About 11/2 pounds mackerel fillets, skin on
Salt
Lemon wedges for serving
Soy sauce for serving

Steps:

  • Slash the skin side of the fish about 1/4-inch deep, at 1-inch intervals. Put it on a rack set over a sink or bowl and sprinkle liberally with salt on both sides (you should use at least 1 teaspoon per side for each fillet). Let rest for 30 minutes.
  • Heat the broiler, with the heat source within 4 inches of the broiling rack. Put a grate or rack on a sturdy pan (lined with aluminum foil, if you like, to ease cleanup) and heat it for about 5 minutes. Rinse the fillets and pat them dry.
  • When the pan is hot, put the fillets on the rack, skin side up. Broil, carefully turning once about 3/4 of the way through cooking, until the fish is opaque and the tip of a knife flakes the thickest part easily, no more than 10 minutes. Carefully remove the fillets with a spatula and serve, skin side up, with lemon wedges and soy sauce.

2 tablespoons olive oil
2 tablespoons white wine vinegar
2 teaspoons honey
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon dried thyme
1/2 cup chopped onion
1/2 teaspoon poppy seeds
1 pound fresh sugar snap peas, trimmed and halved (about 4 cups)

Steps:

  • Place the first 7 ingredients in a blender; cover and process until blended. Transfer to a large bowl; stir in poppy seeds., Add peas to dressing and toss to coat. Refrigerate, covered, 30 minutes before serving.

This is a recipe that my father used to make for the two of us many years ago. My mother would make something different for my brother & herself. Trust me, this is a GREAT TASTING RECIPE!

3 lbs Boston mackerel or 3 lbs Atlantic mackerel
2 tablespoons extra virgin olive oil
2 tablespoons butter (not margarine)
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons lemon juice
3 tablespoons finely cut fresh flat-leaf parsley
1 teaspoon granulated garlic powder
1 teaspoon onion powder or 1 teaspoon minced onion
1 dash paprika

Steps:

  • Have your fish monger clean& split for broiling, or buy fillets.
  • Preheat broiler to 450 degrees.
  • Brush fish with olive oil on both sides.
  • Place fish, skin side down, on a greased broiler rack, 2” below the heat.
  • Broil 5 minutes, then turn the fish& broil the other side for 3 minutes.
  • While the fish broils, melt the butter.
  • Mix the melted butter with salt, pepper, lemon juice, garlic powder, onion powder,& parsley.
  • Place the fish on a warmed serving platter,& pour the butter sauce over the fish.
  • Sprinkle lightly with paprika& serve at once.

GRILLED MACKEREL WITH SOY, LIME & GINGER

300g mackerel
100g jasmine rice
4 spring onions , sliced
1 red pepper , deseeded and diced
1 tbsp low-sodium soy sauce
juice 1 lime
small piece fresh ginger , grated
1 garlic clove , crushed
2 tbsp honey

Steps:

  • To make the marinade, mix all the ingredients together and pour over the mackerel. Cover and chill for 30 mins.
  • Heat grill and put the mackerel, skin-side up, on a baking sheet lined with foil. Grill for 5 mins, then turn and baste with remaining marinade. Grill for 5 mins more.
  • Cook the rice following pack instructions, then drain and toss with the spring onions and pepper. Serve with the mackerel.

FOR THE MACKEREL:
2 tablespoons extra virgin olive oil
Grated zest of 1 lemon
4 1-pound Boston mackerel or black sea bass fillets, rinsed and patted dry
Kosher salt
Freshly ground black pepper
FOR THE HERB SALAD:
1½ packed cups fresh mixed herbs, such as parsley, basil, mint, celery leaves, lovage and tarragon
6 ounces sugar snap peas, trimmed and thinly sliced lengthwise
5 small radishes, thinly sliced
3 scallions, white and green parts, trimmed and thinly sliced lengthwise
2 tablespoons extra virgin olive oil
1 tablespoon freshly squeezed lemon juice
Coarse sea salt or kosher salt
Freshly ground black pepper.

Steps:

  • 1. To make mackerel: preheat broiler. In a small bowl, whisk together olive oil and lemon zest. Place mackerel skin-side down on a baking sheet. Season with salt and pepper; spoon lemon oil over tops. Broil mackerel until white and flaky, about 4 minutes. 3. To make salad: in a bowl combine herbs (tear large leaves into smaller pieces), peas, radishes and scallions. Add oil and lemon juice; toss to combine. Season with salt and pepper. Place one fish fillet on each of four plates. Arrange herb salad on top of fillets and serve.
