This chocolate brownie meringue pie with pretzel crust sits in a crunchy salty bottom crust, a rich and fudgy chocolate brownie layer and a homemade Italian meringue on top. The subtle balance between sweet and salty flavors makes this dessert taste extra special!

1 ¼ cups (140g) pretzel biscuits
2 Tablespoons sugar
6 Tablespoons (85g) unsalted butter, melted
1 cup (240g) unsalted butter, melted and cooled
¾ cup (150g) granulated sugar
¾ cup (135g) brown sugar, lightly packed
4 large eggs
1 teaspoon vanilla extract
1 cup (120g) all purpose flour
1 cup (125g) unsweetened cocoa powder
1 pinch of salt
1 cup (200ml) water
1 cup (200g) caster sugar
4 egg whites

Steps:

  • Preheat the oven to 350°F (180°C) and grease a 9-inch (23 cm) springform with detachable bottom with melted butter.
  • Pulse the pretzel biscuits in a food processor until texture resembles to fine crumbs. Transfer to a medium size bowl, add sugar, and stir in the melted butter.
  • Press mixture onto bottom and up sides of the prepared springform. Chill in the refrigerator until firm, about 30 minutes. Meanwhile, prepare the brownie layer.
  • In a large bowl, whisk the melted butter and sugars together. Add the eggs, vanilla, and whisk until evenly combined.
  • Sift in the flour and cocoa powder, using a strainer or a sifter. Add a pinch of salt, and stir with a rubber spatula until just combined (do not overmix).
  • Pour the batter into the prepared pan and bake for 35-40 minutes, until the middle of the brownies no longer jiggles and is just set. Remove from the oven and allow to cool at room temperature for at least 1 hour before spreading the meringue on top.
  • Pour water and sugar in a small saucepan, and heat the syrup to 240°F (115°C) without stirring.
  • When the temperature approaches 230°F (110°C), start beating the whites with an electric mixer or ideally in the bowl of a food processor. When they are foamy but not yet firm, very gradually stream the hot sugar syrup into your egg whites as they continue to whip on low to medium speed.
  • Once you've added all of the syrup, increase the mixer speed to medium-high. Continue mixing until the meringue reaches stiff peaks.
  • Spoon the meringue over the cooled brownie (at room temperature), swirling decoratively, and toast with a kitchen torch* until golden brown in spots, if desired. And voilà! A sumptuous pretzel brownie meringue pie ready to serve!

Vanilla ice cream, optional
Chocolate syrup, optional

Steps:

  • In a bowl, beat eggs. Add sugar, butter and vanilla. Combine the flour, cocoa and salt; add to bowl and beat until well blended. Stir in chocolate chips and nuts. Spread into a greased 9-in. pie plate. Bake at 350° (325° if using a glass pie plate) for 30-35 minutes or until set. Cool completely before cutting. If desired, top individual slices with ice cream and drizzle with chocolate syrup.

2 ounces bittersweet chocolate
2 tablespoons unsalted butter
3 eggs
1/2 cup sugar
3/4 cup dark corn syrup
1 cup chopped pecans

Steps:

  • Preheat the oven to 375°F. Line a 9-inch pie plate with the rolled-out crust. For a crispier crust, consider parbaking.
  • Melt the chocolate and butter in a double boiler. Separately, cream the eggs and sugar with an electric mixer on medium speed until light in color. Add the corn syrup and the melted chocolate mixture and continue mixing until thoroughly combined. Spread the pecans in the crust in an even layer, then pour the filling over them.
  • Bake for 45 minutes for a really gooey center or 55 to 60 minutes for a firmer filling. At 45 minutes, a toothpick inserted 1 inch from the edge will come out clean, but the center will still wobble a bit when the pan is jiggled. At 55 minutes, the center will be set. The filling will puff up as it bakes and will deflate as it cools. Cool on a wire rack for at least 1 hour before slicing. Serve slightly warm or at room temperature.

In a microwave safe bowl, heat the chocolate at 50% power for 2-3 minutes, stirring every 30 seconds until it’s completely melted. Set aside to cool slightly. In a large bowl, whisk together the sugar, flour, cocoa powder, salt and baking powder. In a small bowl, whisk together the eggs, oil and vanilla. Add this to the dry ingredients and stir until just combined. Add the melted chocolate and stir to combine. Pour the brownie batter into the prepared pie plate and spread it out evenly. Bake for 25-30 minutes until it is just set. Do not overbake, or the brownie layer will be dry, as it needs to bake again later for 6 minutes to cook the meringue. Let it cool completely in the pie plate on a wire rack.
  • Make the lemon filling next. In a medium saucepan, combine the water, sugar, cornstarch and salt and bring to a simmer over medium heat, whisking constantly. When the mixture starts to become translucent (about 4-5 minutes), add the egg yolks, one at a time and whisk to combine. Add the lemon juice, zest and butter and continue whisking until the mixture comes back to a high simmer and has thickened (1-2 minutes). Remove from the heat and allow to cool slightly (2-3 minutes) and then pour the filling onto the brownie base. Spread the filling over the center of the brownie base, leaving about an inch around the edges with no filling. Cover the pie with plastic wrap, directly on top of the filling, and refrigerate until completely chilled, 1-2 hours.
  • Make the meringue. Preheat the oven to 400 degrees F. In a medium saucepan combine the sugar and water over medium-high heat. Bring to a full rolling boil and boil for 4 minutes, whisking constantly. Remove the syrup from the heat and set aside while beating the egg whites. Using a stand mixer with the whisk attachment, beat the egg whites with the cream of tartar and salt until soft peaks form. While the mixer is running, pour the hot sugar syrup in slowly, avoiding the beaters, and add the vanilla. Continue to beat the whites until the meringue has cooled and become very thick and shiny.
  • Scoop the meringue on top of the chilled pie, making sure to bring it to the edges and cover the brownie base. Use a rubber spatula to make swirls and peaks all over the meringue. Bake for 6 minutes until the peaks are golden brown. Allow to cool in the pan on a wire rack at room temperature. The pie is best served the same day, store loosely covered with foil in the refrigerator for up to 3 days.
