Gluten-Free Coconut Milk Brussels Sprouts Meal image

Well yeah, a diet again, low carb, low protein, so its a neat thing to make something a little bit different... hope you will like.

1 cup Brussels sprout
1 teaspoon ghee or 1 teaspoon coconut oil
1/4 cup water
1 tablespoon tarragon
2 garlic cloves
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon chili flakes
1 teaspoon coconut flour
coconut milk
2 teaspoons coconut cream
3/4 cup water

Steps:

  • Put the ghee or coconut oil in a saucepan, warm up, then add sprouts.
  • Once sprouts warmed up, and soaked up some of the butter/oil, add 1/4 cup of water, salt and simmer for 10/15 minutes or until softer.
  • Mash the sprouts mildly, add tarragon, garlic, chili flakes and the coconut milk, stir and bring to boil.
  • If meal is not thick enough, add the 1 tsp of coconut flour, stir in well and let it stand on stove for a minute longer.
  • Sprinkle with black pepper.
  • Voila meal is ready.
  • you could serve it with plain yoghurt.
  • FOR COCONUT MILK you could use canned one, if it doesnt have any additional ingredients, but its much better to have own. Real easy too.
  • Stir in 2 tsps of coconut cream with 2 tbsp of hot water first, then once cream dissolved, add rest of the water and you have the coconut milk ready.

  • Season boiling water with 1 Tbsp. Diamond Crystal or 1¾ tsp. Morton salt, then add brussels sprouts and cook 4 minutes. Drain brussels sprouts in a colander and run the coldest possible tap water over sprouts, about 30 seconds. (Because the brussels sprouts will be baked, cold tap water works just as well as an ice water bath here; they don’t need to be completely cooled.) Turn out brussels sprouts onto a kitchen towel and let drain.

Whisk the ingredients together and simmer for a couple of minutes to infuse the flavors, stirring often. Remove the pan from heat and stir in the rice vinegar.
  • Set a 12-inch cast iron skillet over medium-high heat on the stove. Let it heat up for two to three minutes. It should be so hot that a few drops of water sizzle and quickly disappear after contact.
  • Toss the prepared Brussels sprouts with olive oil and salt. Toss well, so that the sprouts are evenly coated in a thin layer of oil. Once the pan is hot, dump the sprouts into the pan and quickly rearrange them so the flat sides are face down. Let them cook for about two minutes, or until they are starting to brown on the bottom.
  • Transfer the pan to your broiler. The pan will be heavy and hot so use oven mitts and be careful! Let the Brussels broil for about three minutes. Check the sprouts for doneness—their tops should be a little browned and the bottoms caramelized. How long you should leave them in there depends on your preferences and your oven.
