Here's a tasty twist on bruschetta with tomatillos, chiles, and chickpeas. Top with avocados and cilantro-and knock their socks off!

Yield Makes 8 servings, 1 cup each.

Number Of Ingredients 9

8 tomatillos (1 lb.), husked, cored
1 poblano chile, quartered, seeded
1 tsp. olive oil
1-1/2 pkg. (10 oz. each) BOCA Bruschetta Tomato Basil Parmesan Veggie Patties (6 patties)
2 cans (14 oz. each) vegetable broth
1 can (16 oz.) chickpeas (garbanzo beans), rinsed
1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, undrained
1 avocado, chopped
1/4 cup chopped cilantro

Steps:

  • Heat broiler.
  • Place tomatillos and chiles in shallow pan; brush with oil. Broil, 6 inches from heat, 15 min. or until blackened. Meanwhile, cook patties as directed on package. Chop coarsely.
  • Transfer tomatillos and chiles to blender. Add broth; blend until pureed. Pour into large saucepan. Stir in chopped patties, chickpeas and tomatoes.
  • Bring to boil; simmer on medium-low heat 15 min., stirring occasionally. Serve topped with avocados and cilantro.

Chef #885596 Nica Chick had asked me to create a recipe based on a dish she and her DH enjoyed. If I say so myself Heavenly and Healthy. Use either both types of olives of double up on the one of choice.

1/4 cup olive oil
2 tablespoons balsamic vinegar or 2 tablespoons lemon juice
1 -2 garlic clove, finely minced garlic
1 tablespoon minced black olive
1 tablespoon minced green olives or 1 tablespoon capers
2 cups cooked garbanzo beans, if using canned rinsed and well drained
1 tablespoon sun-dried tomato, finely minced
1/4 cup finely minced red bell peppers or 1/4 cup minced roasted red pepper
1 tablespoon finely minced red onion, given a slight rinse and drain
1/2 generous teaspoon fresh minced rosemary
1 generous tablespoon fresh minced basil
1 generous tablespoon fresh minced flat leaf parsley
red pepper flakes
1/4 teaspoon cumin (optional)

Steps:

  • Pulse half the chickpeas in a food processor with the olive oil. Mix remaining ingredients together.
  • Season to taste with pepper.
  • Salt if desired just do taste because the olives, capers and canned chickpeas have lots of sodium.
  • Marinate for at least 30 minutes in the refrigerator.
  • Spread on sliced Crusty grilled Ciabatta bread.
  • Garnish with additional olive oil and fresh herbs.
  • Optional:.
  • Stuff into endive.
  • Top cucumber slices.

  • Cut the baguette into diagonal slices (about 1/2 inch thick), arrange in a baking sheet and bake in a preheated oven at 400F until crisp and dry. Alternatively, toast the slices in a pan with a little of olive oil and cook for a few minutes until golden. I love this method, it adds more flavor.
  • Rub the toasts with the garlic and top them with the chickpea mixture, sprinkle with extra parsley and drizzle olive oil. Serve immediately.
