice by tipping the dish and using a spoon or holding the meatloaf with a spatula and draining straight from the dish.

BROWN SUGAR GLAZED MEATLOAF
Meatloaf is a classic comfort meal and this is a great meatloaf recipe. We liked using a combination of three types of meat (pork, beef, and veal). It gave a wonderful blend of flavors. The brown sugar glaze is what really makes the dish. It makes a lovely sweet crust that's a fantastic contrast to the savory flavors of the meat....

- 1. In a large mixing bowl add ground beef, ground pork and ground veal. Then add 2 raw eggs, black pepper, garlic powder, bread crumbs, Parmesan cheese, 1/2 cup of the divided ketchup and chopped onion.
- 2. Mix with hands until all ingredients are well combined.
- 3. Pre-heat oven to 400 degrees. In a loaf pan, shape meat mixture into a loaf and cover with aluminum foil. I place my loaf pan on a small cookie sheet when baking so it's easier to keep taking out of the oven to drain any grease. Bake for approx 50-60 minutes, draining the excess grease in between.
- 4. After about 50-60 minutes, or when the meatloaf is cooked through, remove the foil to add the glaze. To make the glaze, in a small bowl, add 1 cup of ketchup and 1/2 cup of dark brown sugar. Mix well. You can add more or less of ketchup and brown sugar so the consistency and flavor are to your liking. Some people add yellow mustard to the glaze mixture but I don't. With a spoon spread the glaze all over the top of meatloaf to completely cover it. Bake for an additional 15 minutes or until the glaze is thick and sticky looking.
- 5. Take out of oven and let cool for about 10 minutes, then slice and serve. Goes well with gravy, mashed potatoes and vegetables.

- In a large bowl, combine the eggs, milk, cheese, saltines, carrots, onion, salt, garlic powder and pepper. Crumble beef over mixture and mix well. Shape into a loaf. Place in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 50 minutes. , For glaze, in a small saucepan, bring the brown sugar, ketchup and mustard to a boil. Reduce heat; simmer, uncovered, for 3-5 minutes or until heated through. Spoon over meat loaf. , Bake 10-15 minutes longer or until meat is no longer pink and a thermometer reads 160°. Drain; let stand for 10 minutes before slicing. If desired, top with minced fresh parsley.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
- Heat remaining bacon grease over medium-high heat. Saute celery in hot grease until soft but not browned, about 5 minutes. Set aside.
- Combine bread crumbs, milk, eggs, 1 teaspoon Worcestershire sauce, black pepper, onion powder, and sauteed celery in a large bowl. Mix well.
- Crumble beef and pork into egg mixture and mix together using your hands, making sure not to overmix. Form into a loaf and place into the prepared loaf pan. Place the bacon slices along the top of the loaf long-ways.
- Bake in the preheated oven on the middle rack for 30 minutes.
- While the meat is cooking, combine ketchup, brown sugar, dry mustard, and Worcestershire for glaze in a small bowl; mix well.
- Remove loaf from the oven and drain any fat bubbling around edges and on top. Return to the oven and continue to bake for 25 minutes more. Remove once more, drain fat again, and spoon or brush glaze mixture evenly over the top. Increase oven temperature to 400 degrees F (200 degrees C).
- Return loaf to the preheated oven and continue to bake until no longer pink in the center, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let sit for at least 10 minutes before cutting and serving.

- Preheat your oven to 350 degrees. Lightly spray a loaf pan with non-stick cooking spray.
- Combine ketchup, brown sugar, and salt in a small mixing bowl and allow to sit for a couple of minutes to allow sugar to dissolve.
- Spoon one-third cup of sauce into bottom of a loaf pan. Set aside.
- Place ground beef, bread crumbs, onion, bell pepper, eggs, milk, and one-third cup of glaze into food processor and process until mixture is thoroughly blended.

- For the glaze: Mix all ingredients in a small bowl; set aside.
- For the meatloaf: Preheat oven to 350 degrees. Heat oil in a medium skillet. Add onion and garlic, saute until softened, about 5 minutes; set aside to cool.
- Mix eggs with thyme, salt, pepper, mustard, Worchestershire, pepper sauce, and milk or yogurt. Add egg mixture to meat in a large bowl, along with crackers, oatmeal or bread crumbs, parsley and cook onions and garlic; mix with a fork until evenly blended and meat mixture does not stick to bowl. - Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool for at least 20 minutes. Slice and serve

- Glaze: Mix all ingredients and set aside.
- Meat loaf:.
- Heat oven to 350°F.
- Heat oil in medium skillet and sauté onion and garlic about 5 minutes. Set aside to cool.
- Mix eggs with thyme, salt, pepper, mustard, Worcestershire sauce, pepper sauce and milk.

- Soak breadcrumbs in milk until milk is absorbed.
- Beat eggs slightly, add in with breadcrumb mixture. Add ground meat, diced onion, salt, pepper and sage. Combine well.
- Grease loaf pan, pack mixture lightly into pan.
