Mmm! Sweet potatoes topped with creamy toasted marshmallows.

Number Of Ingredients 6

5 sweet potatoes, sliced
¼ cup reduced fat margarine
½ cup packed brown sugar
3 tablespoons orange juice
1 pinch ground cinnamon
1 (10.5 ounce) package miniature marshmallows

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil, and cook until tender, about 15 minutes. Remove from heat, drain, and mash.
  • Place mashed sweet potatoes in large bowl, and use an electric mixer to blend with the margarine, brown sugar, orange juice, and cinnamon. Spread evenly into a 9x13 inch baking dish. Top with miniature marshmallows.
  • Bake for 25 to 30 minutes in the preheated oven, or until heated through, and marshmallows are puffed and golden brown.

Roasting sweet potatoes at a high oven temperature makes the skin delicious and extra crackly.

4 medium sweet potatoes, (8 to 10 ounces each), scrubbed
Coarse salt and ground pepper
4 tablespoons (1/2 stick) butter
2 tablespoons plus 2 teaspoons packed dark-brown sugar

Steps:

  • Preheat oven to 475 degrees. With a fork, poke potatoes in several places. Arrange on a foil-lined baking sheet; bake until tender, about 40 minutes.
  • Cut a deep cross in the top of each potato, and push the ends together to make an opening. Sprinkle inside with salt and pepper; dot each potato with 1 tablespoon butter and 2 teaspoons sugar. Serve.

4 medium sweet potatoes, scrubbed
salt & pepper
4 teaspoons butter
8 teaspoons packed brown sugar
48 mini marshmallows

Steps:

  • Preheat oven to 400. With a fork, poke potatoes in several places.
  • Wrap in square foil on baking sheet and bake for 45 minutes- being sure not to rip foil when wrapping.
  • Tuck foil under to the sides of each potato- being careful not to burn yourself.
  • Cut a deep cross in the top of each potato- reaching ¾ of the way down the potato.
  • Slowly push together the ends to create an opening.
  • Sprinkle inside with salt and pepper.
  • Add 1 tbsp butter to each potato.
  • Add 2 tsp sugar to each potato.
  • Sprinkle 12 marshmallows on each potato.
  • Set oven to High broil and put under broiler for a 4 minutes, making sure to move pan inside the oven at 1 minute intervals.
  • The marshmallows should be light brown in color.

This is another version of candied sweet potatoes that we love to have during the holidays. The almonds add a nice crunch.

4 lbs sweet potatoes, peeled, cut into 1-inch pieces (yams)
2/3 cup golden brown sugar, packed
5 tablespoons butter
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 pinch ground ginger
2 cups miniature marshmallows
1/2 cup almonds, sliced

Steps:

  • Preheat oven to 375ºF.
  • Arrange potatoes in 13x9x2-inch glass baking dish.
  • Combine sugar, butter, cinnamon, salt, nutmeg and ginger in heavy small saucepan over medium heat.
  • Bring to boil, stirring until sugar dissolves.
  • Pour over potatoes; toss to coat.
  • Cover dish tightly with foil.
  • Bake potatoes 50 minutes.
  • Uncover; bake until potatoes are tender
  • and syrup thickens slightly, basting occasionally, about 20 minutes.
  • (Can be prepared 1 day ahead. Cool; cover and refrigerate. Rewarm potatoes in 350ºF oven until heated through, about 20 minutes, before continuing).
  • Increase oven temperature to 500ºF.
  • Top potatoes with marshmallows
  • and nuts.
  • Return to oven; bake until marshmallows begin to melt and nuts begin to brown, about 3 minutes.
