BROCCOLI STUFFING CHEESE CASSEROLE - QUICK AND EASY
This delicious broccoli casserole is made extra hearty with prepared stuffing on top. You can also make this a one dish meal by cooked and chopped chicken such as leftover rotisserie.

Steps:
- Preheat oven to 350 degrees F. Spray 2 quart casserole dish with nonstick cooking spray.
- Prepare stuffing according to package directions using the butter and water.
- In a large bowl, combine the broccoli, shredded cheese and cream of mushroom soup. Pour broccoli mixture into casserole dish. Spoon stuffing mixture over the top.
- Bake for 30-35 minutes or until heated through.

Many years ago, a co-worker brought this great vegetable side dish to a potluck luncheon. Made with stuffing mix and accented with walnuts, it's appropriate for a holiday dinner or any meal.

- Place broccoli in a saucepan; add 1 in. of water. Bring to a boil. Reduce heat; cover and simmer for 5-6 minutes or until crisp-tender. Drain and place in a greased 13-in. x 9-in. baking dish. In a saucepan, melt 1/2 cup butter; stir in flour and bouillon until blended. Gradually add milk. Bring to a boil; cook and stir for 2 minutes. Pour over broccoli. Combine stuffing and walnuts. Heat water and remaining butter until melted; toss with stuffing mixture. Sprinkle over casserole. Bake, uncovered at 400° for 15-18 minutes or until golden brown.

- Preheat oven to 400 degrees F.
- Cook broccoli according to package directions, drain.
- Meanwhile, in 10-inch skillet over medium heat, cook sausage until browned and no longer pink, stirring to separate meat.
- Drain off fat.
- In large bowl,combine cooked sausage, cooked broccoli, croutons and cheese.
- Arrange mixture evenly in greased 12x8-inch baking dish.
- In same bowl, stir soup until smooth.

This is really quick and SIMPLE "make ahead" dish for a holiday meal. The stuffing gives it a nice crunch on the top. Even though we used the "less fat" directions to make this dish, I think it was still full of great flavor. I also chose to use a "roasted garlic" flavor of stuffing mix, since that was the only one that did not contain chicken or turkey flavorings.
