CREAMED CORN CASSEROLE

Creamed corn is one of my favorite comfort food dishes. Here, I've used my recipe for that dish in a different way that's perfect for gatherings with family and friends: a casserole! Boxed corn muffin mix, Cheddar cheese and sour cream are added to my creamed corn and bake up into an irresistible side dish that everyone will love.

Nonstick cooking spray, for the baking dish
8 ears fresh corn, shucked
4 tablespoons unsalted butter
1/4 cup whole milk
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
One 8.5-ounce package cornbread mix, such as Jiffy
One 8-ounce carton sour cream
2 large eggs
One 8-ounce block sharp Cheddar, shredded
2 green onions, thinly sliced, optional

Steps:

  • Preheat the oven to 350 degrees F. Coat a 3-quart baking dish with cooking spray.
  • Cut the corn kernels from the cobs (about 8 cups) and scrape the cobs to remove all the liquid. Melt the butter in a large skillet over medium heat. Add the corn, milk, salt and pepper. Simmer until the corn is softened and the mixture begins to thicken, about 5 minutes. Remove from the heat.
  • Stir together the cornbread mix, sour cream, eggs and half of the cheese in a bowl. Stir in the creamed corn. Pour the mixture into the prepared dish. Sprinkle with the remaining cheese. Bake until the casserole is browned and set, 35 to 40 minutes. Sprinkle with the green onions before serving, if desired.

6 tablespoons butter
¼ cup all-purpose flour
1 tablespoon white sugar
4 eggs, beaten
2 (14.75 ounce) cans creamed corn
1 (15.25 ounce) can whole kernel corn, drained

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter in a 2-quart baking dish.
  • Mix flour and sugar together in a bowl; add beaten eggs and beat using an electric mixer until smooth. Stir in creamed corn and whole corn. Pour mixture into melted butter in the baking dish; do not stir.
  • Bake in the preheated oven until top is browned, about 1 hour.

An old friend of mine threw this together one night for a cookout and I picked his brain as to how he did it. This was his "guesstimate" which I have since made and it was just as good. A real crowd pleaser. He cooked it in a disposable aluminum casserole on the top rack of his gas grill which added a really great flavor. I just did it in the oven.

3 eggs
1/4 cup butter (1/4 cup)
1 cup grits
1/2 cup white cornmeal mix
1 onion, chopped
2 cups silver queen creamed corn (1 frozen tube)
1/2 cup sour cream
1 cup cubed monterey jack pepper cheese
1 cup shredded extra-sharp cheddar cheese
2 tablespoons chopped pickled jalapeno peppers (or to taste)
salt and pepper
4 cups milk (or enough to make it resemble a thick batter)

Steps:

  • Melt butter in a bowl and add the rest of the ingredients. Pour into a pyrex (13x9) and cook in a 350 degree oven for about an hour, or until set.

  • 1. Make brownie and cookie mixes according to box directions, put brownie mix in each well of your pan then drop cookie dough on top. Bake as directed on box BUT start checking about half way through the directed time so your brownies stay moist (remember they are a smaller cook area when made as a muffin size and it will vary a little for each oven)
