BROWNIE CUPCAKES
When it comes to making these super easy brownie cupcakes the trick is all in how you bake them. Start by preparing a box of Betty Crocker™ Fudge Brownie Mix according to the instructions. Then, instead of baking them in a single pan, divide the batter into a muffin tin to create 18 perfectly portioned cupcake-style brownies. All that's left to do is to frost and decorate them anyway you like. Serve them after dinner, at birthdays, parties and potlucks. They're the perfect - and cutest - way to serve brownies no matter what the occasion.

Steps:
- Arrange the racks in the upper and lower third of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
- Stir together the brownie mix, butter and egg in a large bowl until smooth and combined, then fold in the chocolate chunks.
- Scoop 24 balls of dough (about 2 tablespoons each) onto the prepared baking sheets. Use the palm of your hand to gently press each ball into a thick disk. Bake until the cookies spread and the edges are just set, rotating the trays halfway through, 10 to 12 minutes. Cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
BROWNIE MIX COOKIES
I didn't have any flour in the house, but I needed to make some cookies and all I could find was a box of brownie mix. Very chocolaty, with a brownie texture and the shape of a cookie. I used low-fat brownie mix.

Steps:
- Preheat oven to 375 degrees.
- Line a baking sheet with a silicone liner or parchment paper (could also try using non-stick cooking spray).
- In a large bowl, combine brownie mix, flour, oil and eggs. Fold in M&M's.
- Using a cookie scoop, drop spoonfuls of cookie dough 2 inches apart on baking sheet. Be sure to not flatten cookie before they bake (keep the dough in nice rounded balls).
- Bake for 7-10 minutes (if you like your cookies to be a little more done, let them cook longer. To get the chewy, fudgy cookies, keep the bake time around 7-9 minutes).
- Remove pan from oven and let cookies cool on baking sheet for 3-5 minutes, then transfer to a wire rack to let them cool completely.

- Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, combine the brownie mix, oil, and egg (or egg + egg yolk). Note that the batter will be very thick. Fold in the chocolate chips or chunks now, if desired.
- Use a medium cookie scoop to portion out the batter into 2-tablespoon balls. The cookies will spread while baking, so I recommend only placing 8 cookies per baking sheet.
- Bake at 350 degrees for 9-10 minutes. My cookies were perfectly cooked at 10 minutes in a 350 degree oven, but I would recommend starting to check them around the 9-minute mark. They’re done when they’re no longer shiny on top, even though they may still look slightly underbaked overall.
