1/4 cup extra virgin olive oil
1/2 pound ground beef
1/2 pound ground veal
1/2 pound ground pork
1 pound hot Italian sausage, casing removed
4 teaspoons minced garlic
1/2 teaspoon dried oregano
2 Tablespoons tomato paste
1 28-ounce can Italian peeled tomatoes, finely chopped, juices reserved
2 28-ounce cans tomato puree
Salt and freshly ground pepper
3 pounds fresh ricotta
1/4 cup finely chopped flat-leaf parsley
2 Tablespoons finely chopped basil
1 ‑1/2 cup grated parmesan cheese, 1/2 cup set aside
1 ‑1/2 pound fresh mozzarella, shredded, 1/2 cup set aside
2 large eggs beaten
1 pound fresh lasagna sheets or dried lasagna noodles

Steps:

  • 1. In a large heavy bottomed pot, heat the olive oil, add the beef, pork, veal and sausage (that has been removed from its casing) and cook until nicely browned. Add garlic and oregano and cook until fragrant. Stir in the tomato paste and cook until the meat is coated. Add tomatoes with their juices and the tomato puree, season with salt & pepper and bring to a boil. Simmer over moderate heat, stirring occasionally, until thickened about 1 1/2 hours. 2. In large bowl, combine the ricotta with the parsley, basil, 1 cup of the parmesan, 1 pound of the shredded mozzarella and beaten eggs. Season with salt and pepper. 3. Cook the lasagna noodles. Fresh pasta and no-cook lasagna do not require any pre-cooking. Dry, curly-ridged lasagna noodles only need 3 minutes pre-cooking time: boiled in abundant salted water, drained, rinsed in cold water and dried between towels. 4. Preheat the oven to 375°. Spread 1 cup of the sauce in the bottom of a 9-by -13 inch glass baking dish. Line the dish with overlapping noodles. Spread 1/3 of the ricotta mixture over the noodles, sprinkle with a little parmesan and shredded mozzarella then top with 1 1/2 cups of the sauce and another layer of noodles. Repeat the layering 2 more times. Top with noodles and cover with 1 1/2 cups of sauce -- there may be some sauce remaining -- save for another use. Toss the remaining mozzarella with the remaining parmesan and sprinkle over the lasagna. 5. Bake the lasagna for about 45 minutes up to one hour, or until the top is golden and crisp around the edges and the filling is bubbling. Let the lasagna rest for 20 minutes before serving.

1 (28 ounce) can italian whole canned tomatoes or 1 (28 ounce) can diced tomatoes, finely chopped, juices reserved
2 (28 ounce) cans tomato puree
salt & freshly ground black pepper
3 lbs fresh ricotta
1/4 cup finely chopped flat leaf parsley
2 tablespoons finely chopped basil
1 1/2 cups grated parmesan cheese, 1/2 cup set aside
1 1/2 lbs fresh mozzarella cheese, shredded, 1/2 cup set aside
2 large eggs, beaten
1 lb lasagna noodle

Steps:

  • Sauce:.
  • In a large heavy bottomed pot, heat the olive oil, add the beef, pork, veal and sausage (without casing) and cook until browned.
  • Add garlic and oregano and cook until fragrant.
  • Stir in the tomato paste and cook until the meat is coated.
  • Add tomatoes with their juices and the tomato puree, season with salt and pepper and bring to a boil.
  • Simmer over moderate heat, stirring occasionally, until thickened about 1 1/2 hours.
  • Ricotta:.
  • In large bowl, combine the ricotta with the parsley, basil, 1 cup of the Parmesan, 1 pound of the shredded mozzarella and beaten eggs. Season with salt and pepper.
  • Noodles:.
  • The instructions suggested cooking the dry, curly-ridged lasagna noodles 3 minutes in abundant salted water, drained, rinsed -- I say use fresh, no-cook or even the curly edged pasta, and forget about the pre-cooking. I guarantee the sauce will cook the noodles after 45 minutes of cooking time. This also makes life much easier.
  • Lasagna Time:.
  • Preheat the oven to 375°F Spread 1.5 cup of the sauce in the bottom of a baking dish. Line the dish with overlapping noodles.
  • Spread 1/3 of the ricotta mixture over the noodles, sprinkle with a little Parmesan and shredded mozzarella then top with 1 1/2 cups of the sauce and another layer of noodles.
  • Repeat the layering 2 more times. Top with noodles and cover with 1 1/2 cups of sauce (may want to use extra if using uncooked noodles to ensure the noodles are covered and cook evenly. Sprinkle remaining mozzarella and Parmesan over the lasagna.
  • Cover Lasagna with foil and bake for about 20 minutes.
  • Uncover then cook for 30-45 minutes more or until the top is golden and crisp around the edges and the filling is bubbling.
  • Let the lasagna rest for 20 minutes before serving.

1 medium onion, chopped (1/2 cup)
1 garlic clove, finely chopped
3 tablespoons chopped fresh parsley
1 tablespoon chopped fresh basil leaves or 1 teaspoon dried basil leaves
1 teaspoon sugar
2 cups progresso diced tomatoes, undrained (from 28-oz can)
1 (15 ounce) can tomato sauce
12 uncooked lasagna noodles (12 ounces)
1 (15 ounce) container reduced-fat ricotta cheese (2 cups) or 1 small curd cream-style cottage cheese (2 cups)
1/4 cup grated parmesan cheese
1 tablespoon chopped fresh oregano leaves or 1/2 teaspoon dried oregano leaves
2 cups shredded reduced-fat mozzarella cheese (8 ounces)
1/4 cup grated parmesan cheese

Steps:

  • Cook sausage, onion and garlic in 10-inch skillet over medium heat, stirring occasionally, until sausage is no longer pink; drain.
  • Stir in 2 tablespoons of the parsley, the basil, sugar, tomatoes and tomato sauce. Heat to boiling, stirring occasionally; reduce heat to low. Simmer uncovered about 45 minutes or until slightly thickened.
  • Heat oven to 350ºF. Cook and drain noodles as directed on package.
  • Mix ricotta cheese, 1/4 cup Parmesan cheese, remaining 1 tablespoon parsley and the oregano.
  • Spread 1 cup of the sauce mixture in ungreased rectangular baking dish, 13x9x2 inches. Top with 4 noodles. Spread 1 cup of the cheese mixture over noodles; spread with 1 cup of the sauce mixture. Sprinkle with 2/3 cup of the mozzarella cheese. Repeat with 4 noodles, the remaining cheese mixture, 1 cup of the sauce mixture and 2/3 cup of the mozzarella cheese. Top with remaining noodles and sauce mixture. Sprinkle with remaining mozzarella cheese and 1/4 cup Parmesan cheese.
  • Cover and bake 30 minutes. Uncover and bake about 15 minutes longer or until hot and bubbly. Let stand 15 minutes before cutting.

16 lasagna noodles, from a 16 oz. package (I use Barilla)
1 onion, chopped (1/2 cup)
1 lb sweet Italian sausage link, casings removed,crumbled
2 tablespoons tomato paste
3/4 teaspoon salt, divided
3/4 teaspoon garlic powder, divided
3/4 teaspoon dried Italian seasoning, divided
1/2 teaspoon ground black pepper, divided
2/3 cup milk
1 (26 ounce) jar marinara sauce (I use my mother's homemade recipe)
1 (32 ounce) container whole milk ricotta cheese (I use Polly-O)
1 (8 ounce) package shredded whole-milk mozzarella cheese (I use Polly-O)
1/3 cup grated parmesan cheese
1 large egg

Steps:

  • Preheat oven to 375*F.
  • Cook the noodles according to the package instructions; drain.
  • In a non-stick skillet over medium-high heat, cook the onion and sausage until the sausage is no longer pink, 6-8 minutes; drain the fat.
  • Reduce the heat to medium; stir in the tomato paste, 1/2 tsp.
  • salt, 1/2 tsp.
  • garlic powder, 1/2 tsp.
  • Italian seasoning, and 1/4 tsp.
  • pepper.
  • Add the milk; cook, stirring, until thickened, about 3 minutes.
  • Reserve 1 1/2 cups marinara sauce; stir the remainder into the skillet.
  • Remove pan from heat.
  • Combine the ricotta cheese, 1 cup of the mozzarella, Parmesan cheese, egg, and the remaining salt, garlic powder, Italian seasoning, and pepper.
  • Spread 1/2 cup of the reserved marinara sauce in the bottom of an ungreased 13x9" baking dish; top with 4 whole noodles, 1/3 of the cheese mixture, and 1/3 of the sausage mixture.
  • Repeat twice, ending with the noodles; top with the remaining sauce and sprinkle with the remaining mozzarella.
  • Cover the pan with foil.
  • **(At this point, I usually like to refrigerate the lasagna for about 1 hour to let the flavors blend--if you choose to do it this way, preheat the oven when you're ready to bake.)** Bake until bubbly, 40 minutes; uncover the pan and bake 5-10 minutes longer.
  • Serve hot.
