Cod with Herbed White-Wine Lemon Sauce image

This recipe can be made using any fresh mild-flavored white fish, such as cod, sole, sea bass, or flounder.

1 medium shallot, finely chopped
1 cup dry white wine
2 lemons, 1 juiced and 1 sliced into 1/4-inch-thick rounds
6 tablespoons unsalted butter, cut into small pieces
1/4 cup capers, roughly chopped
1 teaspoon salt
Freshly ground black pepper
1 cup loosely packed mixed fresh herbs, such as parsley, tarragon, chervil, dill, and thyme, roughly chopped
4 (about 6 ounces each) codfish fillets

Steps:

  • Combine shallot, wine, and lemon juice in a small skillet; set over high heat. Bring to a boil; simmer until liquid is reduced to 1/4 cup, about 10 minutes. Remove from heat; whisk in butter, capers, 1/4 teaspoon salt, a pinch of pepper, and 3/4 of the herbs. Set aside; keep warm.
  • Heat a large skillet over medium-high heat; add 3 tablespoons sauce. Season both sides of fillets with remaining 3/4 teaspoon salt and a pinch of pepper. Arrange fillets and lemon slices in skillet; sprinkle with some herbs. Cook until fillets are golden, about 4 minutes. Turn, sprinkle with remaining herbs, and cook until fish is cooked through, about 3 minutes. Serve with lemon slices and remaining sauce.

4 cod fillets (1 lb.)
1 Tbsp. lemon juice

Steps:

  • Heat broiler.
  • Mix dressing and seasonings until blended.
  • Place fish on rack of broiler pan sprayed with cooking spray; brush with dressing mixture.
  • Broil, 4 inches from heat, 6 to 8 min. or until fish flakes easily with fork. Drizzle with lemon juice.

1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 teaspoon each dried oregano, tarragon and rosemary, crushed
1 cup fat-free milk
1/4 cup pine nuts, toasted

Steps:

  • Sprinkle fillets with 1/4 teaspoon salt and 1/8 teaspoon pepper. Place on a broiler pan coated with cooking spray. Broil 3-4 in. from the heat for 8-12 minutes or until fish flakes easily with a fork., Meanwhile, in a small saucepan, melt butter. Stir in the flour, herbs and remaining salt and pepper until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. 1/3 cup hoisin sauce
2 tablespoons ketchup
5 teaspoons low-sodium soy sauce
2 teaspoons rice vinegar
1 1/2 teaspoons toasted sesame oil
1 small clove garlic, grated
1/2 teaspoon finely grated fresh ginger
4 6- to 8-ounce black cod fillets (or regular cod)
White and black sesame seeds and thinly sliced scallions, for garnish

Steps:

  • Whisk together the hoisin sauce, ketchup, soy sauce, vinegar, sesame oil, garlic and ginger in a large bowl. Add the cod and turn to coat. Cover and refrigerate 1 hour.
  • Remove the fish from the refrigerator. Position a rack in the middle of the oven and preheat the broiler. Line a baking sheet with foil. Remove the fish from the marinade, reserving the marinade, and arrange on the pan (if the fillets are skin-on, arrange them skin-side down).
  • Broil the fish 4 minutes. Brush with the reserved marinade, making sure to coat the top and sides. Rotate the pan 180 degrees and broil until the fish is charred in spots and flakes easily with a fork, 4 to 5 more minutes.
  • Arrange the fillets on a platter. Sprinkle with sesame seeds and sliced scallions.
