Nutty browned butter adds a wonderful underlying note to this otherwise straightforward Buffalo sauce. The emulsion of hot sauce and that melted butter is key to this condiment's velvety texture, so be sure to whisk well. A cayenne-based bottled sauce like Frank's RedHot works best here, especially when balanced by brown sugar and vinegar. But be warned: You may have trouble stopping yourself from licking the whisk.

1/2 cup unsalted butter
1 tablespoon finely grated garlic
3/4 cup cayenne-based hot sauce, preferably Frank's RedHot
2 packed tablespoons dark brown sugar, plus more to taste
1 tablespoon distilled white vinegar
Kosher salt and black pepper

Steps:

  • In a small saucepan over medium heat, melt the butter. Continue cooking, gently simmering the butter and stirring the pan occasionally with a wooden spoon, until the milk solids at the bottom of the pan start to brown, 3 to 5 minutes. It should smell nutty and almost like caramel or butterscotch.
  • Remove from the heat and carefully transfer the very hot browned butter to a large, heatproof mixing bowl. Add the garlic, stirring until the garlic is fragrant, a few seconds. Add the hot sauce, brown sugar and vinegar. Season with salt and pepper. Whisk vigorously until emulsified. Taste and add more salt, pepper and brown sugar as desired.
  • Use immediately or refrigerate in an airtight container for up to 1 week. This is an excellent dipping sauce for French fries, roasted cauliflower and any kind of chicken (grilled, roasted or fried), or slathered between two slices of toasted bread in a deli sandwich.

The best homemade sauce recipe. Made just as you like it with the right amount of spice. Perfect for buffalo wings, pulled pork, burgers and chicken fingers.

1 1/3 cup Frank's RedHot sauce
3 tablespoons white vinegar
1/2 teaspoon Worcestershire sauce
1/2 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1 cup unsalted butter ((2 sticks) room temperature)
salt to taste

Steps:

  • Take the butter out of the fridge, unwrap and cut it into tablespoon pieces. Set aside.
  • In a saucepan over medium-low heat, combine the hot sauce, vinegar, Worcestershire sauce, pepper, garlic powder and paprika.
  • Allow the mixture to warm through and allow it to start to steam, but don't let it boil. Stir it often.
  • Once the sauce heats and starts to steam, and barely start to simmer, remove the pan from the heat.
  • Add the butter to the hot sauce and mix quickly with a whisk to stir while the butter melts.
  • The sauce will cool slightly as the butter melts, but it should be warm enough to completely melt the pieces of butter.
  • Add a dash or two of salt if you'd like, to taste.
  • Serve the warm sauce over wings, on pulled pork or as a dipping sauce.
  • Refrigerate any leftovers. As you refrigerate the mixture, the sauce will thicken slightly (because the butter will harden again). Simply reheat the mixture in the microwave in short increments
  • This mixture makes enough to cover 5 pounds of wings and have extra for dipping. Yields about 3 cups of sauce.

LOULOU'S BUFFALO RIBS

Number Of Ingredients 15

1 cup liquid smoke
6 ounces dark, heavy beer
2 ounces chile flakes
2 ounces sea salt
2 ounces Italian seasoning
1 ounce freshly ground black pepper
4 bay leaves
2 racks buffalo ribs (about 5 pounds each)
4 cups ketchup
1 cup honey
2 ounces cayenne
2 ounces horseradish
2 ounces brown sugar
2 ounces liquid smoke
Sea salt and freshly ground black pepper

Steps:

  • For the marinade: In a large bowl, mix 1 cup water, the liquid smoke, beer, chile flakes, sea salt, Italian seasoning, pepper and bay leaves. Place the ribs in a hotel pan and pour the marinade over. Marinate the ribs overnight.
  • Preheat the oven to 325 degrees F. Bake the ribs in the oven, semi-slow and low, for 3 1/2 to 4 hours.
  • Pull out the ribs, and rest them for 1 hour, reserving any liquids at the bottom of the pan.
  • For the sauce: In a large bowl mix the au jus from the baked ribs, the ketchup, honey, cayenne, horseradish, sugar, smoke and some salt and pepper.
  • Preheat the grill to 350 degrees F. To serve, grill to char the ribs, 5 to 8 minutes. Add on some of the barbecue sauce, and serve.

GRILLED BUFFALO RIBS WITH PINEAPPLE-MOONSHINE BBQ SAUCE



Grilled Buffalo Ribs with Pineapple-Moonshine BBQ Sauce image

1 cup diced yellow onion
1 tablespoon chopped garlic
1 tablespoon chopped horseradish
1/2 cup 100-proof Vodka (recommended: Moon Shine)
4 cups diced pineapple
4 cups diced tomatoes
1/4 cup molasses
1/2 cup cider vinegar
1/4 cup honey
1/2 cup brown sugar
1 tablespoon dried mustard powder
2 tablespoons dried oregano
3 bay leaves
1/2 cup Worcestershire sauce
4 cups ketchup
8 Buffalo ribs, about 3 pounds
Salt and freshly ground black pepper
Olive oil
1 cup water
Grilled pineapple, for garnish
Lime slices, for garnish

Steps:

  • Preheat oven to 350 degrees F and grill to medium-high.
  • In a large saucepan, saute the onion, garlic, and horseradish over medium-high heat. Add the vodka and scrape the bottom of the pan with your wooden spoon or rubber spatula to deglaze the yummy bits off the bottom. Add the pineapple and tomatoes and bring to a simmer. Let it simmer for 10 minutes. Add the molasses, vinegar, honey, sugar, mustard powder, oregano, bay leaves, Worcestershire sauce, and ketchup. Allow it to simmer for 2 hours.
  • Season the ribs with salt and freshly ground black pepper and rub with a little olive oil. Grill the ribs for about 5 minutes per side. In a braising pan, place the ribs and 1/2 of the sauce over the ribs and cover the pan with a lid. Save the other 1/2 of the sauce for the final plating. Add 1 cup of water to the ribs and let it simmer for 3 1/2 to 4 hours, until the meat is tender but is still on the bone. Remove the ribs from the liquid.
  • Serving Suggestions: Place 2 ribs on each plate. Generously ladle the hot BBQ sauce over the ribs and top with grilled pineapple and sliced limes.

275ml hot sauce
4 garlic cloves, peeled and crushed
200g butter

Steps:

  • Put all the ingredients together in a pan and warm over a low heat, so that the butter melts and the garlic cooks gently. The sauce will need to simmer for around 3-5 mins, until it is fully heated through and the garlic is tender and fragrant. Taste and adjust the seasoning if needed. Serve warm as a dip or drizzle over chicken wings. Any leftover sauce will keep for up to five days in the fridge.

This is a Spicy, bold and thick BBQ sauce, especially good on chicken and pork. I've been making this sauce for years and it is my favorite bbq sauce to this day. When we fire up the grill this sauce is usually not far behind. Enjoy :)

1/2 large onion chopped finely
40 ounce(s) ketchup
6 tablespoon(s) cider vinegar
6 tablespoon(s) worcestershire sauce
1 1/4 cup(s) brown sugar
1 teaspoon(s) cumin
2 teaspoon(s) chili powder
2 teaspoon(s) cayenne pepper (or to taste depending on how spicy you like it.)
1 can(s) tomatoe paste

Steps:

  • In a medium saucepan combine all ingredients except tomatoe paste and bring to a boil.
  • Turn heat down to low and simmer for 20 minutes stirring occasionally.
  • Stir in tomatoe paste until well blended and simmer a couple more minutes. Use as you would any bbq sauce.
