BUFFALO CHICKEN BITES (BONELESS BUFFALO WINGS)
These boneless buffalo chicken bites are perfection. Lightly battered and pan-seared, they're crispy on the outside with a moist and tender interior, then tossed in my mom's signature buffalo sauce.

Steps:
- Combine the cornstarch, salt, onion powder, garlic powder, pepper, and paprika in a large mixing bowl. Whisk until thoroughly combined.
- Add the chicken to the cornstarch mixture; toss until evenly coated.
- Heat a 12" non-stick skillet over medium high heat. Add 1 tbsp olive oil and heat until it shimmers. Add half the battered chicken to the skillet in a single layer. Sautee 5 minutes until the breading is lightly golden brown, flip the pieces, and sautee 5 minutes on the other side. Remove the chicken using a slotted spoon and transfer to a plate. Repeat with the remaining chicken pieces, adding additional olive oil as needed.
- Add the butter to the skillet and melt, scraping up browned bits as it cooks. Add the buffalo sauces to the melted butter and whisk until combined.
- Add the cooked chicken to the buffalo sauce. Toss to coat all pieces in sauce, then cook an addition 3-5 minutes until the chicken is cooked through and the sauce slightly thickens. Serve immediately with blue cheese or ranch dipping sauce and sliced carrots and celery.

- Preheat air fryer to 350°. In a large bowl, combine cauliflower and oil; toss to coat. In batches, arrange cauliflower in a single layer in air-fryer basket. Cook until florets are tender and edges are browned, 10-15 minutes, stirring halfway through. In a large bowl, combine buffalo sauce and melted butter. Add cauliflower; toss to coat. Transfer to a serving platter. In a small bowl, combine dip ingredients. Serve with cauliflower and, if desired, celery sticks.

BUFFALO CAULIFLOWER BITES RECIPE BY TASTY

- Preheat oven to 450˚F (230˚C).
- Cut the head of cauliflower in half. Pluck bite-sized florets from each half. Trim bottoms of florets as necessary.
- In a medium bowl, mix the batter ingredients.
- Add cauliflower to the batter. Stir so each floret is fully coated.
- Line a baking sheet with parchment paper. Spread cauliflower florets on the baking sheet and drizzle with olive oil.
- Bake for 20 minutes.
- Remove the cauliflower from the oven and toss with buffalo sauce.
- Return cauliflower to oven and bake for an additional 10 minutes until browned to your liking.
- Enjoy!

- Preheat oven to 400°. In a small bowl, combine Parmesan cheese and 1 teaspoon dressing mix. In another bowl, mix mayonnaise, milk and remaining dressing mix. If desired, stir in blue cheese. Refrigerate until serving., In a large bowl, mix chicken, cheddar-Monterey Jack cheese and wing sauce. On a lightly floured surface, unroll pizza crust dough and pat into a 14x12-in. rectangle. Cut into 24 squares., Place 1 rounded tablespoon chicken mixture on the center of each square. Pull corners together to enclose filling; pinch to seal. - Mix four, about a cup, with a little salt and cayenne pepper to season.
- Dredge the chicken pieces in the flour mixture and shake off excess.

This is always in demand at any football get together. You can make the bites and use any type of sauce you want. Me personally, I like to take a quarter cup of Sweet Baby Ray's® barbecue sauce and a quarter cup of Franks Red Hot® sauce and mix it together.
