BROILED COD WITH HOISIN GLAZE

1/3 cup hoisin sauce
2 tablespoons ketchup
5 teaspoons low-sodium soy sauce
2 teaspoons rice vinegar
1 1/2 teaspoons toasted sesame oil
1 small clove garlic, grated
1/2 teaspoon finely grated fresh ginger
4 6- to 8-ounce black cod fillets (or regular cod)
White and black sesame seeds and thinly sliced scallions, for garnish

Steps:

  • Whisk together the hoisin sauce, ketchup, soy sauce, vinegar, sesame oil, garlic and ginger in a large bowl. Add the cod and turn to coat. Cover and refrigerate 1 hour.
  • Remove the fish from the refrigerator. Position a rack in the middle of the oven and preheat the broiler. Line a baking sheet with foil. Remove the fish from the marinade, reserving the marinade, and arrange on the pan (if the fillets are skin-on, arrange them skin-side down).
  • Broil the fish 4 minutes. Brush with the reserved marinade, making sure to coat the top and sides. Rotate the pan 180 degrees and broil until the fish is charred in spots and flakes easily with a fork, 4 to 5 more minutes.
  • Arrange the fillets on a platter. Sprinkle with sesame seeds and sliced scallions.

Baked Fish With Sesame and Ginger image

Here's a virtuous though incredibly flavorful way to prepare any firm white-fleshed fish like cod, halibut or rock fish. Marinate the fish in a bit of fresh ginger and sesame oil then bake in the oven for about 10 minutes. Finish it off with a sprinkling of black sesame seeds, chopped scallions and a few slices of pickled ginger. Serve over a bed of steamed spinach and tender white rice.

4 cod fillets, about 6 ounces each (or substitute halibut, rock fish or other firm white-fleshed fish)
Salt
pepper
1 teaspoon finely grated ginger
1 teaspoon roasted sesame oil
1 teaspoon black sesame seeds
3 or 4 scallions, sliced thin
Pickled ginger, for serving

Steps:

  • Season each fillet lightly with salt and pepper. Combine ginger and sesame oil in a small bowl, then rub the mixture on the fillets, massaging with fingers to coat evenly.
  • Place the fish in one layer in a baking dish, and tightly cover the dish with foil. Let the fish marinate at room temperature for 15 minutes, or refrigerate up to 3 hours and bring to room temperature before baking.
  • Heat the oven to 400 degrees. Bake the fish on the top rack for 10 minutes. Remove foil and check to make sure the fish is cooked through. Return to oven for 1 or 2 more minutes, if necessary.
  • Transfer the fish to plates or a serving platter. Sprinkle with sesame seeds and scallions and garnish with a few slices pickled ginger. Serve with stir-fried spinach and steamed rice, if desired.

1/4 cup sesame seeds
1/4 cup miso, preferably red
2 tablespoons sugar (or 1 tablespoon each sugar and mirin)
1 tablespoon soy sauce, or to taste
1 1/2 to 2 pounds cod, in 1 or 2 fillets, preferably of equal thickness throughout
Extra virgin olive oil or neutral oil like corn or canola, as needed
Pinch cayenne

Steps:

  • Place oven rack 4 inches or less from heat source. Heat broiler. In a small dry skillet over medium heat, toast sesame seeds, shaking pan until they color slightly. Grind to a powder in a spice or coffee grinder or use a mortar and pestle.
  • Use a whisk to combine seeds with the miso, sugar and soy sauce. If the mixture is more like a paste than a sauce, thin it with a little water, mirin, or more soy sauce. Taste, and adjust seasoning. (Sauce may be covered and refrigerated for up to 2 days. Stir before serving.)
  • Brush fish with oil, then sprinkle on a bit of cayenne. Place fish on a baking sheet, preferably nonstick, and put in broiler. Cook, rotating sheet once so fish browns evenly on top and is cooked through, 6 to 10 minutes. The fish is done when the point of a thin-bladed knife inserted into thickest part meets a little resistance. Drizzle sesame-miso sauce on top, and serve.
