2 Large boneless skinless chicken breasts, halved horizontally to make 4 fillets
1 tablespoon italian seasoning
½ teaspoon garlic powder
½ teaspoon salt, more or less to taste
¼ teaspoon black pepper
1 tablespoon olive oil
2 roma tomatoes, finely diced
2 tablespoons red onion, finely diced
1 clove garlic, minced
1 tablespoon fresh basil, finely chopped
¼ teaspoon salt, more or less to taste
¼ teaspoon black pepper
1 tablespoon olive oil
parmesan cheese, fresh shaved, for garnish
balsamic reduction, for drizzle and garnish

Steps:

  • Season chicken with Italian seasoning, garlic powder, salt, and black pepper; set aside.
  • Heat a skillet or grill pan over medium high heat, add oil and sear chicken breasts until browned on both sides and cooked through. Remove from the skillet, and allow it to rest.
  • In a medium bowl, add tomatoes, red onion, garlic, basil, salt, pepper and olive oil; mix well. Top each chicken breast with generous spoonfuls of bruschetta, add feta or parmesan and a drizzle of balsamic glaze.

Number Of Ingredients 8

1 tablespoon vegetable oil
1 lb boneless skinless chicken breast, cut into 1-inch chunks
1 package Tasty™ Savoury Seasoning Mix, divided
1 small yellow onion, chopped
4 cups chicken stock
1 cup cherry tomato, halved, 1 (14.5 ounce) can petite diced tomatoes, undrained
8 oz pasta, uncooked, such as penne, fusilli or bow-tie
1 cup bite-size mozzarella cheese balls, or shredded mozzarella

Steps:

  • Heat the oil in large high sided skillet over medium-high heat. Add the cubed chicken and 1 tablespoon of the seasoning mix. Cook, stirring often for 5 minutes or until browned and fully cooked. Remove chicken from the pan and transfer to a large bowl. Set aside.
  • Add the onion to the skillet and cook for 3 minutes or until softened and translucent.
  • Add the stock, tomatoes and remaining seasoning mix to the skillet, bring to boil and stir to release browned bits from bottom of skillet. Stir in the uncooked pasta and cook for 15 to 20 minutes, stirring occasionally until the pasta is fully cooked.
  • Return the chicken to skillet. Stir in the mozzarella and cook for 2 minutes or until thel chicken is heated through. Sprinkle with chopped basil if desired and serve immediately.
  • Enjoy!

1/2 cup balsamic vinegar
1-1/2 cups chopped and seeded plum tomatoes
2 tablespoons finely chopped shallot
1 tablespoon minced fresh basil
2 teaspoons plus 3 tablespoons olive oil, divided
1 garlic clove, minced
16 slices French bread baguette (1/2 inch thick)
Sea salt and grated Parmesan cheese

Steps:

  • In a small saucepan, bring vinegar to a boil; cook until liquid is reduced to 3 tablespoons, 8-10 minutes. Remove from heat. Meanwhile, combine tomatoes, shallot, basil, 2 teaspoons olive oil and garlic. Cover and refrigerate until serving., Brush remaining oil over both sides of baguette slices. Grill, uncovered, over medium heat until golden brown on both sides., Top toasts with tomato mixture. Drizzle with balsamic syrup; sprinkle with sea salt and Parmesan. Serve immediately.

1/2 cup all-purpose flour
1/2 cup egg substitute or 2 large eggs, beaten
4 boneless skinless chicken breast halves (4 ounces each)
1/4 cup grated Parmesan cheese
1/4 cup dry bread crumbs
1 tablespoon butter, melted
2 large tomatoes, seeded and chopped
3 tablespoons minced fresh basil
1 tablespoon olive oil
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 375°. Place flour and egg substitute in separate shallow bowls. Dip chicken in flour, then in egg substitute; place in a greased 13x9-in. baking dish. In a small bowl, mix cheese, bread crumbs and butter; sprinkle over chicken. , Loosely cover baking dish with foil. Bake 20 minutes. Uncover; bake 5-10 minutes longer or until a thermometer reads 165°., Meanwhile, in a small bowl, toss tomatoes with the remaining ingredients. 4 chicken breasts, (or 2 large, split horizontally) or 2 diced chicken breasts
2 teaspoons garlic, (fresh or puréed)
1 teaspoon salt
½ teaspoon pepper
3 teaspoons italian seasoning
2 teaspoons olive oil
3 medium tomatoes, diced
¼ red onion, chopped
1 clove garlic, grated
salt, to taste
2 tablespoons olive oil
4 tablespoons fresh basil
½ cup balsamic vinegar
½ cup shredded parmesan cheese, for topping

Steps:

  • Combine chicken and marinade ingredients and set aside.
  • Combine bruschetta ingredients.
  • Place balsamic vinegar in a small saucepan and bring to a boil over high heat. Reduce heat to simmer for 8-10 minutes, until mixture has thickened and formed a glaze (be careful not to over-reduce).
  • Cook chicken in a large skillet over high heat about 5-6 minutes per side. Once cooked, top with bruschetta, a drizzle of balsamic glaze, and a sprinkle of Parmesan cheese.
  • Enjoy!
