CHOCOLATE BROWNIE COOKIES

Decadent & fudge-y brownie cookies that are a match made in heaven for all chocolate lovers! Any brownie fan will love the chewy texture and chocolate-y taste of these delicious and surprisingly wholesome cookies.

1/2 cup cocoa powder ((sweetened))
3/4 cup coconut sugar
1/2 cup melted butter ((vegan or regular))
1 teaspoon vanilla extract
1 egg
1 1/3 cup oat flour ((or regular flour))
pinch of salt
1/2 teaspoon baking powder
1/2 cup dark chocolate chips

Steps:

  • Preheat oven to 350F.
  • Mix wet ingredients: First, whisk together cocoa powder, coconut sugar, vanilla, and melted butter. Then mix the egg in.
  • Add dry ingredients: to the same bowl add oat flour, baking powder, and salt. Last, fold in chocolate chips.
  • Make dough balls: Use a small cookie scooper to measure dough then roll into balls. Set dough balls 2-3 inches apart on a sheet pan lined with parchment paper, then use the palm of your hand to lightly press down to flatten and help the cookies spread.
  • Bake: Bake cookies for 8 minutes and then let cool for about 10 minutes before enjoying. See notes for storing tips!

1 package (18.3 oz) Duncan Hines® Chewy Fudge Brownie Mix
1 cup quick cooking oats
½ cup vegetable oil
2 large eggs
1 and ½ tablespoons water
½ cup semi-sweet chocolate chips
½ cup white chocolate chips

Steps:

  • Preheat oven to 350°F.
  • Combine brownie mix, oats, oil, eggs and water in large bowl with spoon until fully blended. Gently stir in chocolate chips.
  • Drop by heaping tablespoons 2-inches apart on baking sheets lined with parchment paper or silicone baking sheets.
  • Bake 12 -15 minutes or until just set in centers.
  • Cool cookies 2 minutes on pan before transferring to a wire rack to cool completely.

1 cup butter at room temperature
1 cup firmly packed light brown sugar
½ cup white sugar
2 eggs
2 teaspoons vanilla extract
½ teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 ½ cups all-purpose flour
2 cups rolled oats
½ cup chocolate chips
½ cup raisins
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
  • In a large bowl, beat the butter, brown sugar, and white sugar until thoroughly mixed and creamy. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until well mixed, and mix in salt, baking soda, baking powder, flour, rolled oats, plus chocolate chips, raisins, and chopped nuts if desired. Mix well to moisten all ingredients, and spread into the prepared baking pan.
  • Bake in the preheated oven until golden brown, 20 to 25 minutes. Let cool in the pan for about 5 minutes before cutting into bars.

1 cup M&M's minis
1/2 cup all-purpose flour
1/2 cup packed brown sugar

1 package fudge brownie mix (13-inch x 9-inch pan size)

Steps:

  • In a large bowl, combine the oats, M&M's, flour, sugar, walnuts, baking soda and butter. Set aside 1 cup for topping. Pat the remaining mixture into a greased 15x10x1-in. baking pan. , Prepare brownie batter according to package directions. Spread over the crust. One 18.3-ounce box fudge brownie mix
1 stick (8 tablespoons) unsalted butter, melted
1 large egg
1 cup semisweet chocolate chunks

Steps:

  • Arrange the racks in the upper and lower third of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Stir together the brownie mix, butter and egg in a large bowl until smooth and combined, then fold in the chocolate chunks.
  • Scoop 24 balls of dough (about 2 tablespoons each) onto the prepared baking sheets. Use the palm of your hand to gently press each ball into a thick disk. Bake until the cookies spread and the edges are just set, rotating the trays halfway through, 10 to 12 minutes. Steps:

  • Preheat oven to 350°.
  • Position oven rack in the lower third of the oven.
  • Spray the bottom only of a 13 x 9 inch baking pan with nonstick cooking spray.
  • In a bowl, mix oats, flour, brown sugar, and baking soda; mix in softened butter with wooden spoon or electric mixer set on low until well blended.
  • Reserve 1 cup of the oat mixture; press remaining oat mixture into prepared pan.
  • Bake 10 minutes; transfer to wire rack and cool 5 minutes (leave oven on).

  • Transfer brownies to a wire rack and cool completely.
