Adapted from the Peachtree Bouquet cookbook put out by the Junior League of DeKalb County, Ga. This can be partially prepared ahead. Enjoy!

3 medium vidalia onions (or other sweet onions)
1 (10 ounce) package frozen chopped broccoli
1/3 cup parmesan cheese
1/4 cup mayonnaise
2 teaspoons lemon juice
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons all-purpose flour
1/4 teaspoon sea salt
1/4 teaspoon fresh ground black pepper
1/4 teaspoon garlic powder (optional)
2/3 cup milk
1 (3 ounce) package cream cheese, softened
hot sauce (optional)

Steps:

  • Peel and halve the onions. Pot boil in salted water for 12 minutes. Remove centers, leaving about 3/4" edge.
  • s. Place onion cups in a 13x9x2" pan.
  • Chop the center portions which were removed from the onions to equal about 1 cup.
  • Cook broccoli to package directions; drain.
  • Combine chopped onion, broccoli, Parmesan cheese, mayonnaise and lemon juice; spoon into the onion cups.
  • Note: at this point the onions can be refrigerated until ready to bake.
  • Melt butter; blend in the flour, salt, pepper and garlic powder(if using). Add milk and cook until thick, stirring constantly.
  • Remove from heat and blend in softened cream cheese. Spoon sauce over the onions; bake, uncovered, at 375*F. for 20 minutes.
  • Serve and enjoy!

Steps:

  • Preheat oven to 375°F.
  • In a large saucepan, parboil onions in salted water for 10-12 minutes. Drain.
  • Cook broccoli according to directions. Drain.
  • Cut tops off onions. Remove centers of onions (reserve), leaving 3/4-inch edges. Place hollowed onions in baking dish.
  • Chop onion centers; combine with broccoli, Parmesan cheese, mayonnaise and lemon juice. Spoon into onion shells.
  • In a medium saucepan over medium heat, melt butter, blend in flour and brown. Add salt and milk. Cook until thickened, stirring constantly. Remove from heat and blend in cream cheese. Spoon over stuffed onions.
  • Bake at 375 for 20 minutes.

This easy broccoli au gratin casserole can be made with fresh or frozen broccoli folded into a simple cultured butter and cheese roux. Crispy fried onions add crunch to this creamy, sublime side dish that can be prepped ahead of any meal.

3 pounds broccoli (cut into florets *see notes if using frozen broccoli*)
6 tablespoons Vermont Creamery Unsalted Cultured Butter (, divided)
1/2 yellow onion (chopped)
2 cloves garlic (minced or pressed)
3 tablespoons all-purpose flour
2 cups cold whole milk
6 ounces Parmesan cheese (grated)
1 teaspoon kosher salt
1/2 cup crispy fried onions

Steps:

  • Preheat the oven to 375°F. Steam the broccoli until tender in the microwave with 1/4 cup water for 5-7 minutes, or in a steamer basket on the stove for 12-15 minutes. Drain.
  • While the broccoli is cooking, melt 1 tablespoon of the cultured butter in a non-stick skillet over medium heat. Add the onion and garlic and cook until the onion softens and the garlic is fragrant, for 3-4 minutes. Add the remaining cultured butter to the pan, melt, and sprinkle with the flour. Cook stirring for 2 minutes. Slowly add the milk while stirring, whisking away the floury lumps. Cook until the sauce thickens, stirring occasionally, about 7-8 minutes. Stir in the Parmesan cheese and kosher salt to taste and keep warm.
  • Fold in the cooked hot broccoli to the bubbly cheese sauce, tossing to coat. Transfer to a buttered 2-quart baking dish and top with the crispy fried onions. Bake for 15 minutes or until the sauce is bubbly and the crispy onions are golden. Serve warm.

2 tablespoons olive oil
2 tablespoons salted butter
1/2 large yellow onion, sliced thin
2 cloves garlic, minced
1 head broccoli, cut into small florets
Kosher salt and freshly ground black pepper
All-purpose flour, for rolling out the dough
One 1-pound loaf frozen bread dough, thawed
2 tablespoons sun-dried tomato pesto
1 cup shredded Cheddar
8 slices mozzarella
8 fresh basil leaves, plus more for garnish
1/2 cup grated Parmesan
One 24-ounce jar marinara, warmed

Steps:

  • Preheat the oven to 400 degrees F. Oil a baking sheet with 1 tablespoon olive oil and set aside.
  • Heat the butter in a large skillet over medium heat. Add the onion and garlic and cook for 2 minutes. Add the broccoli and season to taste with salt and pepper. Cook until the broccoli has softened slightly and become bright green, about 1 minute. Remove from the heat and set aside.
  • Lightly flour a clean work surface and stretch or roll the dough into a large rectangle, about 11-by-13 inches. With the long side closest to you, spread the pesto on the dough, leaving about a 1-inch border on all sides. (You'll want to maintain the 1-inch border when adding the remaining toppings.) Top the pesto with the broccoli mixture and sprinkle over the Cheddar. Shingle the mozzarella slices over the Cheddar. Sprinkle on the basil leaves.
  • Fold the short sides in, then roll the dough into a log. Place the stromboli seam-side down on the prepared baking sheet. Using a sharp knife, make 5 to 6 diagonal slits on top of the dough. Brush the top with the remaining tablespoon olive oil and sprinkle with the grated Parmesan.
  • Bake until golden brown, about 20 minutes.
  • Allow to cool for about 5 minutes before slicing and serving. Serve the warmed marinara alongside and top each serving with some more fresh basil.

  • Cook 1 pound broccoli florets and 1 sliced red bell pepper in salted boiling water until just tender, about 3 minutes; drain and transfer to a bowl of ice water to cool, then drain again. Heat 2 tablespoons olive oil in a skillet over medium heat. Add 1/2 cup chopped walnuts, 2 sliced garlic cloves and 2 to 4 crushed dried red chiles and cook 30 seconds. Add the broccoli and bell pepper and cook 2 minutes. Season with salt.

2 tablespoons, plus 1 teaspoon extra-virgin olive oil, divided
4 cups broccoli florettes (from 1 head broccoli)
2 small red onions, thinly sliced
4 teaspoons dried red pepper flakes
4 cloves garlic, minced
1/2 cup kalamata olives, pitted and chopped
1 cup low-fat ricotta cheese
1/2 cup tomato paste
2 (15-ounce) cans stewed Italian tomatoes
1 cup fresh basil leaves, chopped
24 jumbo pasta shells, cooked al dente according to box directions, rinsed and drained
1 cup shredded part-skim mozzarella

Steps:

  • Preheat oven to 350 degrees F.
  • Heat 2 tablespoons olive oil in a large nonstick saute pan over medium heat. Once the oil is hot, add the broccoli, onions, red pepper flakes, and 2 cloves minced garlic. Slowly saute the broccoli, stirring occasionally until it starts to brown all over, about 10 minutes. Add the olives and continue to cook about 1 more minute. Remove from heat and add the ricotta cheese, stirring to evenly distribute.
  • While broccoli and onions are caramelizing, prepare the tomato sauce: heat 1 teaspoon olive oil in a medium-size saucepan over medium heat. Add remaining 2 cloves minced garlic and cook for 1 minute. Add the tomato paste and stewed tomatoes. Bring to a simmer and cook for 5 minutes. Stir in the basil and remove from the heat.
  • Spread about 1/3 of the sauce in the bottom of a 13 by 9 by 2 inch-baking dish. Stuff the shells with the broccoli mixture. Arrange the stuffed shells in the baking dish and top with the remaining sauce. Sprinkle evenly with the mozzarella. Bake, uncovered, for 20 minutes. Serve immediately.

Sometimes when sweet onions are in season, my grocery store will over a bag of them for about what you normally pay for 1 or 2. So, I had to find something to do with lots of onion. I think you could use other veggies to stuff, or a combination of them.

4 medium sweet onions (vidalia, walla walla, texas sweet), peeled and halved crosswise
1/4 tsp salt
5 oz frozen chopped broccoli
1/4 c parmesan cheese, grated
2 Tbsp mayonnaise, plus 2 teaspoons more
1 tsp lemon juice
1 Tbsp butter
1 Tbsp all-purpose flour
1/8 tsp salt
1/3 c milk
1 1/2 oz cream cheese, cubed

Steps:

  • 1. Place your onions in a large Dutch oven; add 1/4 teaspoon salt and water to cover. Bring to a boil; reduce heat, and simmer, uncovered, for 10 minutes. Drain well.
  • 2. Remove the centers from the onions, leaving 3/4 inch thick shells. Place the onion shells in a lightly greased baking dish; set aside.
  • 3. Chop the onion centers to equal 1/2 cup; reserve the remaining onion centers for another use. Set aside.
  • 4. Cook the broccoli according to the package directions; drain. Combine the broccoli, reserved 1/2 cup chopped onion, Parmesan cheese, mayonnaise, and lemon juice. Stir well. Spoon the mixture evenly into the reserved onion shells.
  • 5. Melt the butter in a small saucepan over low heat; add flour and 1/8 teaspoon salt, stirring until smooth. Cook for 1 minute, stirring constantly. Gradually add the milk; cook over medium heat, stirring constantly, until the mixture is thickened and bubbly.
  • 6. Remove from the heat; add the cream cheese, stirring until the cream cheese melts and sauce is smooth. Spoon the sauce over the stuffed onions.
  • 7. Bake, uncovered, at 375° for 20 to 25 minutes or until lightly browned and thoroughly heated.

4 onions, quartered
¼ cup butter
¼ cup all-purpose flour
2 cups milk
1 (8 ounce) package cream cheese
8 ounces shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Place a steamer basket in a pot over boiling water, and steam the broccoli about 5 minutes, until tender. Place the onions in a separate pot with enough water to cover. Bring to a boil, and cook until tender. Arrange the broccoli and onions in the prepared dish.
  • Melt the butter in a saucepan over medium heat, and stir in the flour until smooth. Blend in the milk until thickened. Blend in the cream cheese until melted. Pour the mixture over the broccoli and onions. Sprinkle with Cheddar cheese, and top with bread crumbs.
  • Bake covered in the preheated oven 30 minutes. Remove cover, and continue baking 30 minutes, until lightly browned.

  • Preheat oven to 400°. Trim only the very bottom, woody part of broccoli stem. Peel tough outer layer from stem, from the florets down to the end of the stalk. Starting from stem end, cut broccoli at a 45° angle into ¾"-thick slices until you reach the florets. Break florets apart with your hands into bite-size pieces (this avoids getting bitsy trimmings all over the place).
  • Heat 3 Tbsp. oil in a large heatproof skillet over medium-high until shimmering. Add broccoli; season with salt. Cook, tossing occasionally, until broccoli is bright green and lightly charred, about 3 minutes. Transfer to a plate. Wipe out skillet.
  • Heat remaining 2 Tbsp. oil in same skillet over medium. Cook onion and garlic, stirring often, until onion is beginning to soften, about 3 minutes. Add anchovies and cook, breaking apart with a spoon, until broken down and garlic is beginning to turn golden around the edges, about 2 minutes.
  • Return broccoli to skillet and toss to coat with oil. Transfer to oven and roast, tossing once, until broccoli is browned and tender, 20–25 minutes. Wrap handle of skillet with a towel before you forget it’s REALLY HOT.
