OVERNIGHT BUCKWHEAT OATS



Overnight Buckwheat Oats image

A variation from overnight oats recipe from Alli Shircliff. This is for anyone who doesn't/can't eat oatmeal but wants a delicious, fast, and healthy breakfast. This uses buckwheat flakes--not the cereal flakes but rolled and flaked buckwheat. They look very similar to oatmeal flakes but are much smaller. Mix in agave and berries. Eat and enjoy!

¼ cup buckwheat flakes
2 teaspoons chia seeds
1 tablespoon coconut, divided
1 teaspoon flax seed meal
⅛ teaspoon ground cinnamon
⅛ teaspoon vanilla powder
⅓ cup milk
2 tablespoons mixed berries
1 teaspoon agave

Steps:

  • Combine buckwheat, chia seeds, 1 1/2 teaspoons coconut, flax seed meal, cinnamon, and vanilla powder in a jar; stir until well mixed. Stir in milk; cover. Place in the refrigerator, 8 hours to overnight.
  • Stir buckwheat mixture. Heat in the microwave for 30 seconds. Stir in mixed berries, remaining coconut, and agave.

2 cups water
1 cup buckwheat groats
1/4 tsp salt
1/2 tsp cinnamon
1 tsp vanilla extract
1/4 cup almond milk (or desired milk alternative)

Steps:

  • In a saucepan, add water and groats.
  • Stir in salt, cinnamon, and vanilla.
  • Bring to a boil, cover, and reduce to a simmer for 10 minutes.
  • Stir in milk and continue to cook until desired consistency is reached.
  • Add your desired toppings and enjoy!

KASHA (BUCKWHEAT GROATS) BREAKFAST CEREAL

I got this off the back of a box of Wolff's medium granulation kasha. I don't know if it would work with other granulations, as I haven't tried it! I'm not sure why it says to serve with milk -- I just treated it as if it were microwaved instant oatmeal, and added a couple of packets of Splenda at the end. Edited to add that the nutrition facts are obviously incorrect -- two tablespoons of dried kasha are 85 calories, so if you use water, that should be the calorie count.

2 tablespoons dried kasha
1 dash salt
2/3 cup water or 2/3 cup milk
artificial sweetener (optional)

Steps:

  • Stir 2 T kasha and a dash of salt into 2/3 cup water or milk in a 2- to 3-cup bowl. Microwave, uncovered, on MEDIUM, 5 to 8 minutes, stirring occasionally until slightly thinner than desired consistency. Let stand 1 to 2 minutes. Serve with milk and favorite sweetener.
