1 can (11 oz) refrigerated Pillsbury™ Original French Bread
1/4 cup olive oil
2 tablespoons red wine vinegar
1/2 teaspoon finely chopped fresh parsley
1/2 teaspoon sliced fresh basil
1/2 teaspoon finely chopped fresh thyme
1/2 teaspoon finely chopped fresh rosemary
1/2 teaspoon kosher (coarse) salt
1/2 teaspoon pepper
1 container (6 oz) hummus
1 jar (7 to 7.25 oz) roasted red bell peppers or roasted red and yellow bell peppers, cut into strips
2 to 3 tablespoons sliced pitted kalamata olives
Fresh oregano, if desired

Steps:

  • Heat oven to 350°F. Bake French loaf as directed on can. Cool until firm. Cut loaf into 1/4- to 1/2-inch slices. Place on ungreased cookie sheet.
  • In small bowl, mix remaining bread ingredients. Brush mixture on one side of each bread slice. Bake 8 to 12 minutes or until golden brown and crisp.
  • Spread hummus on each bread slice. Top each with roasted pepper strips and 1 olive slice. Garnish with fresh oregano.

1 heaping cup diced cherry tomatoes (halved if small, quartered if large)
1 minced garlic clove
1/4 teaspoon salt
1/8 teaspoon pepper
1 teaspoon extra virgin olive oil
1 teaspoon balsamic vinegar
[b]For serving:[/b]
1 container Sabra Hummus (I love the Pine Nut and Basil for this!)
Sliced and Toasted Baguette, Pita Bread and/or Crackers
Sliced Cucumbers
Baby Carrots

Steps:

  • [b]Bruschetta:[/b] In a small bowl, combine the tomatoes, garlic, salt, pepper, oil and vinegar. Stir to combine.
  • [b]For serving:[/b] Top hummus with bruschetta mixture and serve with choice of baguette, pita bread, crackers, cucumbers and/or carrots. Enjoy!

HUMMUS AND OLIVE BRUSCHETTA

16 pitted black olives, finely chopped
1 Tbsp. chopped fresh basil or oregano
1 tsp. olive oil
1/2 tsp. finely grated lemon zest
Freshly ground black pepper to taste
16 (1/2-inch) slices baguette or piccolo ciabattini
1 medium garlic clove, halved
1 Tbsp. olive oil
1 cup Thrifty Kitchens Hummus (or to taste)

Steps:

  • Combine the olives, basil, 1 tsp. olive oil, zest and pepper in a small bowl. Cover and refrigerate until needed. Preheat the oven to 400 degrees F. Set the bread slices on a baking sheet. Bake the bread 8 minutes, or until lightly toasted. Cool the bread a few minutes, and then rub the top side of each slice with the cut side of the garlic clove. Set bread on a serving platter; drizzle with the 1 Tbsp. olive oil. Cover with plastic wrap and keep bread at room temperature until ready to top. Can be made several hours before needed. To finish bruschetta, spread the top of each bread round with 1 Tbsp. of hummus, or to taste. Set a small spoon of the olive mixture in the centre of each bruschetta and enjoy. Note: The baguette or ciabattini used for the bruschetta should be about 3-inches (7.5 cm) wide. Thrifty Kitchens Hummus is available in our deli department. This vegetarian Greek Bruschetta, which can be made both dairy free and vegan-friendly, is a tasty way to get a party started! Toss a tomato, cucumber, red onion and feta cheese salad in a homemade Greek vinaigrette. Slather garlicky, toasted baguette rounds with either hummus or tzatziki, then top with the veggie mixture. Colorful, flavorful and hard to stop eating once you start, Greek Bruschetta is a delicious appetizer for any gathering!

2 baguettes
¼ cup extra virgin olive oil
2 garlic cloves, , crushed
1/2 red onion, finely diced (~1 cup)
1 English cucumber, diced (~2 cups)
1 cup grape tomatoes, quartered
½ cup feta cheese
½ cup hummus, (or more, if only using this)
½ cup tzatziki sauce, (or more, if only using this)
Parsley, for garnish
¼ cup extra virgin olive oil
3 tablespoons red wine vinegar
1 lemon, zested
Kosher salt, to taste
Black pepper, to taste

Steps:

  • Slice the baguette with a serrated knife.
  • Rub the baguette slices with the crushed garlic cloves.
  • Brush with olive oil.
  • Toast on a grill pan until pan marks show. (If you don't have a grill pan, toast in a toaster oven or a conventional oven until crispy.)
  • Using a sharp knife, dice the red onion and English cucumber. Quarter the tomatoes.
  • Combine the onion, cucumber and tomatoes in a large glass bowl.
  • Measure out the feta cheese into the bowl.
  • Using a large spoon, toss the ingredients until combined.
  • In a liquid measuring cup, measure out the olive oil and red wine vinegar.
  • Zest the lemon directly into the liquid measuring cup with the other dressing elements. Season with salt and pepper.
  • Whisk or mix with a fork until combined, then pour on top of the vegetables.
  • Toss until combined.
  • Using a butter knife, spread hummus OR tzatziki sauce on top of the toasted, garlicky bread.
  • Spoon the topping on top of the hummus or tzatziki.
  • Garnish with parsley.
  • Enjoy immediately.

½ small red onion, finely chopped
8 medium tomatoes (about 500g), coarsely chopped and drained
2-3 garlic cloves, crushed
6-8 leaves of fresh basil, finely chopped
30ml balsamic vinegar
60-80ml extra virgin olive oil
1 loaf crusty bread

Steps:

  • In a large bowl, mix the onions, tomatoes, garlic and basil, taking care not to mash or break up the tomatoes too much. Add the balsamic vinegar and extra virgin olive oil. Add salt and pepper to taste. Mix again. Cover and chill for at least an hour. This will allow the flavours to soak and blend together.
  • Slice the baguette loaf diagonally into 12 thick slices and lightly toast them until they are light brown on both sides. Serve the mixture on the warm slices of bread. If you prefer the mixture at room temperature, remove from the fridge half an hour before serving.
