This is my own creation, but the flavours are inspired by Subway's Buffalo Chicken Sandwich. The amounts of cheese and veggies and dressings are determined by personal preferences.

Number Of Ingredients 9

1 flour tortilla
shredded cheddar cheese
3 frozen breaded chicken strips, cooked according to package directions
10 dashes Frank's red hot sauce
sliced green pepper
chopped tomato
lettuce
ranch dressing
salt and pepper

Steps:

  • Chop or slice cooked chicken strips.
  • Place cheese in a strip in the middle of the tortilla.
  • Place chicken on top of cheese.
  • Sprinkle chicken with Frank's Red Hot Sauce.
  • Top chicken with green pepper and tomato.
  • Top that with lettuce.
  • Pour ranch dressing over lettuce.
  • Sprinkle with salt and pepper to taste.
  • Roll up tortilla and enjoy.

1 tablespoon butter
2 boneless skinless chicken breasts
garlic powder
onion powder
salt
pepper
Frank's red hot sauce
4 teaspoons blue cheese dressing
4 iceberg lettuce or 4 romaine leaves

Steps:

  • Slice the chicken breasts in 4 to 5 strips.
  • Melt butter over medium heat.
  • Sprinkle both sides of the chicken strips with garlic powder, onion powder, salt and pepper (this has to be done to taste, I just sprinkle enough on so each side is coated but not globbed on).
  • Cook chicken in melted butter until cooked through and nice and brown.
  • Place warm chicken in lettuce leaves.
  • Add Franks Red Hot Sauce to warm chicken (again this has to be done to taste, I love hot food so I end up with about 6-8 dashes on each wrap).
  • Add 1 teaspoon of blue cheese dressing to each wrap.

I love buffalo wings, but I really don't like the hassle of preparing chicken. I found a can of chicken in the pantry and this is what I came up with. I made a wrap since I wasn't super hungry, but it would make a wonderful quesadilla if you prefer something heavier. La Tortilla Factory low carb wraps are perfect for this, they have lots of fiber and fewer calories than traditional flour or corn tortillas. I always use Frank's Buffalo sauce, but if you can't find it - 1 part Louisiana hot sauce and 1 part margarine works instead.

1 (12 1/2 ounce) can white chicken meat packed in water
2 tablespoons margarine
4 tablespoons buffalo wing sauce
1/4 cup monterey jack pepper cheese, shredded
2 low-fat low-carb whole wheat tortillas

Steps:

  • Heat the margarine and buffalo sauce over medium heat in a medium saucepan.
  • Open the can of chicken, drain the water, and dump it into the pan.
  • Simmer for about 10 minutes, using a spatula to "shred" the chicken (just mash it a bit and it will shred nicely).
  • Add the pepper jack cheese and stir until melted.
  • Spoon half of the mixture onto each tortilla/wrap, roll it up, and enjoy!

These burgers are very tasty! You don't have to be a low-carb person to enjoy them. I serve them on the whole grain sandwich thins instead of a bun. The meat mixture will be wet but will hold together when grilled.

2 tablespoons extra virgin olive oil
2 celery ribs, finely chopped with leafy top
1/2 cup onion, finely chopped
4 garlic, cloves finely chopped
2 lbs ground chicken (or turkey)
3 tablespoons fresh dill, finely chopped
2 teaspoons poultry seasoning
salt and pepper
3 tablespoons butter
1/2 cup buffalo wing sauce
1/2 cup blue cheese, crumbles
6 slices cheddar cheese
6 whole grain buns
lettuce, shredded

Steps:

  • In a small skillet heat 1 tablespoon of the oil. Add the celery, garlic, onion and cook until tender, about 5 minutes. Transfer to a bowl and let cool.
  • Mix the chicken, dill, poultry seasoning into the vegetable mixture, season to taste with salt and pepper. Form into 6 patties.
  • In the same skillet, heat the remaining 1 tablespoon of oil over medium heat. Add the patties and cook, only turning once until firm, about 15 minutes. Remove to a plate.
  • Add the butter to the skillet to melt and mix in wing sauce. Add the patties back into the skillet and turn to coat, spoon sauce onto top of patty then top with blue cheese then cheddar slice. Cover skillet, turn heat off and let stand until cheese is melted.
  • Toast sandwhich thins, top each patty with lettuce and enjoy!
