HOMEMADE BUFFALO SAUCE
The best homemade buffalo sauce made with Frank's Hot Sauce, butter, and spices!

- For the buffalo sauce, quarter the cold stick of butter lengthwise. Make eight cuts across so that the butter is cut into tiny cubes. Transfer to the refrigerator until ready to use. Add Frank's hot sauce, onion powder, Kosher salt, and garlic powder to a small saucepan and place over medium heat. Stir and allow to come to a simmer.
- Reduce the heat to low. Begin adding in the butter 2-3 cubes at a time, whisking constantly. Once the butter has melted into the sauce, add another 2-3 cubes, and repeat until all of the butter has been incorporated. Do not rush this process.
- Once all of the butter has been added, remove the sauce from the heat and set aside until ready to use. Makes about 1 1/2 cup of sauce.
- Store-Bought Nugget Variation: 16 ounces (about 20) frozen chicken nuggets. Cook the chicken nuggets according to package directions, dip in prepared buffalo sauce and serve right away.

BUFFALO CHICKEN BITES (BONELESS BUFFALO WINGS)
These boneless buffalo chicken bites are perfection. Lightly battered and pan-seared, they're crispy on the outside with a moist and tender interior, then tossed in my mom's signature buffalo sauce.

- Combine the cornstarch, salt, onion powder, garlic powder, pepper, and paprika in a large mixing bowl. Whisk until thoroughly combined.
- Add the chicken to the cornstarch mixture; toss until evenly coated.
- Heat a 12" non-stick skillet over medium high heat. Add 1 tbsp olive oil and heat until it shimmers. Add half the battered chicken to the skillet in a single layer. Sautee 5 minutes until the breading is lightly golden brown, flip the pieces, and sautee 5 minutes on the other side. Remove the chicken using a slotted spoon and transfer to a plate. Repeat with the remaining chicken pieces, adding additional olive oil as needed.
- Add the butter to the skillet and melt, scraping up browned bits as it cooks. Add the buffalo sauces to the melted butter and whisk until combined.
- Add the cooked chicken to the buffalo sauce. Toss to coat all pieces in sauce, then cook an addition 3-5 minutes until the chicken is cooked through and the sauce slightly thickens. Serve immediately with blue cheese or ranch dipping sauce and sliced carrots and celery.

BUFFALO CHICKEN BITES

- Heat oven to 375°F. Spray 24 mini muffin cups with cooking spray.
- In medium bowl, mix chicken, cream cheese, 1 cup of the Mexican cheese and the Buffalo wing sauce until well blended.
- Place 1 wonton skin in each muffin cup. Spoon chicken mixture evenly into cups.
- Bake 6 minutes. Sprinkle 1 teaspoon of the remaining Mexican cheese into each cup. Bake 2 minutes longer or until wontons are lightly browned and cheese is melted. Garnish with green onion tops. Serve warm.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix cream cheese, hot sauce, ranch dressing, onion, garlic powder, and onion powder together in a bowl; fold in chicken.
- Roll crescent roll dough onto a work surface, pressing dough into a thin layer without tearing. Cut 3-inch pieces out of dough using a biscuit cutter. Spoon about 1 tablespoon cream cheese mixture into the center of each dough piece. Pull dough over filling and press into other edge of dough; crimp edges together using a fork.
- Arrange pockets on a baking sheet. Brush each pocket with butter and sprinkle with Cheddar cheese.
- Bake in the preheated oven until golden brown, about 15 minutes.

- Melt margarine in a medium nonstick saucepan. Whisk in hot pepper sauce and cook for 1 to 2 minutes, or until slightly thickened; set aside.
- Heat oil in a large nonstick skillet over medium-high heat. Season chicken with salt and pepper, add to pan, and cook, turning occasionally, until browned on all sides, about 6 minutes. Add margarine mixture to pan and gently toss chicken until well coated, 1 to 2 minutes.
- Remove chicken from pan and skewer each cube with a toothpick. Skewer 1 piece of celery at the base of each. Arrange on a platter and serve with dip.
- Blue Cheese Dipping Sauce.
- Mash blue cheese in a medium bowl, leaving some small lumps. Whisk in the sour cream, mayonnaise, lime juice, vinegar, and hot pepper sauce to taste. Transfer to a small bowl and serve with the chicken.

Spicier or tangy er, you decide. This recipe is not for those on a diet, in fact the more bad for you ingredients you use, the better. This is one of those recipes for those day's you feel like indulging.. when you wake up in the morning and get a frapuccino instead of a black coffee!

- First make the dressing and put it in the fridge.
- Heat up oil in a deep pan, cut the chicken in to small-ish bite size pieces, in a seperate bowl beat eggs and buttermilk, then in another bowl put flour. Dip chicken into egg mixture then into flour then fry. continue this til chicken is cooked, set it aside.
- In a deep frying pan mix hot sauce, vinegar then 1/2 cube of butter, note that the butter controls the 'hot' factor for less spicey add more butter. After butter melts add chicken a little at a time remove it immediately from the sauce so it does not get soggy, repeat this until all of the chicken is covered.
- Serve with buttermilk ranch, celery and carrots. I like to serve it with the remainder of the sauce in another bowl for extra tang.
- Enjoy! This also makes a great left over dish.

BUFFALO CHICKEN BITES RECIPE
These Buffalo Chicken Bites can be served as an appetizer, or a main dish. They are like chicken nuggets, but better. They are also healthy, and not deep fried, or battered. I love how simple, delicious, and inexpensive this recipe is, to make.

- Cut the chicken breasts into thick bite size pieces.
- In a bowl, or gallon zip lock bag, add the chicken breasts pieces, apple cider vinegar, 1/2 teaspoon paprika, 1/2 teaspoon garlic powder, 1/2 cup buffalo sauce, and 1/4 cup honey.
- Mix until well combined and all the chicken is covered.
- Place the marinating chicken in the fridge for about 2-4 hours.
- Remove the chicken from the fridge and preheat oven to 350 degrees.
- Place a cooling rack on top of a cookie sheet for best results, or just spray a cookie sheet with non-stick cooking spray.
- In a smaller bowl, combine the olive oil, 1/4 cup honey, 1/2 cup buffalo sauce, 1/2 teaspoon garlic powder, and 1/2 teaspoon paprika.
- Dip each chicken piece into the mixture and place on the cooling rack. Do this until each chicken piece is covered on on the rack.
- Place the chicken in the oven and bake for 20 minutes, flipping once halfway through.
- Remove from oven once done cooking and enjoy!
- We like to dip them in ranch or a little more buffalo sauce
