GREEN BEANS WITH BROWNED BUTTER
Classic green beans get a special touch with browned butter, pecans and lemon peel.

Steps:
- In 2-quart saucepan, place beans in 1 inch of water. Heat to boiling. Boil uncovered 6 to 8 minutes or until crisp-tender (they shouldn't be "squeaky" when you bite into one); drain. Keep warm.
- Meanwhile, in 1-quart saucepan, melt butter over low heat. Be careful not to let butter burn or it will taste bitter. Stir in pecans. Heat, stirring constantly, until butter is golden brown. (If bottom of saucepan is dark, it may be difficult to see the difference between brown butter and burnt butter. Try spooning a little of the butter onto a white plate to see the color more clearly.) Immediately remove from heat. Pour butter mixture over beans; toss to coat. Sprinkle with lemon peel.

GLAZED GREEN BEANS
Sherry wine and vinegar simmered with brown sugar creates sweet-sour Glazed Green Beans that are great as a Thanksgiving side dish or easy vegetable side.

Steps:
- Heat olive oil in a medium saucepan on medium. Add shallot and cook until tender, 4 to 5 minutes.
- Add sherry wine, vinegar, and brown sugar and simmer until syrupy and reduced by ¾, 15 to 20 minutes.
- Whisk in butter, then toss with green beans and ½ teaspoon each salt and pepper.
BROWN BUTTER GREEN BEANS
Steps:
- Preheat the oven to 350 degrees F
- Cut off the top of the garlic head and discard. Put the garlic on a square of aluminum foil and drizzle with the olive oil. Wrap the foil around the garlic, put in the oven and roast for 50 minutes. Remove from the oven and set aside to cool to room temperature. Once cooled, remove the garlic from the foil and squeeze the garlic head, cut side down, over a small bowl until all of the roasted garlic cloves pop out. Mash the pulp with a fork and set aside.
- In a large skillet over medium-high heat melt the butter and cook until it begins to foam, turn light brown and acquire a nutty aroma. Turn the heat to low, add the shallots, and cook for 2 minutes. Add the green beans, roasted garlic, and almonds, and season with salt and pepper, to taste. Transfer the beans to a serving bowl and serve immediately.
GLAZED CARROTS AND GREEN BEANS
This simple dish is always a big hit, even with non-vegetable lovers. I've substituted frozen green beans for fresh, omitting the blanching process, and it still tastes great.

- In a large saucepan, bring water to a boil. Add carrots; cover and cook for 1 minute. Add beans; cover and cook 2 minutes longer. Drain and immediately place vegetables in ice water. Drain and pat dry. , Place the vegetables in a large skillet; add broth and butter. Bring to a boil; cook, uncovered, for 2-3 minutes or until liquid is reduced to about 2 teaspoons. Add the sugar, salt and pepper; cook and stir for 1 minute.

- Place oil in a medium skillet and add the shallots. Turn the heat to high and cook until the shallots start to bubble. Reduce heat to medium heat and cook, stirring often, until shallots are golden brown, about 12 minutes. Remove with a slotted spoon to a paper towel-lined plate. The shallots will crisp up as they cool.
- Bring a large pot of salted water to a boil. Carefully add the green beans and cook until just tender, 3 to 5 minutes. Don't overcook the beans. You want them to be crisp.
- Meanwhile, melt the butter in a large skillet over medium heat. Stir with a wooden spoon as it starts to foam. Remove the butter from heat as soon as it begins to turn golden brown and smells nutty. Drain the green beans and add them to the skillet with the brown butter. Toss until all of the green beans are well coated. Season with salt and black pepper, to taste.
- Transfer green beans to a serving bowl or platter and top with crispy shallots and toasted hazelnuts. Serve warm.
